KOREAN BEEF AND RICE

A friend raved about Korean recipes for bulgogi-beef cooked in soy sauce and ginger-so I tried it. It's delicious! Dazzle the table with this tasty version of Korean beef and rice. -Betsy King, Duluth, Minnesota

Korean Beef and Rice image

Steps:

  • In a large skillet, cook beef and garlic over medium heat 6-8 minutes or until beef is no longer pink, breaking up beef into crumbles. Meanwhile, in a small bowl, mix brown sugar, soy sauce, oil and seasonings., Stir sauce into beef; heat through. Serve with rice. Sprinkle with green onions. Freeze option: Freeze cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally.

3 garlic cloves, minced
1/4 cup packed brown sugar
1/4 cup reduced-sodium soy sauce
2 teaspoons sesame oil
1/4 teaspoon ground ginger
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon pepper
2-2/3 cups hot cooked brown rice
3 green onions, thinly sliced

Steps:

  • In a large bowl, mix together the soy sauce, sesame oil, brown sugar, garlic, and red onion.
  • Stir in the black pepper, red pepper flakes, sesame seeds, leeks and carrot.
  • Mix in the meat by hand to ensure even coating.
  • Cover, and let marinate for at least 2 hours or overnight.
  • Brush the bottom half of a wok with cooking oil, and heat over med-high heat.
  • Put in all of the meat and marinade at once, and cook stirring constantly. The meat will be cooked after just a few minutes.
  • Remove from heat, and serve with rice or noodles.
  • For Korean style fire meat, roll the meat mixture up in a leaf of red lettuce.

KOREAN BEEF SALAD

I got this from a Sunset magazine about 15 years ago and having lost it and found it several times, I'm finally putting it in here for sanity's sake! The recipe calls for sliced deli roast beef, but I've used leftover steak or roast and it's great. The veggies can be played with too--cucumbers, sliced bell peppers, halved cherry tomatoes, bean sprouts have all worked well. It's very refreshing and no cooking! Prep time doesn't include the marinating time. (I've marinated it for about an hour, and that's still enough time)

Korean Beef Salad image

Steps:

  • Mix first six ingredients in large bowl until sugar dissolves. Add beef and toss to coat. Marinate for up to four hours.
  • Toss beef with salad ingredients to serve.
  • A squeeze of lime is good on this too.

1 tablespoon oyster sauce
1 tablespoon rice wine vinegar
1 teaspoon sake
1 1/2 teaspoons sugar

1 small head iceberg lettuce, shredded
1 cup thinly sliced celery
1 cup shredded carrot
1 cup cilantro leaf, rough chopped

  • Pickle the carrots and/or cucumbers if desired (see recipe notes—I highly recommend). In a large skillet, brown the beef over medium-high heat, breaking it into small pieces, until it is browned and cooked through, about 5 or so minutes. When the beef is about halfway finished cooking, add 1 tablespoon of the soy sauce and 2/3 of the scallions. Once the beef is completely browned, stir in the garlic and cook 30 seconds.
  • While the beef cooks, in a small bowl, stir together the rice vinegar, honey, ginger, red pepper flakes, and remaining soy sauce. Pour over the browned beef. Stir and cook for 2 minutes. Remove from the heat, then stir in the sesame oil. Sprinkle the remaining green onion over the top. Taste and add extra soy sauce or red pepper flakes as desired (I added a bit more of each).
  • Serve the beef hot, over rice, topped generously with the carrots, cucumber, and sesame seeds.

  • Slice the steak into thin slices, cutting against the grain. If you like you can put the whole steak in the freezer for an hour to firm it up so it will slice easier. Put the steak slices in a bowl and toss with the Lee Kum Kee Korean Barbecue Sauce to coat well. Cover and refrigerate for at least an hour, or overnight.
  • To make the radish/cucumber pickle heat the water, vinegar, sugar, peppercorns and bayleaf in a small saucepan until it comes to a boil, stirring to dissolve the sugar. Put the veggies in a small bowl or jar and pour the hot pickling mixture over them. Make sure they are completely submerged...if not, add a bit more hot water. Let cool, then cover and refrigerate.
  • Thread the marinated beef slices onto skewers. Grill the skewers over high heat, either on a charcoal grill or a grill pan on the stove. Flip once you see nice char marks on the meat.
