LEEK, HAZELNUT AND CHEESE CRUMBLE

An easy-to-prepare savoury side-dish with hazelnut and cheese topping, adapted from a recipe from The Vegetarian Society and found on the UKTVFOOD. I suggest using my Vegetable Stock 135453 in this dish. The stock recipe enables you to make productive use of all your otherwise wasted vegetable peelings and make a really flavoursome stock at the same time. The original Leek and Cheese Crumble recipe mentions peeling the hazelnuts. There are full instructions on how to do this in the Zaar Kitchen Dictionary, which I've included an excerpt from in the NOTES below. For a non-vegetarian version, add chopped bacon.

Leek, Hazelnut and Cheese Crumble image

Steps:

  • Preheat the oven to 200°C/390°F/gas 6.
  • Slice the leeks into thick circles (no larger than 2cm) and place them in a large pan with the onion, garlic, peas, vegetable stock, white wine, cream and mustard. Cook gently for 15 minutes or until the leeks begin to soften.
  • Transfer the leeks mixture to an ovenproof baking dish, reserving 1/2 cup of stock.
  • Place the breadcrumbs, nuts, parsley and thyme in a food processor and process until they are finely chopped and well-combined.
  • Scatter the crumble and cheese over the leeks and drizzle the remaining stock mixture over the top. Bake for 10 to 15 minutes until the topping is starting to turn crisp and golden. If necessary finish the dish under the grill.
  • NOTES: (from the Zaar Kitchen Dictionary) To toast: slow roast in 275°F (about 135°C) oven. Spread shelled nuts in a shallow baking pan and roast for 20-30 minutes, until the skin cracks and the meat turns light golden. To remove the skins, pour hot nuts in the center of a rough kitchen terry towel. Pull the towel up around the nuts and twist tightly. Let stand to steam for about five minutes then rub the warm nuts in the towel until most of the skins are removed.

1 onion, chopped
3 garlic cloves, chopped
1 cup green peas, frozen peas are fine
400 ml vegetable stock
1/4 cup white wine
100 ml single cream, low-fat is fine
1 tablespoon coarse grain mustard
150 g white breadcrumbs
40 g hazelnuts, skinned
2 tablespoons parsley, roughly chopped
1 teaspoon thyme
150 g cheddar cheese, finely grated

Steps:

  • Heat oven to 200C/180C fan/gas 6. Roll out the pastry and use to line a 23cm loose-bottomed tart tin. Prick the base with a fork, and line with baking parchment and baking beans. Bake blind for 12 mins, then remove the beans and parchment. Return to the oven for a further 5 mins until pale golden. Reduce oven to 180C/160C fan/gas 4.
  • Meanwhile, make the filling. Melt the butter in a large pan and, when foaming, add the leeks, cover and cook on a low heat for 20 mins until soft. Leave to cool.
  • Beat together the eggs, cream, milk, mustard, Caerphilly and some seasoning. Evenly cover the base of the pastry case with the leeks, then pour in the egg mixture. Bake for 25 mins.
  • To make the topping, combine all the ingredients. Remove the tart from the oven and sprinkle the topping evenly over. Return to the oven and bake for a further 15 mins until golden brown.

Ok, so this sounds disgusting but it is awesome! My mum came up with the idea when we were little and I have perfected it - well sort of. I make this differently every time and my weights are approximate so I hope it works out all right!

Beef and Cheese Crumble image

Steps:

  • Brown the beef.
  • Add the tinned tomatoes.
  • Add the oxo cubes - crumble them evenly over the top and then mix inches.
  • Add the remaining ingredients.
  • Hint: At this stage you can also add any other flavourings/herbs/spices/vegetables you like, this is a very flexible recipe!
  • At this stage the beef should be quite liquidy. Don't take any out but turn the heat down and let it reduce naturally. Keep an eye on it so it doesn't become too dry. The ideal end product should look fairly dry but easily yield liquid when a spoon is pressed onto the mixture. This can take anything from 10-30 minutes, depending on what is added!
  • While the mixture is reducing make the crumble.
  • Put all of the crumble topping except for the cheese for sprinkling into a bowl and mix them so they look like chunky breadcrumbs.
  • Put the beef mixture into an ovenproof dish.
  • Pour the crumble mixture on top of the beef.
  • Put in a 180C oven for 20 minutes.
  • After the 20 minutes add the grated cheese to the top, put the crumble back in the oven for another 10-15 minutes (until the cheese is melted/brown/crispy according to taste).

Lemon Cheesecake with Hazelnut Crust image

Steps:

  • Make crust:
  • Position rack in center of oven and preheat to 350°F. Finely grind nuts, cracker crumbs and powdered sugar in processor.Add butter; blend using on/off turns until crumbs are moist. Press crumbs onto bottom and 1/2 inch up sides of 9-inch-diameter springform pan with 2 3/4-inch-high sides. Chill while making filling.
  • Make filling:
  • Using electric mixer, beat cream cheese in large bowl until fluffy. Slowly add sugar; beat until smooth. Add eggs 1 at a time, beating 30 seconds after each. Mix in lemon juice and peel.
  • Pour filling into crust. Bake cake until outer 2-inch portion of top is set and center looks slightly glossy and is barely set, about 45 minutes. Transfer to rack cool to room temperature. Cover; chill overnight.
  • Run knife around sides of pan to loosen. Release pan sides. Place cake on plate. Top with lemon and mint, if desired.

Vegan 'cheesy' leek crumble image

Steps:

  • The night before, soak the cashew nuts in water and leave overnight.
  • To make the crumble, tip the oats and flour into a bowl, make a well in the centre and pour in the coconut oil. Draw the dry ingredients in until everything is well coated and resembles chunky breadcrumbs. Tip the mixture onto a baking sheet and put in the fridge to firm up - this will make your topping extra crunchy.
  • Heat oven to 200C/180C fan/gas 6. Steam the carrots and potatoes together for 5 mins until softened, then transfer to a food processor. Drain the cashews and add them too, along with 2 tbsp oil and the rest of the sauce ingredients except for the leeks. Blitz the mixture, season and set aside.
  • Heat the remaining oil in a large frying pan over a medium heat. Add the leeks and a large pinch of salt, then fry for 15 mins until softened. Spoon in the cheese sauce - if it is very thick, add 200ml vegan vegetable stock. Transfer the mix to an ovenproof dish, top with the crumble and bake for 30 mins until piping hot. For a crispy topping, put under the grill to finish. Can be assembled in advance and kept in the fridge to cook when needed.
