Steps:

  • Preheat oven to 375°. In a Dutch oven over medium heat, cook sausage, crumbling meat, until no longer pink, 5-6 minutes; drain. Stir in tomatoes, spinach and 2 cups cheese., Pour sausage mixture into a greased 11x7-in. baking dish; top evenly with mashed potatoes. Bake 20 minutes; sprinkle with remaining cheese. Bake until cheese is melted and top begins to brown, about 20 minutes longer. Let stand 10 minutes before serving.

Lamb in Phyllo Pastry image

Steps:

  • Heat the oil with 1/4 cup of the butter in a skillet. Add the chopped onion and garlic, and fry for a couple of minutes. Add the mushrooms and cook a little longer. Add the parsley, mint, chives, thyme, lemon juice, salt and pepper, and bread crumbs and fry until the crumbs begin to brown. Remove from the pan and set aside. Remove the bone from the chops, place into the skillet, and sear both sides.
  • Work with 3 (8 by 8-inch) sheets of phyllo pastry at a time (if they are bigger there is too much overlap), and cover the rest with a damp cloth to prevent them from drying out. Melt the remaining 1/4 cup butter. Brush each sheet with melted butter before covering with the next sheet. When you have buttered 3 sheets, place a lamb chop in the middle, add a quarter of the mushroom stuffing, and fold the phyllo pastry over to make a parcel. Repeat with the remaining lamb chops and phyllo pastry. (When you are making the parcel make sure the ones you have done remain covered with a damp cloth.)
  • Preheat the oven to 400 degrees F.
  • Put the parcels on a baking sheet and cook them in the oven for 10 minutes. Reduce the heat to 325 degrees F and cook for a further 30 minutes or until pastry is golden brown.;

Steps:

  • To make the poaching liquid: In a shallow 3-quart pot, add all ingredients. Bring to a simmer.
  • To make the lamb sausage: Mix all ingredients except bread crumbs in a large bowl; add 1 to 2 cups bread crumbs until mixture can form a shape without sticking to your hands. Cut cellophane into 8 by 8-inch squares. Place 2 tablespoons of mixture in a tube shape and roll into cellophane, twisting the ends like a tootsie roll for a tight sausage shape. Test 1 sausage in boiling poaching liquid for approximately 20 minutes before cooking all sausages. Let cool in refrigerator for 15 minutes. Slice sausage to check consistency, if it falls apart, add more bread crumbs to mixture.

SHEPHERD'S PIE WITH NORTHERN ISLES LAMB SAUSAGE AND POTATO-HORSERADISH CRUST

Shepherd's pie is a signature dish in the pubs of England and Ireland, sometimes made with lamb, as here, and sometimes with beef, in which case it is called cottage pie. The idea is the same: a simple meat pie made with a mirepoix-onion, carrot, celery-under a top crust of mashed potatoes. There's no cheese in the mashed potatoes, but when the pie is baked, the crust is somehow enriched through the alchemy of cooking and tastes as though there were. Shepherd's pie is usually made with leftover cooked lamb. Swapping that for quick and easy homemade lamb sausage is my revisionism, to give the humble pie a fresh and lively taste. Also, to gussy it up, I use tiny pearl onions so the onion element has a more defined presence in the pie. The horseradish is also my whim, to give the dish an acrid lilt that helps lift it above what might otherwise be humdrum fare. Fresh horseradish root is often available in produce stores and supermarkets around Passover for Jewish customers; wasabi root, though not exactly the same botanically, is similar and it is available around the New Year for Japanese customers. Like fresh ginger, horseradish root can be stored in the refrigerator almost indefinitely, as long as it is kept dry.

Shepherd's Pie with Northern Isles Lamb Sausage and Potato-Horseradish Crust image

Steps:

  • To make the crust, peel the potatoes and cut them into 1 1/2-inch chunks. Place them in a pot, add water to cover generously and a large pinch of salt, cover, and bring to a boil over high heat. Boil briskly until the potatoes are a bit beyond fork-tender, almost collapsing, about 10 minutes. Drain in a colander and, while the potatoes are still moist, return them to the pot. Let cool briefly until no longer steaming. Add the milk, butter, and horseradish and mash with a potato masher or sturdy wire whisk until no longer chunky, almost creamy. Whisk in 1 teaspoon salt and the pepper, taste, and adjust the seasoning with more salt and pepper if desired. Set aside in a warm place.
  • Preheat the oven to 400°F.
  • To make the filling, melt the butter in a large sauté pan over medium heat. Add the pearl onions, carrots, and celery, stir to mix, and cook, stirring occasionally, until the vegetables are slightly softened, about 5 minutes. Add the lamb sausage and continue cooking, stirring to break up the clumps, until no longer pink, 3 to 4 minutes. Add the thyme, tomato paste, Worcestershire, salt, pepper, and water and stir to mix. Bring to a boil over medium heat and cook until slightly thickened, about 3 minutes.
  • To assemble the pie, transfer the filling to a 2-quart baking dish, preferably one that can segue from oven to table for ease of serving. Spread the mashed potatoes across the top and, with a fork or spoon, lift them into decorative peaks here and there.
  • Bake until the top is golden around the edges and across the peaks, 30 to 35 minutes. Serve hot, directly from the baking dish.

SHEPHERD'S PIE

Shepherds are in the business of herding sheep, which makes lamb the most obvious choice for this pie, but ground beef is a tasty addition. The combination of ground lamb and ground beef is earthy and robust, and keeps lamb's gaminess in check. Ground lamb tends to be fatty, so this recipe uses lean ground beef to compensate. If you prefer all beef, be sure to use something with a little more fat. And if you prefer all lamb, you may want to skim off some of the extra fat after browning the meat.

Steps:

  • In a large pot, bring a gallon of water and 2 tablespoons salt to a boil over high heat. Add potatoes to boiling water and boil for about 15 to 20 minutes, until soft; a knife should go in with almost no resistance.
  • In a small saucepan or a microwave oven, heat 6 tablespoons of the butter and milk together until butter melts. Drain potatoes well and return to pot. Using a masher or a ricer, mash hot potatoes until smooth. Mix in the hot butter mixture, just until blended. Stir in the Cheddar. Season to taste with salt and pepper. Cover and set aside.
  • Heat the oven to 375 degrees. Melt the remaining 2 tablespoons of the butter in a large oven-safe skillet with high sides or an enameled cast-iron braiser (at least 2 1/2-quart capacity) over medium heat. Add the onion, carrot, garlic, thyme and rosemary and cook, stirring often with a wooden spoon, until the onions are translucent and the carrots are just tender, about 10 minutes. Add the beef and the lamb and cook, breaking the meat up with a spoon, until it is no longer pink. (At this point, you can drain off some of the excess fat if you like.) Season the mixture to taste with salt and pepper.
  • Add the tomato paste and stir, cooking until it is well combined, another 2 to 3 minutes. Sprinkle the flour over the mixture and cook for 1 minute. Add the beef stock and cook, stirring, until the liquid has thickened slightly. Stir in the parsley and remove the thyme and rosemary stems. Season to taste with salt and pepper.
  • Top the meat mixture with dollops of the mashed potatoes then spread them out over the top. (Or transfer the meat mixture to a 3-quart casserole dish and spread into an even layer, and top with potatoes.) Transfer to the oven and, if the mixture is at the top edges of your pan, set a foil-lined baking sheet underneath the pan to catch any drips. Bake the pie until the potatoes have begun to brown and the edges are bubbling, about 30 minutes. Let stand at room temperature for 15 minutes before serving.

  • Heat the olive oil (2 tsp) in a heavy-based pot over medium-low heat. Add roughly chopped brown onion (1 medium) and fry for 3 minutes or until the onion starts to soften.
  • Increase the heat to medium-high, then add lamb mince (500g/1.1lbs) and continue to fry until lamb mince is well browned and most of the moisture has evaporated and there is some nice brown colour in the base of the pot (see my notes).
  • Add roughly chopped bacon (2 rashers) and sliced button mushrooms (250g/9oz) to the lamb mixture in the pot and continue to fry for 2-3 minutes, until the mushrooms start to soften. Then add crushed garlic (3 cloves) and finely chopped fresh rosemary (1 tbsp) and fry for another minute.
