Steps:

  • Mix the chile jalapeno, carrots, onion, limejuice, oregano, vinegar and tequila; marinate for two minutes. Coarsely mash avocado with a fork. Add the rest of the ingredients and season with salt and olive oil. Serve with chips or on tostada

4 cal fully ripened avocados from Mexico halved, pitted and peeled
2 g white onion finely chopped
2 g pickled chiles jalapenos finely chopped
2 g pickled carrots finely chopped
2 ounces tequila of your choice 2vinegar from the pickled chiles jalapenos
1 tablespoon olive oil Juice from
1/2 lime
Dried oregano to taste
salt to taste

Guacamole with a Kick image

Steps:

  • Heat about 1/2 inch oil in a large skillet over medium-high heat until it starts to shimmer. Fry the tortilla wedges in batches until golden brown and crisp, 2 to 3 minutes. Drain on paper towels and season with salt.
  • Scoop the avocado flesh into a large bowl and mash it as finely or coarsely as you like. Stir in the garlic, jalapenos, tomatoes, lime juice, chipotle and onion. Taste and adjust the seasoning with salt and pepper. Stir in the cilantro leaves just before serving.

Vegetable oil, for frying
6 to 8 corn tortillas, each cut into 6 to 8 wedges
Kosher salt and freshly ground black pepper
6 avocados, halved and pitted
2 cloves garlic, finely chopped
2 jalapenos, finely chopped
2 Roma tomatoes, finely chopped
Juice of 1 lime
1 chipotle pepper in adobo, finely chopped
1 small white onion, finely chopped
1/2 cup fresh cilantro leaves

Steps:

  • How to Cut Avocados Start by slicing the avocados in half, working the knife around the pit. Slowly work the two halves apart. This should be very easy to do if the avocado is perfectly ripe. Remove the pit by stabbing it carefully with the tip of the knife and working it loose from the fruit. Make several vertical slices into the green flesh. Be sure to reach the skin but try not to not pierce through it. Repeat by making horizontal slices, making a checkerboard effect. Take a medium-sized spoon and gently skim it between the skin and the fruit, releasing the cubed pieces into the bowl. Discard the skins into the trash or composter. How to Make Guacamole Finely chop the onions, cilantro, and the chile. Be very careful when handling the chile! If possible, wear food preparation gloves. If not, then be sure to wash everything thoroughly and do not touch the eyes or nose. (This has been learned the hard way, by the way.) Combine all the ingredients, including the lime juice and tequila into a medium bowl and carefully mash the ingredients into a thick, chunky paste. Use the back of a large spoon, a potato masher, or use a mortar and pestle if one's available! Add salt and pepper to taste, or even a light sprinkling of smoked paprika for a little extra oomph!

2 Tablespoons fresh lime juice
2 Tablespoons high quality tequila

Steps:

  • Pit avocado and mash in a small mixing bowl with the lime juice. Add garlic, green onion, tomato, yellow onion, bell pepper, salt and chili powder. Mix thoroughly. Cover and refrigerate for 30 minutes.
  • Heat oil over medium heat in a medium skillet. Place tortilla in skillet and top with 1/3 cup cheese. When cheese has melted and tortilla is slightly browned, spoon on some guacamole and top with another tortilla. Flip, and allow the second tortilla to brown.
  • Remove from heat and cut into wedges. Repeat with remaining ingredients.
