Steps:

  • Pour the vanilla flavored vodka, Irish cream liqueur, and pumpkin flavored liqueur into a cocktail shaker over ice. Cover, and shake until the outside of the shaker has frosted. Strain into a chilled martini glass, and garnish with a sprinkle of ground cinnamon and ground nutmeg to serve.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Press pie crust into a 9-inch pie dish.
  • Beat evaporated milk, brown sugar, coffee-flavored liqueur, corn syrup, cinnamon, salt, cloves, nutmeg, and ginger together in a bowl using a stand mixer fitted with the whisk attachment until smooth.
  • Pour pumpkin and eggs into brown sugar mixture; beat until well incorporated. Pour pumpkin mixture into pie crust.
  • Bake pie in the preheated oven for 10 minutes. Reduce heat to 325 degrees F (165 degrees C) and continue baking until center begins to firm, about 30 minutes.

Steps:

  • Cut softened cream cheese into pieces.
  • Prepare chocolate crumb crust and press firmly into a nine-inch springform pan.
  • Preheat oven to 350F degrees.
  • In a small saucepan over medium heat, melt chocolate with Kahlua and butter; stir until smooth.
  • Set aside.
  • In bowl, combine eggs, sugar and salt; add sour cream and blend well.
  • Add cream cheese to egg mixture; beat until smooth.
  • Gradually blend in chocolate mixture.
  • Turn into prepared crust and bake for 35 minutes or until filling is barely set in centre.
  • Turn off heat and let stand in oven for 15 minutes with door open; then take out of oven and let stand at room temperature for one hour.
  • Refrigerate several hours or overnight.
  • Garnish with whipped cream and chocolate shavings if desired.

Steps:

  • 1. In a bowl, combine gingersnap and graham cracker crumbs with powdered sugar and butter; toss to combine. Spread evenly onto bottom of 8-inch springform pan.
  • 2. Bake at 350 degrees for 5 minutes; cool.
  • 3. In mixer bowl, beat cream cheese until smooth; gradually add granulated sugar and beat until light.
  • 4. Add eggs, one at a time, beating until well after each addition.
  • 5. Transfer 1 cup mixture to separate bowl and blend in pumpkin, cinnamon, ginger, nutmeg and Kahlua. Pour half of pumpkin mixture into prepared crust.
  • 6. Top with half of cream cheese mixture; repeat layers using remaining pumpkin and cream cheese mixtures.
  • 7. Using table knife, cut through layers with uplifting motion in four to five places to create marbled effect.
  • 8. Place on baking sheet and bake at 350 degrees for 45 minutes.
  • 9. Without opening oven door, let cake stand in turned off oven 1 hour.
  • 10. Remove from oven and cool, then chill; remove from pan.
