CRANBERRY COBBLER

This cobbler is perfectly delicious especially when served warm with a scoop of vanilla ice cream. Try it with other fruit (blueberries, rhubarb, or cherries). You can't go wrong with this easy recipe.

Cranberry Cobbler image

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Spray an 8-inch baking dish with cooking spray.
  • Spread cranberries in the prepared baking dish and sprinkle with 1/4 cup sugar.
  • Stir together remaining 1 cup sugar, flour, and melted butter in a bowl. Whisk eggs together in a separate bowl and stir into sugar-flour mixture until smooth. Pour over cranberries in the baking dish.
  • Bake in the preheated oven until berries are bubbling and topping is lightly browned, about 1 hour.

JO ANN'S CRANBERRY/BLUEBERRY COBBLER

I wanted a recipe for a cranberry/blueberry cobbler, and kept looking. I finally ended up creating one of mine one, by combining about 3 recipes. I like that it has a bit of sweet, and hint of tartness, but not too much to it. If you like cobblers, give this a try. Very easy to do.

Jo Ann's Cranberry/blueberry cobbler image

Steps:

  • 1. Heat oven to 375*. Spray an 8 inch square baking dish, and set aside.
  • 2. In large saucepan, combine all cranberries, and blueberries,sugar,cornstarch, and orange juice. Bring to a boil, stirring constantly. ( Mixture will become juicy as it cooks.) Reduce heat; simmer until cranberries pop and sauce is slightly thickened.
  • 3. Pour mixture into prepared baking dish.
  • 4. Cut crusts off of bread (discard crusts), and cut bread into strips. Place strips over fruit mixture.
  • 5. Melt butter for your topping mixture, then add the sugar, flour, and egg; beating well. Pour over bread strips on mixture. ( Take a spoon, and make sure all is covered.
  • 6. Bake for 35 to 45 minutes or until browned. Enjoy!

2 c sugar
1/4 c cornstarch
2 c fresh ( or frozen) cranberries
2 c fresh ( or frozen ) blueberries
2 Tbsp orange juice
TOPPING
8 to 10 slice white ( or ) wheat bread
1 1/2 c sugar
2 Tbsp flour
1 egg
1 stick of butter

APPLE-BLUEBERRY COBBLER

This recipe was inspired by camping trips I used to take with my family when I was younger. Originally, this cobbler was made using huckleberries, and baked over a campfire; but since I no longer live in an area where I can get huckleberries and don't have a constant campfire going, I substituted frozen wild blueberries and baked it in the oven instead. I also use a homemade apple beer in the batter, but use whatever hard cider or fruity beer you like.

Apple-Blueberry Cobbler image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 10-inch cast iron skillet.
  • Mix apples, blueberries, maple syrup, cornstarch, lemon juice, cinnamon, kosher salt, and nutmeg together in a large bowl. Toss to thoroughly combine. Pour into the prepared skillet.
  • Stir maple syrup, melted butter, and vanilla extract together in a large bowl. Add flour, baking powder, baking soda, and kosher salt; stir until crumbly. Pour in cider and stir until just combined. Place dollops of batter over apple-berry mixture.
  • Bake in the preheated oven until biscuit topping is cooked through and fruit is bubbly, about 45 minutes.

  • In a saucepan, combine the berries, lemon juice and 1/2 cup sugar. Bring to a boil; remove from the heat. Set aside. Steps:

  • Heat the oven to 375 degrees. To prepare the berries, place in a bowl and toss with the sugar and flour. Set aside.
  • To make the dough, mix the flour, salt, sugar and baking powder in a bowl. Cut in the butter until mixture resembles coarse meal. Add the cream and mix lightly, just until the dry ingredients are moistened.
