Steps:

  • Use a small sharp knife to core a dozen or so cherry tomatoes; scoop out centers. Spike mayonnaise with prepared horseradish (try 3 parts mayo to 1 part horseradish) and spoon it into the tomatoes. Top with fresh herbs, like chives and chervil.

  • Cut tops off tomatoes and scoop out pulp (keep the pulp to use in another recipe).
  • Invert tomato shells on paper towels to drain.
  • Combine cream cheese, horseradish, and bacon bits; beat at medium speed until light and fluffy.
  • Spoon or pipe the mixture into tomato shells.

Steps:

  • Combine lemon zest, lemon juice, shallot, tomatoes, oil, vinegar, salt, black pepper, Worcestershire sauce, cayenne, and 1 Tbsp. horseradish in a large bowl. Let marinate 10 minutes, then stir in celery stalks and leaves.
  • Meanwhile, combine mayonnaise and remaining 4 Tbsp. horseradish in a small bowl. Spread 1 Tbsp. horseradish-mayonnaise on each slice of rye. Top toasts evenly with tomato mixture.

Steps:

  • Melt buter in large skillet over medium-high heat.
  • Add onions and cook, stirring until it begins to soften, 2-3 minutes.
  • Add garlic and cook until golden, about 3 minutes.
  • Add tomatoes, bay leaf and horseradish.
  • Stir, reduce heat to medium-low and cook until tomatoes are tender, about 20 minutes.
  • Add salt, cayenne and thyme.
  • Ladle into hot canning jars.
  • Seal and place in hot bath for 15-20 minutes.

  • Place the cherries in a small bowl, cover with very warm water and let soak until softened. Drain on paper towels and set aside to dry.
  • With a whisk or electric hand mixer, beat the cream until thick but not stiff. Blend in a dash of vinegar. Stir in the cherries and horseradish and salt and pepper to taste. Serve with roasted meats or with fresh vegetables.
