INDIAN STYLE CHILI

This recipe was given to me by Donata my friend in New Mexico, who gave this recipe to me when I lived there in the 60's. It is a very spicy but tasty chili. I hope you like it as much as she does, me, not so much as I don't like spicy that much(don't tell her though). I tone it down quite a bit when I make it for me...but you...

Steps:

  • 1. In a very large soup pot add the bacon grease and cook the onions and garlic, until onions are translucent. Add pork and beef; cook and scramble until browned and cooked through,Remove from heat ; drain excess grease, over a metal strainer.
  • 2. Return mixture to pot and burner. Cook over medium high heat and add remaining ingredients, except the peppers and whole corn. Bring to a boil, then reduce heat to low and simmer for 45 minutes. Add the peppers and the whole corn and simmer for about 30-45 minutes; or until as thick as you like it. Makes about 16 servings . This chili freezes well.

2 Tbsp bacon grease
1 large sweet onion, diced
4 Tbsp minced garlic
1 lb ground pork
1 lb ground beef
28 oz can crushed tomatoes
28 oz can diced tomatoes, with basil
12 oz jar salsa, you choose the heat
15 oz black beans,undrained
2 can(s) (15 oz. each) hominy, drained
2 can(s) (15 oz. each) dark red kidney beans, undrained
1 c solid pumpkin puree
1 small can creamed corn
2/3 c creamy peanut butter
1 pkg chili seasoning ( i use mccormick's), your choose the heat
1 medium each of bell peppers ,red, green and yellow, diced
1 c frozen corn kernels
salt and pepper to taste

Indian Summer Turkey Chili image

Steps:

  • Heat a pot over medium to medium high heat. Add extra-virgin olive oil, 3 turns of the pan, and the turkey meat. Season the meat with: chili powder, grill seasoning, cumin, Worcestershire and hot sauce. Break up the meat with the back of a wooden spoon into small crumbles.
  • Chop the onion, reserving 1/4 of it for topping the chili. Brown meat 5 minutes, then add onions and chopped bell peppers and cook 10 minutes more. Add beer and deglaze the pan, scraping up the drippings and cooking off the alcohol. Add tomato sauce and barbecue sauce and bring to a bubble. It using corn kernels add them now. Let chili simmer 10 minutes. Adjust seasonings and heat level to your taste. Remove from heat and serve.
  • Tidbit:
  • To make a double batch, heat 2 pots and make 1 batch in each pot, rather than using 1 massive pot that is hard to control.

  • Defrosted frozen corn or leftover corn on the cob, scraped from cob

3 tablespoons extra-virgin olive oil, 2 turns of the pan
2 1/2 pounds ground turkey (85 percent lean) or ground turkey breast (99 percent lean), 2 packages
4 tablespoons dark chili powder, 2 palm fulls
2 tablespoons grill seasoning blend, any brand, 1 palm full
1 tablespoon cumin, 1/2 palm full
2 tablespoons Worcestershire sauce
1 to 3 tablespoons hot sauce, medium to extra-spicy
1 large onion, quartered
2 large peppers, any color combination, red, green, purple, yellow or orange, chopped
1/2 bottle beer (the alcohol cooks out), about 1 cup
1 (14-ounce) can tomato sauce
1/2 cup smoky barbecue sauce
2 cups corn kernels, optional
Choose from any or all of the following for dipping and scooping into your chili:
Pretzel Rods
Yellow, Red or Blue Corn Tortilla Chips, any flavor
Black Bean Tortilla Chips
Polenta Chips, Plain or Guacamole flavor
Pita Chips, Plain or Spicy flavors
Yukon Gold, Red Bliss or Blue Potato Chips, any flavor
Choose from any or all of the following for topping your chili:
Shredded Cheeses: smoked white sharp cheddar, such as Cabot brand, pepper jack, chipotle Cheddar, 5 peppercorn Cheddar, Monterey jack
Sliced canned jalapenos, drained
Salsas
Sour cream
Chopped raw onion
Chopped green olives and pimentos
Chopped cilantro leaves
Diced tomatoes

KIDNEY BEAN CHILI, INDIAN STYLE (RAJMA IN MASALA)

This is one of the signature dishes of North India, and is spicy, aromatic, flavourful, and simply out of this world! For the authentic feel, try to stick to the original recipe ingredients as much as possible, but you may also use suitable substitutes as mentioned. This is from "Vegetable Delights" by Malini Bisen. Note: Prep. time does not include pre-soaking time for the beans.

Kidney Bean Chili, Indian Style (Rajma in Masala) image

Steps:

  • Wash the kidney beans well and soak in water overnight.
  • Next morning, steam them until tender; or cook in a large pot of water for about an hour or until tender.
  • Remove 1/2 cup of cooked beans, crush coarsely and keep aside.
  • Grind 1 onion, ginger, coriander seeds, chili peppers, cumin, turmeric, peppercorns, and cinnamon to a very fine paste.
  • Heat ghee in a large saucepan over medium-high heat.
  • Add the chopped onions and saute until golden brown.
  • Add the ground paste and saute, sprinkling water occasionally, until the ghee starts separating from the paste.
  • Add the cooked beans (not the crushed beans), stir for a while and add salt and dried mango powder.
  • Pour 3 cups of water and add the crushed beans.
  • Mix well and bring to a boil, twice.
  • Serve hot over steamed rice, chappatis, or whole-wheat tortillas.

  • Pre-measure all spices (curry powder through chipotle chile pepper), so they're ready to be added together. Set aside about 1 teaspoon of spice mixture, reserving it to be added at the end of cooking. Preheat a large pot (I adore my Lodge Dutch Oven) over medium heat. Add spices (except 1 reserved teaspoon) all at once and toast for 30 seconds, stirring constantly.
  • Immediately add olive oil and stir briefly. Then quickly add sausage, onion, jalapeño, garlic, and 1/2 teaspoon salt. Continue cooking until sausage is no longer pink, stirring to crumble sausage and loosen browned bits from the bottom of the pan, about 8-10 minutes.
  • Add zucchini, green pepper, red pepper, chili beans, broth, diced tomatoes, and tomato sauce, and stir to combine. Cover chili and simmer for 45 minutes, stirring occasionally and adjusting heat as needed to maintain a low simmer.
  • During about the last 5 minutes of cooking time, add reserved 1 teaspoon of spices and remaining 1/2 teaspoon salt, stirring well to thoroughly combine.
