Bacon and Parmesan Penne Pasta image

Steps:

  • Place the chopped bacon and onion in a skillet over medium heat, and cook and stir until the bacon is crisp and the onion is beginning to brown, about 10 minutes.
  • While the bacon and onion are cooking, fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the penne, and return to a boil. Cook the pasta uncovered, stirring occasionally, until cooked through, but is still firm to the bite, about 11 minutes. Drain pasta, transfer to a large serving bowl, and stir in the olive oil to coat the pasta.
  • Drain the bacon grease from the skillet, leaving a couple of tablespoons or to taste. Stir the cooked bacon mixture into the pasta, and sprinkle the Parmesan cheese over the pasta. Stir to mix in the cheese, and serve.

Bacon and Tomato Pasta image

Steps:

  • In a large stock pot, boil 3 quarts of water, when boiling add 2 tablespoons kosher salt and the pasta and cook until the pasta is al dente.
  • In a large saute pan over medium heat, add bacon and saute until bacon is crispy. Remove bacon to drain on a paper towel-lined plate and remove 3/4 of the bacon fat from the pan. Add extra-virgin olive oil, onions, and red chili flakes. Cook until onions are translucent, add garlic, cook for 2 minutes then add tomatoes. Saute for 5 minutes, then deglaze with wine.
  • Drain pasta and add to the tomato mixture pan. Add basil and bacon. Toss with Parmesan, and add salt and pepper, to taste.

16 ounces spaghetti pasta
1 pound thick-cut bacon or pancetta, chopped
3 tablespoons extra-virgin olive oil
1 cup red onion, diced

Kim's Penne with Bacon & Tomatoes image

Steps:

  • 1. Prepare pasta according to package. While pasta is cooking, saute chopped bacon in olive oil until crisp. Remove bacon from pan and set aside, leaving oil in pan. Add spinach and garlic to oil in pan, saute until spinach is wilted. Add balsamic vinegar and continue cooking 2 minutes. Add tomatoes and cook until softened and hot, about 2 to 3 minutes. Add the well drained pasta and bacon to pan and gently toss to combine. Sprinkle each serving with parmesan cheese. *chopped pancetta may be substituted for bacon.

8 oz penne pasta
4 slice bacon, chopped*

2 c fresh baby spinach leaves
1 clove garlic, minced
1/4 c balsamic vinegar
1 c fire roasted tomatoes

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the penne pasta, and cook until tender, 8 to 10 minutes.
  • Meanwhile, heat 1 tablespoon of olive oil in a skillet over medium heat. Place bacon in the skillet, and cook until browned and crisp. Add garlic, and cook for about 1 minute. Stir in the tomatoes, and cook until heated through.
  • Place the spinach into a colander, and drain the hot pasta over it so it is wilted. Transfer to a large serving bowl, and toss with the remaining olive oil, and the bacon and tomato mixture.

Penne with Tomatoes and Basil image

Steps:

  • Heat the canola oil in a large high-sided saute pan or saucepan over high heat until it begins to shimmer. Add the onions, garlic and tomatoes with the juice. Mash the tomatoes with a potato masher in the pan and bring to a boil. Reduce the heat to a simmer and cook until the tomatoes begin to soften, about 20 minutes.
  • Meanwhile, bring a large pot of water to a boil, add the penne and 2 tablespoons salt and cook until al dente, 8 to 10 minutes. Reserve 1 cup of the pasta water. Drain the pasta.
  • Mash the tomatoes again until coarsely chopped. Add 1/4 to 1/2 cup of pasta water to thin out the sauce and continue to cook, stirring occasionally, until thickened, about 20 minutes; season with salt and pepper. Thin with additional pasta water if necessary.
  • Transfer the pasta to the sauce; season with salt and pepper. Add some of the Parmigiano-Reggiano to the pan and combine. Cook the pasta in the sauce for 1 to 2 minutes, adding more grated cheese as the pasta cooks. Add some of the basil and parsley and the chile flakes and then drizzle with olive oil. Season with salt and pepper.
  • Transfer the pasta to a large shallow serving dish and top with freshly grated cheese. Top with the ricotta and drizzle with 2 tablespoons olive oil. Garnish with the remaining basil and parsley; serve immediately.

Penne Noodles With Tomatoes, Cheese and Bacon image

Steps:

  • Fry bacon in deep fry pan.
  • Drain off all but 4 tablespoons drippings.
  • Keep bacon in pan and add garlic and stir 30 seconds.
  • Stir in wine and scrape up any browned bits on pan.
  • Add diced tomatoes, tomato paste, oregano, red pepper.
  • Simmer 10 minutes to thicken.
  • Meanwhile, cook pasta as box directs.
  • Drain off all but 1/2 cup pasta water for reserve.
  • Put pasta in serving bowl and pour sauce.
  • Can add some reserve water if seems dry a teaspoon at a time.
  • Mix in shredded cheese.
  • Sprinkle with parsley and season with salt and pepper to taste.
  • Serve immediately.

Bacon, Creamed Tomato and Pea Penne image

Steps:

  • Add a splash of water to the skillet and fry bacon for 2-3 minutes until lightly browned (no oil is needed as bacon provides plenty of fat). Add the onion and stir for another minute or two until softened.
  • Meanwhile, cook the penne according to package instructions, in a pot of salted water.
  • Pour the wine into the bacon mixture and allow to bubble down, then stir in the passata and oregano. Bring to a simmer, then stir in creme fraiche. Season to taste. Cover and simmer for 5 minutes until slightly reduced and thickened. Stir in the peas and cook for another 3-4 minutes.
  • When the pasta is cooked, drain and rinse in hot water, shaking the pasta to get water out of the tubes. Fold in the bacon and pea mixture, and season to taste.
