VEGGIE BEAN CASSEROLE
I serve this as a meatless main dish, but it also makes a nice side dish. It freezes and reheats well, so I'll sometimes double the recipe. It has a colorful combination of carrots, corn, beans and tomatoes.

- In a large Dutch oven, saute the carrots, celery, onion, green pepper in oil for 5 minutes. Add the garlic. chili powder and cumin; cook 1 minute longer. Stir in the remaining ingredients; bring to a boil. , Cover and bake at 350° for 45-50 minutes or until thickened and vegetables are tender.

FIVE BEAN CASSEROLE
This is a sweet and sour casserole with bacon and beans.

- Preheat oven to 350 degrees F (175 degrees C).
- Place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
- Saute onion in bacon fat; add the brown sugar, mustard, garlic powder, salt and vinegar. Cook covered on low heat 20 minutes.
- In a four quart baking dish, combine the bacon, onion mixture, butter beans, lima beans, kidney beans, garbanzo beans and baked beans. Mix well, and bake covered for 1 1/2 hours. Uncover and bake 30 to 45 minutes longer.

FOUR-BEAN CASSEROLE
This is the best baked bean dish I've ever had. I've been searching for the perfect bean recipe, and this might just be it. Recipe from Home Cookin' With Dave's Mom (David Letterman). I substituted different beans based on what I had on hand, but it's delicious. I must confess, this is even more delicious with a hot dog or better yet eat it like a chili dog. YUMMY!

- Place kidney beans, butter beans, lima beans, and pork and beans in a 2-quart casserole dish.

Steps:
- 1. Preheat oven to 350. Grease a 3 quart casserole dish. You don't need to preheat oven right away because the first part of this recipe calls for cooking some ingredients on the stove top.
- 2. In large skillet cook bacon until crisp. Drain on paper towels. When cool, dice and set aside. Reserve drippings!
- 3. Add onion slices to fat in hot skillet.
- 4. Add syrup or brown sugar to skillet, along with garlic powder and dry mustard.
- 5. Reduce heat to medium and CAREFULLY add vinegar, slowly. Take care because hot steam will rise.
- 6. Cover and cook this mixture for 20 minutes.
- 7. Add beans (all kinds) to casserole dish. Stir in onion mixture and bacon pieces. Mix well. Cover and bake in 350* oven for 45 minutes.
- 8. Uncover and let stand for 20-25 minutes before serving.

- Spray 1 1/2 quart casserole dish with non-stick cooking spray.
- Layer drained lima beans over the bottom of the casserole dish.
- In a saucepan, melt 1 tablespoon butter over medium heat.
- Add in the flour and whisk for 1 minute.
- Slowly add in 1/2 cup reserved bean cooking liquid; whisk until thickened and smooth.
- Add in the brown sugar, mustard, and lemon juice; stir to combine.
- Season to taste with salt and pepper and pour over lima beans.
- In a small bowl, mix together the bread crumbs, melted butter, and cheese.
- Spoon evenly over the beans.
- Lay bacon strips over the top and bake in a 350° oven for about 30 minutes or until the bacon is crisp.
HOMESTEADERS CASSEROLE
I got this recipe out of a magazine about 30 years ago, it's from Kraft. It's an all-in-one casserole dish made with mashed potatoes, breakfast sausage links, green beans, onions, pimientos, and Velveeta cheese. This is really good comfort food!

- 1. Combine the green beans, onions and pimiento.
- 2. In a 2-1/2 quart casserole baking dish, add the mashed potatoes.
- 3. Put half of the cheese slices on top the potatoes.
- 4. Place the green bean mixture over the cheese slices.
- 5. Top with the cooked pork sausage links.
- 6. Cover the casserole, and bake for 30 minutes in a 350º oven.
- 7. Top with the remaining cheese slices, and continue baking until the cheese melts, then serve. Be careful when eating, as this dish is quite hot (temp-wise).
- 8. *Note: You could substitute fresh cooked green beans for the frozen-cooked green beans. I cooked my fresh green beans with a 1/2 cup of water, and sprinkled them with a bit of salt & pepper, and cooked them in a 900 watt microwave oven for 13 minutes (stirring the beans half way through the cooking time). Also, when cooking the potatoes, I added a few cloves of fresh garlic to the pot of water, and when the potatoes were done cooking and drained, I added several pats of butter, a bit of half-and-half cream, plus I sprinkled the mashed taters with freshly cracked black pepper, and added some Mrs Dash Table Blend Seasoning.
