HOMEMADE PROTEIN AND OAT BARS.

Homemade Protein Bars, based off a LiveStrong recipe, adapted by my wife. A great meal replacement for use after a workout or when you're on the go offering up 12g of protein per bar.

Homemade Protein and Oat Bars. image

Steps:

  • Mix together the egg whites, peanut butter, and honey. Stir until smooth. Fold in Protein Powder and Baking Powder.
  • Fold in Oats.
  • Fold in Chocolate Chips.
  • To prevent the bars from sticking, line your baking pan with parchment paper. Press the batter into the baking pan and bake at 350 degrees F for about 15 minutes.
  • Let stand for 5 minutes, cut into 6 bars.

1/4 cup egg white
3 tablespoons honey
1 cup whole grain quick oats
1/2 teaspoon baking powder

  • In a medium heavy pot, combine milk, peanut butter, and maple syrup/honey over low heat. Stir just until all ingredients are well combined and warmed through. Remove from heat.
  • Add protein powder, oats, and optional cinnamon or add-ins. Stir to combine well. Taste and add more maple syrup or honey if desired. (If mixture is too thick to stir, simply add a bit more milk.)
  • Lightly grease an 8×8 pan. Press evenly into pan, using firm pressure to compress mixture into desired bar thickness. Tip: use wet or lightly greased hands to prevent sticking.
  • Allow bars to cool completely. Once cool, cut into squares. If desired, drizzle with melted chocolate and let cool. Wrap in airtight container and store at moderate room temp for several days, or chilled in fridge for a week.

  • Line an 8x8- or 9x9-inch baking pan with parchment paper, leaving overhang on two sides like handles.
  • Place the peanut butter, honey, and coconut oil in a medium heatproof bowl. Set the bowl over a saucepan of water and bring the water to a simmer over medium to medium-high heat. (Do not let the water boil, and make sure the water does not touch the bottom of the mixing bowl.) Stir and heat until the mixture is smoothly combined. Remove the bowl from the saucepan and turn off the heat.
  • To the bowl with the peanut butter mixture, add the oats, protein powder, flaxseed, cinnamon, and salt. Stir to combine. The mixture will seem very dry at first but will come together as you stir. It won’t be sticky but should hold together when pressed (see recipe notes for more details). If the mixture is still fairly warm, pop the bowl into the refrigerator for a few minutes to let it cool, then stir in the chocolate chips. (Cooling the mixture will prevent the chocolate from melting. Don’t worry if they do melt a little—the bars will still be delicious!) Press evenly into the prepared pan and refrigerate for 1 hour or until firm.
  • Lift the bars from the pan using the parchment handles and transfer to a cutting board. Slice into bars of desired size and enjoy.

  • Mix together all the ingredients in a bowl. Add a sheet of parchment paper to a 9 x 9 pan. Place the ingredients in the pan and press it into an even layer. Use a small glass to roll over the top to get it smooth.
  • Freeze the bars for 15 minutes. Remove the pan from the freezer and use the parchment to lift it out of the pan. Cut into 16 squares or 32 rectangles. Store refrigerated for up to 2 weeks. You can eat right away, or refrigerate for about 1 hour for a more solid texture.
