BEST BAKED FRENCH FRIES
The healthiest way to make fries is to bake them. It saves money and you can't beat the taste. I have been playing around with different ways to bake fries for some time now, and I feel this is the best recipe thus far. Baking time may vary depending on how thick you cut the fries. Enjoy!

BAKED FRENCH FRIES
If every baked French fry you've ever eaten has been a soggy disappointment, then this recipe is for you. The key to achieving perfectly crisp "fries" is heating your sheet pan in a 500-degree oven for a good 10 minutes. When you toss the potatoes onto the blisteringly hot pan, magic happens: The potatoes sear and develop a truly crunchy crust. In terms of seasoning, we keep it simple with just salt and pepper, but feel free to experiment with adding a bit of chili or garlic powder, smoked paprika or cayenne to the mix.

ITALIAN SEASONED FRIES (LOW FAT)
One of the great things about making your own fries (in addition to being much less fattening than those you eat out) is that you can tailor them to your preference using herbs and seasonings. Feeling like some garlic fries today? Simply sprinkle them with some garlic, salt (or garlic salt) and a touch of parsley. Add some Parmesan and crushed red pepper flakes and you have these Italian fries. Lake spicy Cajun fries? Hit them up with some Cajun seasoning. Or sprinkle them with some fresh garlic and rosemary and you'll be in for a different treat. The important think to remember is that you need only a touch of olive oil to create the perfect fries. - Drain the potatoes and pat dry with paper towels. Spread 1 tablespoon of the olive oil on each of 2 rimmed baking sheets and spread out the potatoes. Overlapping is fine.
- Sprinkle the dried herbs evenly over the potatoes. Liberally spread the cheese and parsley on top. Drizzle the remaining 2 tablespoons of olive oil over the cheese. Scatter the cubed butter around the pans.
- Bake until the potatoes are golden brown, rotating the pans after 30 minutes, for 45 to 50 minutes total. Use a spatula to lift off the potatoes with all the crusty cheese adhered to them. Sprinkle with salt and pepper to taste. Serve hot.

- Preheat the oven to 425 degrees Fahrenheit. Evenly space the oven racks to ensure even cooking.
- (Watch this video or use a fry cutter.) Wash the potatoes, leaving the skins on. Slice off the ends of each potato, then slice off part of the side to make a base. Place the potato half cut side down and cut off a 3/8-inch slice, then lay the slice on its side and cut it into several long strips. Repeat until all potatoes have been cut into fries. The pieces can be uneven, but aim for as uniform of thickness as possible. See the video for full instructions!
- Place the cut fries into a medium bowl and rinse with cold water until water is clear. Then fill the bowl with cold water and allow to rest for 10 minutes (while the oven preheats). Then drain the potatoes and dry them thoroughly with a clean dish towel.
- Add the fries to a dry bowl and toss them with the olive oil, smoked paprika, garlic powder, Old Bay, black pepper, and kosher salt. Line two baking sheets with parchment paper. Spread the fries in straight lines on the paper, placing them as far apart as possible.
