EATS! Heat 5-Pepper Sauce image

Steps:

  • Add the olive oil, garlic, 10 habaneros and jalapenos, 8 Scotch bonnets, 4 ghost and Thai chile peppers and the yellow onions to a medium saucepan over medium heat. Cook for 3 minutes. Add 1/2 cup each of the Cajun spice, cayenne and crushed red pepper. Cook for 1 minute. Pour the mixture into a blender and puree. Place the puree in the refrigerator to cool, about 1 hour.
  • Once cool, add the remaining 1/2 cup Cajun seasoning, cayenne and crushed red pepper for added flavor. Stir in the wing sauce, vinegar, mayonnaise and lime juice. Add the 1 reserved raw chile pepper of each kind, and stir well.

2 tablespoons olive oil
8 cloves raw garlic, minced
11 fresh habanero peppers, chopped with seeds, reserve 1 raw for garnish
5 fresh ghost chile peppers, chopped with seeds, reserve 1 raw for garnish
5 fresh red Thai peppers, minced, reserve 1 raw for garnish
11 fresh jalapeno peppers, chopped with seeds, reserve 1 raw for garnish
9 fresh Scotch bonnet peppers, chopped with seeds, reserve 1 raw for garnish
1 yellow onion, 1/4-inch diced
1 cup Cajun seasoning blend
1 cup cayenne pepper
1 cup crushed red pepper flakes
3 cups extra-hot wing sauce, such as Frank's Red Hot
1 cup white vinegar
1/2 cup mayonnaise
1/4 cup lime juice

Johnny Garlic's Grilled Peppered Steak with Cabernet Balsamic Sauce image

Steps:

  • Preheat grill to high heat.
  • Cut flank steak into 8-ounce portions and lightly tenderize with mallet. Dust with crushed black pepper and kosher salt. Press salt and pepper into steak with the palm of hand. Transfer steaks to a baking dish and place in the refrigerator. Let marinate for 4 to 8 hours.
  • In a medium sauce pan over medium heat, add extra-virgin olive oil and onions and lightly saute until onions are caramelized. Add garlic and cook until garlic begins to turn brown. Deglaze with wine and balsamic vinegar. Add sugar and let simmer and reduce for 20 to 30 minutes until mixture reduces to 3/4 cup.
  • Place steaks over a hot grill. Move once on first side to mark the steaks, cook for 5 minutes and flip, again only moving once to mark steak, cook for 4 minutes. When desired doneness is achieved, remove steaks from grill and let rest for 3 to 4 minutes.
  • Strain wine mixture and return to heat to reduce for 5 more minutes or until thick syrup is created. Serve with the steaks.

2 pounds flank steak or tri-tip, cut into 8-ounce pieces
4 tablespoons black peppercorns, lightly cracked
2 tablespoons kosher salt
3 tablespoons extra-virgin olive oil
1/4 cup red onion, minced
1 tablespoon garlic, minced
1 cup Cabernet Sauvignon
1/2 cup balsamic vinegar
2 tablespoons brown sugar

Submitted by request as an Applebee's copycat recipe. Sounds like it would be good over all kinds of meats or as a marinade.

Honey Pepper Sauce image

Steps:

  • Mix water and corn starch in a saucepan until no lumps remain.
  • Add honey, soy sauce, and pepper sauce and stir thoroughly.
  • Heat over medium, stirring occasionally until thickened.
  • Remove from heat and serve.

1/2 cup water
1 tablespoon cornstarch
2 tablespoons honey
2 tablespoons soy sauce
1 tablespoon szechuan sauce (from Asian food section at most supermarkets)

Chef Johnny's Secret Sauce image

Steps:

  • Melt butter. Add flour, until blended. In another pot, blend milk, wine, and broth. Bring just to a boil; add to butter/flour mixture and stir until sauce is smooth and thick. Add beaten yolk; stir till smooth. Add seasonings to taste. Do not boil.
  • Recipe suggests using this sauce on Chicken Kiev.

PICKAPEPPA SAUCE

This sauce is great on anything but especially meats. I use sauces on rice many times as if it were gravy. This one is one of my favorites! It is not the commercial, brand pepper sauce sold under the same name but it is still a great recipe! I would rate this "medium" hot. **Prep time includes allowing the sauce to blend for 7 days!

JOHNNY'S FOOD HAVEN PEPPER SAUCE

The motto at Johnny's Food Haven in Port of Spain, Trinidad, is HOME COOKING AWAY FROM HOME, and this is one of Johnny's best home recipes. The aromatic herb traditionally used in this sauce is shadow bennie, or culantro, but since it is difficult to come by outside of the islands, cilantro may be used instead. As a variation, you can add 1/2 to 1 cup cooked and pureed pumpkin or carrots to make the sauce milder. Serve this sauce as an accompaniment to grilled meats, poultry, or fish. As with all of my recipes that call for a specific type of pepper, you can substitute with any other type of pepper, the flavor profile of the dish might be changed slightly, but it should still be good.   • Place the chile peppers and water in a blender or food processor and puree until smooth.
  • Transfer to a nonreactive bowl, add remaining ingredients and stir well. Let sit at least 1 hour, before using, to allow the flavors to meld.
