JAMMY FRENCH TOAST / HOT JAM SANDWICH
This is basically a jam sandwich cooked like french toast. You can use any jam you like but raspberry is my fave so for the sake of this recipe that's what I'm listing. Lovely!

Steps:
- Beat the egg, sugar and vanilla in a shallow dish.
- Make up your jam sandwich with the bread and jam. Cut the crusts off if you wish (I do!).
- Soak the sandwich in the egg mixture until it has all been absorbed into the sandwich.
- Heat a knob of butter in a frying pan over a medium heat.
- Fry for 1 - 2 minutes on each side or until lovely and golden.
- Serve immediately.

I got this out of a book I borrowed from the library and made it for a quick weekend snack for the family. Very popular.

Steps:
- Lightly beat together the egg, caster sugar and vanilla essence in a shallow dish and set aside.
- Spread the jam on to one slice of the bread and then place the other slice on top, pressing together firmly.
- Melt the butter in a large skillet over a medium-low heat.
- Soak the sandwich in the egg mixture until all of the egg has been absorbed.
- Fry in the butter for 1-2 minutes each side until golden brown.
- Slice the sandwich in half and sprinkle with the extra caster sugar.
- You may serve with a scoop of ice cream, yoghurt or a dollop of whipped cream or all by itself.

HAM AND JAM SANDWICH
Nothing can compare to jambon-beurre, the iconic Parisian sandwich, which is really just a baguette with salted European butter and unsmoked ham. This rendition expands on that perfect trinity with a few additional pantry ingredients: Jam plays well with ham (like in a Monte Cristo), and Dijon and black pepper bring spice and spirit. Smoked ham adds yet another layer of savoriness, but any thinly sliced ham will work. The result is a hearty, complex but still delicate meal, appetizer or pick-me-up. While ham and jam sandwich doesn't roll off the tongue quite like jambon-beurre, you have permission to call it a ham-jam-sam, if you like.

- Cut the baguette into four equal pieces by cutting the baguette in half crosswise, then cutting each half in half. Slice each piece through the middle to split it. Arrange the pieces cut-side up.
- Spread butter on the tops and bottoms of each quarter. If using unsalted butter, sprinkle lightly with salt. Spread Dijon on one side and jam on the other. Pile the ham on the bottom pieces, then season with black pepper. Top the sandwiches and press firmly. Wrapped and refrigerated, the sandwich will keep for up to 1 day.

- Separate ham slices and place in a 3-qt. slow cooker. In a small bowl, combine the apple juice, brown sugar, relish, mustard and paprika. Pour over ham. , Cover and cook on low for 4-5 hours or until heated through. Place 3-4 slices of ham on each roll. Serve with additional relish if desired.

- Cook oil, mustard seeds, and turmeric in a large skillet over medium-high, stirring occasionally, until seeds begin to pop, about 1 minute. Add onions and season with salt. Cook, stirring occasionally, until onions are beginning to soften, about 4 minutes. Reduce heat to medium-low and cook, stirring occasionally, until onions are softened and jammy and starting to brown around the edges, 15–20 minutes. Set jam aside. Do ahead: Jam can be made 1 week ahead. Transfer to an airtight container; cover and chill.
- Purée scallions, chile, garlic, ginger, cilantro, mint, lemon juice, a big pinch of salt, and ⅔ cup water in a blender until smooth. Transfer to a small bowl. (Makes about 2 cups. Store leftovers in an airtight container; cover, chill, and use within 3 days.)
- Place potatoes in a large pot and pour in cold water to cover by 1". Add a large handful of salt (water should taste briny) and bring to a boil. Reduce heat; simmer until potatoes are very tender but not falling apart, 30–35 minutes. Drain and let sit until cool enough to handle. Peel potatoes and slice ¼" thick. Let cool completely.
- Slather one side of bread slices with scallion chutney. Distribute half of Monterey Jack and half of cheddar over 8 slices. Top with some reserved onion jam, followed by 3–4 potato slices. Sprinkle with chaat masala, then top with remaining cheese; close up sandwiches.
