I like this avocado cream sauce over really smoky grilled chicken and some pasta... It's a really basic easy sauce you can play with based on your own preferences.

Steps:
- Combine avocados, garlic, lime juice, green onions, cilantro, and tarragon in a food processor; puree until smooth.
- Melt butter in a saucepan over low heat. Stir in avocado puree and cook over low heat, stirring occasionally, until heated through, about 5 minutes. Add cream and cook until heated through, but not boiling. Season with salt.

My wife wanted something fresh with a California home taste over some Hoki that she just purchased for dinner. So I made this to be light and all natural with a California zing. Just don't overcook it or the avocado will separate.

Steps:
- In a small sauce pan combine all ingredients without the lemon juice and stir to an even (unlumpy) consistency over low heat.
- Once the consistency is achieved, remove from heat and add the lemon juice to taste.
- This sauce goes great over any white meat or fish.

- Halve avocados lengthwise. Twist halves to separate them, and remove pits. Run a large spoon between the flesh and skin, scooping out the flesh in one piece; discard skins. Slice into wedges, and place avocados on a serving platter. Drizzle with oil and lemon juice. Season with salt and pepper. Serve at room temperature.
LEMON BUTTER SAUCE

- In a small mixing bowl, combine the shallots, wine and lemon juice. Set aside within reach of stove.
- In a medium saute pan over low heat, melt 4 tablespoons butter. Add flour, and stir vigorously with a whisk until well combined. Raise heat to medium-high, and continue to stir until flour is nut-brown but not burned, about 5 minutes. Add wine mixture, and whisk until smooth and thickened, about 1 minute. Reduce heat to medium-low. Simmer until reduced to about 1/4 cup, about 2 minutes.
- Remove pan from heat, and gradually whisk in chilled sliced butter, stirring constantly to keep fat from separating. Add salt and pepper. Keep warm, but do not boil. Add garlic and parsley just before serving. Serve hot over grilled or broiled trout.

- To make the sauce, warm the lemon juice in a small saucepan. Add the butter, a few cubes at a time, swirling them into the lemon juice over a very low heat to melt them, adding a few more pieces until all the butter is used. Take the sauce off the heat, season to taste and keep warm.
- To make the salad, gently toss the rocket, avocado and lobster meat together. Dress with the lemon juice and olive oil, and toss again until everything is mixed and coated.
- To serve, stir the herbs through the sauce and pour into a ramekin or small bowl. Put the sauce on a plate and pile the large chunks of lobster meat on one side and the salad on the other. Bring the plate to the table to share - dip the tail meat, claws and crusty bread into the sauce.
