LEMON CHICKEN BREASTS

Tonight, try Ina Garten's surprisingly easy Lemon Chicken Breasts, infused with the flavors of France's Provence region, from Barefoot Contessa on Food Network.

Lemon Chicken Breasts image

Steps:

  • Preheat the oven to 400 degrees F.
  • Warm the olive oil in a small saucepan over medium-low heat, add the garlic, and cook for just 1 minute but don't allow the garlic to turn brown. Off the heat, add the white wine, lemon zest, lemon juice, oregano, thyme, and 1 teaspoon salt and pour into a 9 by 12-inch baking dish.
  • Pat the chicken breasts dry and place them skin side up over the sauce. Brush the chicken breasts with olive oil and sprinkle them liberally with salt and pepper. Cut the lemon in 8 wedges and tuck it among the pieces of chicken.
  • Bake for 30 to 40 minutes, depending on the size of the chicken breasts, until the chicken is done and the skin is lightly browned. If the chicken isn't browned enough, put it under the broiler for 2 minutes. Cover the pan tightly with aluminum foil and allow to rest for 10 minutes. Sprinkle with salt and serve hot with the pan juices.

1 tablespoon grated lemon zest (2 lemons)
2 tablespoons freshly squeezed lemon juice
1 1/2 teaspoons dried oregano

Steps:

  • Cook spaghetti according to package directions. Set aside.
  • Combine all ingredients in a large bowl. Toss and stir to combine.
  • To serve immediately:.
  • Spray a 9x13-inch dish with cooking spray. Pour chicken/pasta mixture into dish. Cover with foil and bake at 350°F for 45 minutes or until heated through.
  • To freeze:.
  • Place mixture in a large zipper freezer bag. Seal and freeze.
  • To serve:.
  • Thaw in fridge. Proceed with cooking directions as above.

Steps:

  • Mix all of the spices and lemon juice in a 1-gallon bag, add chicken pieces, and freeze.
  • To prepare, thaw bag of chicken, preheat oven to 450 degrees. Arrange chicken skin-side down in an 8x8x2-inch bakind dish treated with nonstick spray. Pour liquid over chicken.
  • Bake for 20 minutes. Turn chicken over and baste. Bake for an additional 15 to 20 minutes.
  • Prepare rice according to package directions.
  • Serve chicken over rice.

This quick and easy recipe is perfect for OMAC users. I found this recipe in one of my favorite cookbooks from Vancouver author/chef/and fireman, David Veljacic. There is a nice balance of flavors between the lemon juice, olive oil and brown sugar. This recipe reminds me of a long lost recipe my DM used to make....so it does bring back childhood memories of days gone by! This is a family favorite.....I hope it becomes one of your!!!

Lemon Marinade for Chicken (Omac) image

Steps:

  • Combine the lemon juice, olive oil, brown sugar, oregano, black pepper and garlic powder.
  • Add the meat and let marinate for several hours.
  • To freeze: Place in a large freezer bag, removing any air. Lay the chicken flat and place on a cookie sheet flat in the freezer. (by using this method of freezing, you can stack each package neatly).
  • To thaw; place the chicken in the fridge overnight ~ or ~ for a quick thaw, place the chicken in the sink, using tempid water and let thaw for about 25 - 30 minutes. Once thawed, either use immediately or put back in the fridge until ready to use.

Easy Creamy Lemon Chicken image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt butter in a large skillet over medium-high heat. Cook chicken until lightly browned on both sides, 5 to 7 minutes. Place in a baking dish.
  • Stir lemon juice and zest into the leftover butter in the pan, and cook over medium-low heat, stirring, for 3 to 4 minutes. Stir in half-and-half slowly. Stir in 1/4 cup Parmesan cheese until sauce is smooth. Pour sauce over chicken.

Steps:

  • Cut the chicken breasts in half lengthwise. Lightly beat with a meat mallet until even in thickness.
  • In a bowl, whisk together the ingredients for the egg mixture. In another bowl, combine the ingredients for the parmesan mixture. Dip chicken into the egg mixture, then dredge chicken in the parmesan mixture. Allow any excess ingredients to fall off from each bowl.
  • In a large skillet, heat enough oil to cover the bottom of a skillet. Once hot, add the chicken and cook 4-5 minutes per side, or until crispy, golden and cooked through to 165˚F on an Instant Read Thermometer. Reduce the heat if chicken browns too quickly.
  • Meanwhile, in a separate saucepan, melt butter and garlic, cook until fragrant. Add the chicken broth, lemon juice and pepper. Allow the sauce to cook for about 2 minutes. Pour the sauce over the cooked chicken, turning to coat. Garnish with lemon slices and finely chopped parsley if desired.
