CARAMELIZED ONION DIP
Steps:
- Heat the butter and olive oil in a heavy medium saucepan over medium-high heat. Add the onions and sugar. Cook, stirring constantly, until soft and golden brown, 15 to 20 minutes. Season with salt. Stir in the vinegar and simmer until the mixture is dry. Add the hot sauce if using. Remove the mixture from the heat and allow the onions to cool slightly.
- Mix the cream cheese until smooth in a large bowl. Fold in the sour cream and caramelized onions. Season with salt and pepper. Garnish with chives if using. Can be eaten warm or transferred to the refrigerator to be eaten cold.
IRISH ONION DIP
I think the onion dip is the best dip ever, and now it turns out to be versatile, too. You can dress it up green for St. Patrick's Day with the simple addition of spinach.

Steps:
- Combine the sour cream and onion soup mix well. Be sure the spinach is very well drained; you will want to squeeze it with your hands so that it will not make your dip watery. Mix into sour cream mixture.
- Cover and chill overnight. Serve with chips, crackers, or fresh carrot sticks.

HOT ONION DIP
This is the first thing to be eaten at every party, and it's sinfully easy! If you are not a big onion fan, don't be afraid. Onion is not the dominant flavor of the dish, and it adds just the right touch. Serve with crackers or cocktail toast.

- Cheesy Irish Cheddar Bacon Jalapeño Potato Skins. It’s no secret that potatoes are the go-to vegetable for the Irish due to their endless abundance. But if you think that potatoes can ever be overdone, you’re in for a treat!
- Slow Cooker Corned Beef and Cabbage Sliders with Guinness Mustard. These sliders are an absolute necessity the next time you’re about to watch the big game!
- Mini-Shepherd’s Pie. If you’re looking for a home-cooked meal, try out these mini-shepherd’s pies. These bad boys are a perfect appetizer to welcome your guests with or enjoy all by yourself.
- Reuben Dip. Corned beef is a go-to for Irish dishes due to its soft texture that melts in your mouth. Rather than just another corned beef sandwich, throw in some cheeses and dressings to make a rich Reuben dip!
- Reuben-Topped Irish Nachos. Another one of my favorite ways to use up some left-over corned beef is by whipping up some Reuben nachos. This recipe is basically an Irish spin on nachos, but instead of chips, you guessed it… potatoes!
