This is a great and simple sauce to make. Tastes delicious over any pasta! I especially love it with lobster ravioli.

- In a skillet over medium heat, saute onion in butter until slightly brown and soft. Pour in vodka and let cook for 10 minutes. Mix in crushed tomatoes and cook for 30 minutes. Pour in heavy cream and cook for another 30 minutes.

- Cook 2 chopped shallots in a skillet with 2 tablespoons butter over medium heat, about 3 minutes. Add 3/4 cup heavy cream, 2 cups Perfect Marinara Sauce (see Cook's Note) and a pinch of red pepper flakes; heat through. Stir in 1/4 cup grated parmesan and 1 to 2 tablespoons vodka; season with salt. Toss with penne.

- Place a large pot of water on the stove for pasta. Also put up a deep skillet for sauce and a nonstick skillet for shrimp.
- Gather your ingredients.
- Peel and finely chop the onion.
- In a large deep skillet, heat EVOO, a turn of the pan. Add 2 tablespoons butter and when it foams add the onions. Stir to soften while you peel and chop the garlic. Add 2 cloves of chopped garlic to onions and season with salt. Stir in 1/2 teaspoon of chili paste or about 1/4 teaspoon of red pepper flakes. Add vodka and reduce by half, 2 to 3 minutes. Add tomatoes and tear in a few leaves of basil. Reduce heat and simmer sauce, 10 minutes.
- Season pasta water with a fat tablespoon of salt, add penne and cook 1 minute less than package directions, about 8 minutes. Have a mug or measuring cup on hand.
- Add shrimp to a medium bowl and toss with remaining garlic. Thinly slice a lemon and toss with shrimp.
- In the second skillet, heat EVOO, 2 turns of the pan, over medium-high and melt in 2 tablespoons butter. Add the shrimp mixture and toss 2 to 3 minutes; shrimp should be pink and opaque. Add a splash of Pernod or vermouth, the remaining red pepper flakes, a little salt and parsley; toss. Turn off heat.
- Add cream to sauce and stir. Add shrimp to sauce, bring back to a bubble and turn off heat.
- Reserve about 1/2 cup of starchy salty water and drain pasta or transfer to sauce with a spider. Toss pasta with sauce and grated cheese, using water to loosen as necessary.
- Transfer pasta to large serving bowl or to individual shallow bowls to serve.
HOMEMADE VODKA SAUCE
This is how I make my own Vodka Sauce for pasta, chicken and burgers...you will find many ideas to use this sauce- like lasagna, and spaghetti, etc. Recipe makes about 7 1/2 cups- you can freeze any extra for later use,in freezer containers.

- 1. Sauté onion, garlic and olive oil in a large saucepan or small kettle until translucent. Do not overcook or brown.
- 2. Add both cans of crushed tomatoes and vodka.
- 3. Cook 1/2 hour until alcohol has burned off.
- 4. Add heavy cream and basil. Stir to blend ingredients.
- 5. Add tomato paste as desired. If you want a thinner sauce, use less tomato paste. Stir to blend. Simmer 1/2 hour.Season to taste with salt and pepper.

- Heat a large saucepan over high heat until the surface is very hot; add minced garlic and sear until brown, 1 to 2 minutes. Pour vodka into the saucepan, taking care to avoid any flames that ignite from the alcohol meeting the hot surface of the pan. Quickly pour cream into pan to douse the flames and stir; add tomato sauce, crushed tomatoes, Parmesan cheese, basil, and parsley.
- Bring the mixture to a boil, remove from heat, and rest sauce long enough to let herbs flavor the sauce, 5 to 10 minutes.

- In a small bowl, combine vodka and red pepper flakes. Set aside for 1 hour.
- Heat olive oil in a large skillet over medium heat. Saute prosciutto, garlic, parsley, basil, salt and pepper until prosciutto is evenly brown. Pour in vodka mixture, and simmer 10 minutes. - Sauté onions & aromatics: In a large saucepan or Dutch oven, heat the oil until shimmering over medium heat. Add the onions and cook, stirring occasionally, until softened and translucent, about 5 minutes. Add in the garlic, red pepper flakes, Italian seasoning and oregano. Season with 1 teaspoon salt and 1/2 teaspoon pepper. Cook, stirring, until fragrant, about 1 minute. Add in the tomato paste and cook, stirring, until the paste is caramelized, about 1-2 minutes.
- Add vodka & tomatoes: Add in the vodka and bring to a boil. Immediately reduce heat to a simmer and cook until the mixture is reduced by half, about 6-8 minutes. Stir in the crushed tomatoes. Bring to a simmer over medium-high heat.
- Simmer & add basil: Reduce the heat to maintain a simmer and cover the pan. Cook, stirring occasionally, for 20 minutes. Remove cover and continue to cook for an additional 30 minutes, stirring occasionally. Stir in the basil.
- Puree: Turn off the heat and use an immersion blender, or transfer the mixture to a stand blender or food processor in batches. Puree until the sauce is smooth in consistency. Return the sauce to the pan and place over medium-low heat.
