AMBROSIA

Try Alton Brown's take on the Southern classic ambrosia, a holiday fruit salad with clementines, pineapples, maraschino cherries and even marshmallows.

Steps:

  • Place the cream and sugar into the bowl of a stand mixer with the whisk attachment and whip until stiff peaks are formed. Add the sour cream and whisk to combine. Add the marshmallows, orange, pineapple, coconut, pecans and cherries and stir to combine. Transfer to a glass serving bowl, cover and place in the refrigerator for 2 hours before serving.

1/2 cup heavy cream
1 tablespoon sugar
4 ounces sour cream
6 ounces homemade mini marshmallows, approximately 3 cups
1 cup clementine orange segments, approximately 6 clementines
1 cup chopped fresh pineapple
1 cup freshly grated coconut
1 cup toasted, chopped pecans
1/2 cup drained maraschino cherries

  • In a large bowl, combine the oranges, pineapple, marshmallows and coconut. Add sour cream and toss to mix. Cover and refrigerate for several hours.

Steps:

  • Remove the skin and membranes from the oranges and slice them in 1/4-inch slices. Place a layer of orange slices in the bottom of a large glass bowl, add a layer of coconut, then a layer of papaya, then blackberries, then starfruit, and then pecans. Repeat the process until all the fruit has been used. If the oranges are not especially sweet, a light layer of blueberry or clover honey will help.
  • Cover the bowl tightly and refrigerate for an hour or more before serving.

  • To the bottom of a almost-empty jam or jelly jar, add the other ingredients and shake to combine. Or, whisk together all the ingredients in a salad bowl, streaming in the EVOO. Toss with lettuce and vegetables and season with salt and pepper.

1 rounded tablespoon orange marmalade, seedless raspberry, grape or strawberry jam or jelly - scrape the bottom of the jar
2 teaspoons Dijon or spicy mustard
2 tablespoons white wine vinegar or juice of 1 lemon
1/4 cup extra-virgin olive oil
8 cups chopped greens and any vegetables you have on hand
Salt and freshly ground black pepper

Steps:

  • In a food processor, puree the prunes and preserves together. Add the apricots and process until pureed. Add 1/2 cup of the cocoa and process until smooth.
  • Line a baking sheet with waxed paper. Drop heaping teaspoons of the fruit mixture onto the baking sheet and refrigerate until firm, about 20 minutes.
  • Roll each truffle into a smooth ball about 3/4-inch in diameter.
  • In a saucepan, melt the chocolate morsels. Roll some of the truffles in the remaining 1/4 cup of cocoa and drizzle melted chocolate over the rest. Refrigerate until firm, about 30 minutes.
  • The truffles will keep in an airtight container in the refrigerator for up to 1 week and in the freezer for several weeks.

JANSSON'S TEMPTATION (JANSSONS FRESTELSE)

Who Jansson is, we may never know, but this meal is an absolute must on a cold and frigid evening. You might be put off by the inclusion of anchovies, but you will be really surprised at how well the saltiness of the fish works in this dish. If the anchovies are a definite 'no', then substitute smoked salmon. It won't have the same saltiness in each bite, but the salmon can be just as delicious in its own right. This is the one recipe that I get requests for after parties and there is always an amusing display of disbelief afterwards when the inclusion of anchovies is revealed.

Jansson's Temptation (Janssons Frestelse) image

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Butter a 9x13 inch baking dish.
  • Spread onions evenly onto the bottom of the prepared baking dish. Evenly distribute anchovies on top of the onions. Place potatoes on top of the anchovies, then pour in heavy cream. Mix bread crumbs together with the melted butter, then sprinkle overtop of the potatoes.
  • Place onto a baking sheet to catch any cream which bubbles over. Bake in preheated oven until the potatoes have softened, the cream has reduced, and the dish has turned deep golden brown, about 45 minutes.
