Homemade Italian cream soda, just like you get at the Italian restaurants! You can use any flavored drink syrup but I personally prefer raspberry.

- Stir together club soda, heavy cream, and raspberry syrup in a pitcher. Fill 2 tall glasses with ice and pour cream mixture on top.

I buy my Torani Syrup at a store called World Market - they have many flavors and even sugar-free types. The flavor combinations are endless. Under directions I've listed a few of our favorite flavor combinations. Also, Torani syrup is so versatile for other things; drizzle some on a dessert plate, over cheesecake, lace a bowl of ice cream, or mix with some whipping cream for a new flavor. Mix some strawberry flavor with lemonade. Ok, I'll stop now.

Steps:
- Fill a 16 ounce glass half full with crushed ice. Add your flavor choice of Torani syrup and the sparkling water or club soda. Stir.
- To make it an Italian cream soda, float the half-and-half on top of the drink. Stir in just prior to drinking.
- Use a single flavor or syrup, or try one of these combinations.
- 1 ounce lemon syrup with 1/2 ounce strawberry syrup.
- 1 ounce pink grapefruit syrup with 1/2 ounce mandarin orange syrup.
- 3/4 ounce cranberry syrup with 1/4 ounce lime syrup.
- 1/2 ounce cherry syrup with 1/2 ounce vanilla syrup.

How to make your own soda flavoring syrup. Experiment with different flavors to make a unique soda just for you. So Easy! One of the first things I learned to make when I started cooking. Heating longer will make it thicker. Heat for less to make it thinner. This is also good on Ice cream and pancakes. Yum!

- Heat water and sugar in saucepan on medium-low, stir occasionally, until reduced by half. If using juice, use a juice with no sugar, and replace half of the water with 1/2 cup of juice.
- allow to cool (hard to work with when cold).
- pour syrup into squeeze bottle for easy use and storage.
- squeeze desired amount of syrup into a glass of club soda and ice.
- stir to mix.

- Mix the water, sugar, and fruit together in a medium saucepan. Bring the mixture to a boil, stirring to ensure the sugar dissolves.
- After the syrup boils, reduce the heat to low and simmer for 5-10 minutes, or until slightly thickened.
- Pour the syrup over a fine mesh sieve balanced over a bowl and let the syrup strain on its own. You’re going to want to press down on the fruit to drain out every last drop of moisture (and I know, mushing things is just plain fun) but resist the urge. Larger bits of fruit pulp will make the syrup cloudy, which isn’t what we’re going for here. Instead, save that mushy fruit for spooning over yogurt or blending into a smoothie.
- After the strained simple syrup has cooled a bit, fill a glass halfway with ice. Spoon in syrup until it just barely covers the ice. Fill the glass with very fizzy seltzer and swirl just a bit with a spoon. If you’d like to turn the Italian soda into a French soda (also known as an Italian cream soda), pour a bit less seltzer into the glass and top the drink with a splash of heavy cream.
