SLOW-COOKER SWEDISH MEATBALLS
Leave the chafing dish in the basement. This version of Swedish meatballs is an hors d'oeuvre you can make and serve in the same pot.

- Add the beef broth and Worcestershire sauce to a 6-quart slow cooker.
- Add the pork, turkey, breadcrumbs, eggs, allspice, onion powder, 2 teaspoons salt and 1/2 teaspoon pepper to a large bowl. Mix the meat with your hands until the mixture is uniform in color and texture. Scoop level tablespoonfuls, and roll them into balls; place them in a single layer in the slow cooker. When the bottom of the cooker is covered, add a second layer, starting on the outer edge. (The outside of the cooker is hotter; meatballs on the edge will cook more quickly than those in the center.) Cover and cook on high for 2 hours, until the meatballs are cooked through.
- Meanwhile, rub the butter and flour together in a small bowl to make a smooth paste (which will be used to thicken the sauce). Pinch off 1/2-inch balls, and set on a small plate.
- Transfer the meatballs with a slotted spoon from the slow cooker to a large bowl, leaving the cooking liquid in the pot. (You should have about 1 1/2 cups liquid.) When removing the meatballs, start from the outer edges and scoop carefully. Some may be stuck together; gentle coaxing with the spoon will separate them.
- Whisk the butter-flour paste into the cooking liquid, 1 or 2 balls at a time, to incorporate. Whisk in the sour cream and jelly, if using. Return the meatballs to the slow cooker, and stir with the spoon to coat. Cook on high, uncovered, until the sauce is thickened, 30 minutes. Adjust the setting to keep warm, sprinkle the meatballs with the parsley and serve.

- Make Sauce:
- Put yogurt in a paper towel-lined sieve set over a bowl and keep covered and chilled 8 to 12 hours.
- Boil pomegranate juice in a small heavy saucepan until syrupy and reduced to about 2 tablespoons, about 10 minutes. Keep warm off heat, covered.
- Make Meatballs:
- Soak whole slices of bread for 30 minutes in a mixing bowl filled with water, then fold and squeeze gently to remove as much water as possible.
- Pulse onion in a food processor until finely chopped, then add parsley and pulse again until finely chopped. Add lamb, bread (torn into pieces), allspice, red-pepper flakes, cinnamon, and 1/2 teaspoon salt and pulse, stopping and scraping down sides, until combined. (Do not overblend.)
- Roll level tablespoons of meat mixture into balls (about 42), arranging them on plates or on another sheet pan.
- Preheat oven to 350°F with rack in middle. Line a large, rimmed sheet pan with foil.
- Heat olive oil and vegetable oil together in a 12-inch nonstick skillet over medium-high heat until oils shimmer (put one meatball in to test; it should sizzle). Brown meatballs all over in batches of 10 to 12, turning occasionally with a spoon or shaking skillet (lower heat if oil begins to smoke), about 2 minutes per batch. Transfer, as browned, to lined sheet pan.
- Once all meatballs are browned, transfer the sheet pan to the oven and bake until meatballs are cooked through (cut one open to look, or use an instant-read thermometer; it should register 160°F), 10 to 15 minutes. Drain briefly on paper towels.
- Spoon drained yogurt into a small serving bowl and drizzle with pomegranate syrup, then swirl it in briefly with a spoon. Sprinkle some pomegranate seeds over top. Spear each meatball with a toothpick and serve yogurt alongside for dipping.

This is my aunt's recipe. I have never made these so I am not quite sure how long they take to make, but I have provided a good rough estimate where it asks for the prep/cook time. I hope that you enjoy them! :)

- FOR THE MEATBALLS:
- In a large bowl mix the 2 lbs. ground beef, 2 eggs, 6 tablespoons breadcrumbs, 1/3 cup Italian garlic dressing, and the 1 teaspoons salt.
- Take a 1/2 teaspoon and use to scoop heaping spoonfuls with.
- Roll the spoonfuls to the shape that you want your meatballs to be.
- Brown the meatballs underneath your oven's broiler.
- FOR THE SAUCE:
- Take the 1/3 cup minced onion, 1/3 finely chopped green pepper, and 4 tablespoons butter, and simmer the onions and pepper in the butter.
- Then add the 2 cans tomato soup, 4 tablespoons brown sugar, 1 1/2 tablespoons vinegar, 2 tablespoons mustard, and 8 teaspoons of Worcestershire sauce in with the rest of your sauce ingredients.
- WHEN BOTH SAUCE AND MEATBALLS ARE DONE:.
- Simmer the meatballs in the sauce for about 20 minutes or so.
- This all can be made the day before you wish to serve them as long as you refrigerate and then reheat when ready to serve.

Steps:
- Place ground beef, egg yolks, bread crumbs, Parmesan cheese, parsley, garlic salt, oregano, pepper and olives in a mixer bowl. Mix in mixer for about a minute on the second speed. Form mixture into 30 (1 inch) balls and fry in olive oil until well browned. Drain on paper towels. Warm barbeque sauce and pour over meatballs. Serve warm.
