Steps:

  • Heat wok until a thin wisp of white smoke coils up from it. Add oil and heat until it shimmers. When it is ready, add onions and cook and stir until they are just beginning to take on color. Add ginger, garlic, chiles, and mushrooms and stir fry until fragrant-about forty-five seconds or so. Add pressed tofu and continue stir frying another minute.
  • Add pork, soy bean pastes/sauces, Sichuan pepper, pepper and sugar, and stir fry, chopping at the meat to separate it with your wok shovel. Cook until most of the pink is gone from the meat.
  • Add wine, cook off alcohol. Add chicken broth and cornstarch mixture, cook, stirring, until thickened. Add sliced scallion tops and cilantro, stir to combine.
  • Remove from heat, drizzle with sesame oil.
  • Divide noodles into bowls, and top with meat sauce and vegetable shreds.

2 tablespoons peanut oil
1 medium onion, diced finely
2 inches cube fresh ginger, minced
5 garlic cloves, minced
3 -6 thai bird chiles, sliced thinly
2 fresh shiitake mushrooms, diced (dried rehydrated)
8 ounces pressed spiced tofu, diced finely
3/4 lb ground pork or 3/4 lb ground pork
1 tablespoon hoisin sauce
1 tablespoon sichuan szechuan hot bean sauce (broad bean paste with chiles)
1 tablespoon soy bean sauce
1 teaspoon sugar
1 teaspoon freshly ground szechuan peppercorns
1 teaspoon fresh ground pepper
3 tablespoons shaoxing wine or 3 tablespoons dry sherry
1/2 cup chicken broth
1 1/2 tablespoons cornstarch (dissolved in 1 tablespoon chicken broth)
1/2 cup sliced scallion top
1 cup loosely packed cilantro leaf, roughly chopped
1 teaspoon sesame oil
1 cup shredded carrot
1 cup shredded snow peas
1 red sweet bell pepper, shredded
1 lb fresh egg noodles, cooked al dente and drained

KNODEL

This is an Austrian classic. 'Knodel' (you pronounce the "k") means 'dumpling' in German. My mother used to make this a lot when I was small because it's a good way to use up stale bread. It remains one of my fondest childhood taste memories. The quantities are approximate, because this is one of those recipes that isn't written down, so I had to follow her around the kitchen the last time she made it. Be sure the bread is stale. If it isn't, dry it in the oven after cutting it into cubes.

Steps:

  • Butter one 9x11 inch baking dish.
  • In a skillet over medium heat, combine the onion, parsley and butter. Cook until onions begin to brown. Pour over bread cubes and toss well.
  • Whisk together the eggs, milk, salt and pepper. Pour over the bread and onion mixture; mix well and allow to stand for 1 hour.
  • Firmly press mixture into baking dish; tightly cover with aluminum foil.
  • Place baking dish on a rack in a larger pot with 3 inches of water. Cover pot and steam for 1 hour. Remove from pot and allow to cool for 10 minutes. Drizzle with melted butter before serving.

  • Bring 2 quarts of water to a boil. Rinse the bean sprouts in cold water and drain. Julienne the scallions. Mix the soy sauces, sesame oil, salt, sugar, wine and white pepper in a small bowl and set aside.
  • Boil the noodles. Fresh noodles should be boiled for about 1 minute. For dried noodles, boil for 2 minutes. Rinse in cold water and drain very well.
  • Heat the wok over high heat and add a tablespoon of oil to coat the wok (you can also use a cast iron or non-stick pan for this). Spread the noodles in a thin, even layer on the wok and tilt the wok in a circular motion to distribute the oil and crisp the bottom layer of the noodles evenly. It should take about 5 minutes for the first side.
  • Flip the noodles over. add another tablespoon of oil around the perimeter of the wok, and let the other side crisp up. Don’t stress if you can’t turn the noodles over in one shot. The goal here is just to get an even crispness and to dry out the noodles during this cooking stage. Set the noodles aside on a plate.
