LAWANNA'S MANGO SALSA ON TILAPIA FILLETS
A delicious fruity salsa topping to serve over fish or chicken, from a friend in Florida. I always use whatever that I have left in a mixed greens salad the next day. Use any kind of fish -- I use tilapia or salmon. The fish may also be grilled, which is what I prefer. If I can't find a good fresh pineapple, I will use canned pineapple tidbits.

- In a bowl, toss together the pineapple, strawberries, kiwifruit, mango, tomatoes, cilantro, and balsamic vinegar.
- Spray a skillet with cooking spray, and heat over medium-high heat. Sprinkle tilapia fillets with seasoned pepper blend, and pan-fry until fish turns white and opaque, 2 to 3 minutes per side. Serve fish topped with salsa.

CARIBBEAN FISH WITH MANGO SALSA
Now for something completely different, how about a little Caribbean/Creole feel? This can be done with fish or with scallops and will wake up the little taste buds. Please forgive me, I am not a real recipe follower, and I change it around all the time. Hope this works for you, love to hear about it. I never wrote it as a recipe, sort of a seat of the pants guy. One item to complete it that I may add is Zatarain's Caribbean Rice®, and in this I add 1/2 red bell pepper and 1/4 cup of fresh pineapple.

- Mix together the paprika, curry powder, cumin, allspice, ginger, coriander, salt, black pepper, fennel, and cayenne pepper in a bowl; set the spice mix aside.
- In a bowl, lightly toss the mango, pineapple, red bell pepper, black beans, red onion, and cilantro in a bowl; pour lime juice over the mango mixture, and toss again. Cover the bowl, and refrigerate until chilled, at least 30 minutes.
- Whisk together the egg and milk in a bowl. In a separate shallow bowl, stir the panko crumbs with coconut. Stir about 1 tablespoon of the spice mix, or to taste, into the panko crumb mixture.
- Heat olive oil in a skillet over medium heat. Dip tilapia fillets into the egg mixture, then press gently into the panko crumb mixture to coat both sides of fillets. Brush off any loose crumbs, then lay the fillets into the hot oil. Pan-fry until the fish is opaque inside and golden brown outside, 3 to 5 minutes per side or as needed. Serve with mango salsa.

- Combine first 5 ingredients and 2 Tbsp. dressing.
- Heat 1-1/2 tsp. of the oil and 1 Tbsp. dressing in large nonstick skillet on medium heat. Add 3 fish fillets; cook 3 min. on each side or until fish is browned on both sides and flakes easily with fork. Transfer to serving platter; keep warm. Repeat with remaining oil, dressing and fish.

PAN-FRIED TILAPIA WITH MANGO SALSA
This is a yummy, low-fat fish recipe. Perfect for summer! The recipe is for 2 people, but it could easily be doubled or halved. * NOTE: Even though the ingredients and directions for the mango salsa, rice and vegetable medley are listed after the tilapia, I recommend prepping them first so they are ready to go!

- 1. Preheat a cast iron skillet on medium heat. Brush both sides of the tilapia with oil. Sprinkle the seasonings over both sides of the tilapia, to taste.
- 2. Pan-fry the tilapia, carefully turning once. Cook to an internal temp of 145 degrees F.
- 3. Meanwhile, cook the rice according to package directions, and steam the vegetable medley, season with the lemon pepper to taste.
- 4. Mango Salsa: Mix all of the ingredients, except the mango. Just before serving, add the mango and mix lightly.
- 5. To Serve: Top the fish with the salsa and serve alongside the rice and veggies. Enjoy!

After messing around with a few different items I had on hand, I came up with a very simple recipe that your taste buds will love! This light and healthy fish is fused together with the flavors of the Caribbean and Central America. It's tangy and sweet with just a little kick. Serve with white or Spanish rice and top off with the salsa juices.

MANGO-LICIOUS TILAPIA
My son's girlfriend, Nicole, named this 'mango-licous'. The mango salsa is great over the tilapia, as a dip or on cottage cheese. Try serving the tilapia over brown basmati rice or lightly dressed salad greens for a complete meal. Then generously top with the salsa. Mango-licious!!

- Preheat the oven to 400 degrees F (200 degrees C.)
- In a shallow baking dish, combine the olive oil, orange zest, orange juice, salt, pepper and chili flakes. Rinse the fish fillets and pat them dry. Place them into the baking dish and turn to coat with the seasonings.
- Bake for 10 to 12 minutes in the preheated oven, until fish can be flaked with a fork.

JAMAICAN TILAPIA MANGO SALSA

- Directions Mix olive oil, wine and parsley then marinate fish in the mixture for 1 hour. Place fish on well oiled hot grill. Sprinkle fish with half of the jerk seasoning and half of the pineapple juice. Baste some of the oil marinade on the pieces of fish. Place pineapple slices on grill as well. Turn fish over and sprinkle with remaining seasonings. Add pineapple juice and oil marinade as on first side. Flip pineapple slices. Serve fish with pineapple slices and top with mango salsa. To make salsa mix all ingredients well and refrigerate for an hour or more before serving.
