KATE'S ITALIAN TOMATOES

Simplicity! I always serve tomatoes with steaks to help the B vitamins digest. For years, I have heated a can of Italian plum tomatoes with a little Italian seasoning and a sliver of butter. Last night I used the remaining San Marzano plum tomatoes from another recipe and decided my U.S. palate would have welcomed a teensy bit of sugar. My brothers liked these better than the breaded stewed tomatoes MDM used to make (she exclaimed, "I SAW WHAT YOU DID!"). I serve these in their own bowl.

Steps:

  • Combine all ingredients in medium saucepan over medium-low heat and heat through.

14 1/2 ounces canned Italian plum tomatoes (such as Muir Glen or Hunt's) or 14 1/2 ounces san marzano tomatoes (with optional 1/2 teaspoon sugar)
1/2 teaspoon italian seasoning
1/2 teaspoon unsalted butter (optional) or 1/2 teaspoon vegan butter substitute (optional)

Italian Tomatoes (((Wonderful and Easy))) image

Steps:

  • Slice each tomato into 8 wedges and place into a large bowl.
  • Add the rest of the ingredients and toss well to evenly distribute.
  • Cover the bowl and refrigerate for at least 30 minutes or more.
  • Serve as a side dish in small individual serving bowls.

4 -6 large fresh tomatoes (each cut into 8 wedges)
1/4 cup extra virgin olive oil
1/4 cup vinegar (any type)
1 bunch scallion (finely chopped)
2 teaspoons granulated garlic powder
2 teaspoons dried oregano
2 tablespoons dried parsley
2 tablespoons dried tarragon
salt & pepper

Steps:

  • In a large saucepan over medium heat, combine tomatoes, celery, onion, bell pepper, basil and sugar. Cover and cook for 10 minutes, stirring occasionally to prevent sticking.

  • Core and coarsely chop two-thirds of the tomatoes. Halve the remaining tomatoes down the middle and discard the tough top part where the tomatoes met the stem, if it exists. Rub the cut sides of the tomatoes against the large holes of a box grater set in a large bowl. Leave the tomato pulp in the bowl and discard the skin.
  • Add the chopped tomatoes, olive oil, lemon juice, salt, sugar, several twists of freshly ground black pepper and the pressed garlic to the bowl. Mix well. Let the mixture marinate while you cook the pasta.
  • Bring a large pot of salted water to boil and then cook the pasta just until al dente, according to package directions. Reserve about a cup of the pasta cooking water before draining the pasta.
  • Drain the pasta, then immediately return it to the pot. Pour in all of the tomato sauce and a small splash (about 1/4 cup) of the pasta cooking water. Cook over medium-low heat for about 1 to 2 minutes, tossing often (gentle now!), just long enough for the tomatoes to soften a bit and for the starchy tomato water to coat the pasta.

  • Bring a large pot of salted water to boil and cook the pasta until al dente, according to package instructions. Drain the pasta and set it aside.
  • While the pasta is cooking, combine the olive oil, tomatoes and salt in a large, non-reactive skillet or Dutch oven over medium heat. Cover the skillet (use a baking sheet if you don’t have a better lid). Cook, stirring occasionally, until most of the tomatoes have started to burst out of their skins and the olive oil has a light red hue (about 6 to 12 minutes).
  • Remove the skillet from the heat and stir in the cooked pasta. Let the mixture cool for a few minutes while you chop the basil. We don’t want the cheese to melt on contact, so wait to proceed to the next step until your pasta is lightly warm (not hot).
  • Stir the mozzarella balls and basil into the pasta. Add the vinegar, then taste and add additional vinegar and/or salt, if it doesn’t quite taste spectacular yet. For best flavor, let the mixture rest for about 20 minutes, so the pasta can absorb some of the sauce. Or, refrigerate it for future use.
