LIME FROZEN YOGURT

Wedges of grilled pineapple complement the cool and tangy frozen yogurt in this delightful dessert from Kelly Kraus. Little Falls, New Jersey. It's a real refresher on warm days!

Lime Frozen Yogurt image

Steps:

  • In a large bowl, combine the yogurt, sugar, lime juice, lime zest and salt; stir until sugar is dissolved. Freeze in an ice cream freezer according to manufacturer's instructions. Allow to ripen in the ice cream freezer or firm up in your refrigerator freezer for 2-4 hours before serving., Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill pineapple, uncovered, over medium heat for 1-2 minutes on each side or until heated through. Serve with lime frozen yogurt. Garnish with mint if desired.

Steps:

  • Whisk together all of the ingredients in a large mixing bowl until well blended.
  • Pour mixture into the freezer container of a 1 1 1/2 qt electric ice cream maker and freeze according to manufacturer's instructions (Instructions and times vary with each machine).
  • Cover, and freeze until desired firmness.

1 (32 ounce) container of whole milk french vanilla yogurt
1 (14 ounce) can fat-free sweetened condensed milk
1/2 cup key lime juice

KEY LIME FROZEN YOGURT

A light dessert to accompany any dinner on a summer evening. It has just the right taste, texture & sweetness to "cleanse the palate", without being filling... Best of all, preparation couldn't be easier! I mix the ingredients together (less than 5 minutes of preparation time) & place them in the fridge until dinner is ready. Just before we sit down to eat, I pour the mixture into my ice cream maker. By the time dinner is finished & everyone has had a chance for their meal to settle, dessert is ready!

Steps:

  • Mix ingredients together & refrigerate until ready to use. I usually do this in the morning to give the mixture time to chill before I place it in the ice cream maker & to give myself one less thing to prepare at dinner time, but this is NOT necessary.
  • Pour into ice cream maker & follow per instructions. I usually let mine run about 1-1/2 hours to give it the consistency of soft serve ice cream.
  • Any remainder can be placed in an air tight container in the freezer.
  • When ready, remove from freezer & let soften a few minutes.
