FRESH CRAB AND PEA RISOTTO

- Heat the stock in a medium saucepan and keep it simmering over low heat.
- In a medium (10 to 11-inch) pot or Dutch oven, such as Le Creuset, heat the butter and olive oil over medium heat. Add the shallots, fennel, and poblano pepper and cook for 5 minutes, stirring occasionally. Stir in the garlic, thyme, saffron, and red pepper flakes and cook for 2 minutes. Add the rice and stir to coat all the grains with butter and oil. Add the wine and cook over medium-low heat, stirring constantly, for 5 minutes, until almost all the liquid has been absorbed. Add 1/2 cup of the simmering stock to the rice and cook, stirring frequently (see Cook's Note). When the stock is almost completely absorbed, continue adding stock, 1/2 cup at a time, simmering the risotto until the stock is absorbed each time before adding more stock. Cook until the rice is al dente; it should take between 25 and 30 minutes.
- When the rice is done, stir in the creme fraiche, 2 teaspoons salt, and 1 teaspoon black pepper. Fold in the crabmeat and peas and cook over low heat for 2 minutes, until the crabmeat is warmed through. Add just enough simmering stock to make the risotto moist and creamy. Serve hot in large, shallow bowls and sprinkle with chives and lemon zest.
LEMON RISOTTO

Add 1 1/2 cups hot broth; simmer until absorbed, stirring frequently. Add remaining broth 1/2 cup at a time, allowing broth to be absorbed before adding more and stirring frequently until rice is creamy and tender, about 35 minutes. Stir in cheese and remaining 2 tablespoons butter. Stir in parsley, lemon juice, and lemon peel. Season risotto with salt and pepper. Transfer to bowl and serve.
RISOTTO WITH GARLIC, HERBS AND LEMON

- Put the stock in a saucepan and bring to a simmer.
- Heat the olive oil in another heavy saucepan. Add the onion and garlic and cook slowly until they soften but do not color. Stir in the rice and cook a minute or too longer. Stir in the lemon zest.
- Add the wine, bring to a simmer, and cook until the wine has evaporated. Then, over a medium to medium-low heat, begin to add the stock, about one-half cup at a time, stirring slowly but constantly. As each portion of the stock is absorbed by the rice, add some more, cooking until the rice is al dente and moist, which should be approximately 15 to 20 minutes.
- Stir in the herbs and season to taste with salt and pepper. Spoon into individual soup plates and serve at once. Pass the Parmesan cheese on the side.

LEMON RISOTTO

- In a large pot, heat the stock and 2 cups water over medium low heat.
- In a risotto pot or large skillet with a rounded bottom, heat the extra-virgin olive oil over medium to medium-high heat. Add the onions and garlic to pan and saute to soften 3 to 4 minutes Stir in the rice and add the zest of 1 lemon. Heat the rice for 1 to 2 minutes, then add the wine and cook until evaporated. Add in the hot stock, a few ladles at a time, and stir for a minute with each addition, to develop the starch and the creamy aspect. Total cooking time will be about 18 minutes or so. Keep adding stock each time the pan starts to become dry at the edges. While the rice cooks, peel and supreme or section the flesh of a lemon and finely chop. Sprinkle with a 1/2 teaspoon sugar. When rice is cooked to al dente, stir in the butter, lemon sections, juice of 1 lemon, the cheese and herbs. Season with salt and pepper, to taste, and transfer to a serving bowl. Serve immediately.
LEMON RISOTTO
Lemony, but not over-powering. In my opinion, the perfect accompaniment to simply-prepared grilled fish, especially salmon.

- Melt 1 1/2 TBS butter with the olive oil in a large heavy sauce pan over medium heat.
- Add shallots to this and saute until tender, (3-5 minutes).
- Add rice and stir for 1 minute.
- Add wine and stir until evaporated, about 30 seconds.
- Add 1 1/2 cups hot broth, and simmer until absorbed, stirring frequently to prevent sticking.
- Ladle in the remaining broth, 1/2 cup at a time, allowing broth to be absorbed before adding more, and stirring frequently until rice is creamy and tender.
- You will use all the broth, and the key is to do this simmering slowly; it will take about 35-40 minutes.
- When all the broth has been absorbed, stir in the cheese and remaining 2 TBS butter.
- Stir in the parsley, lemon juice, and zest.
- Season to taste with salt and pepper, and serve.

GARLIC CRAB
This is a simi difficult recipe, but the result is ever so delectable. I had something like this at Crustaceans in San Francisco. They used the wonderful Dungeness crabs, but here in Virginia I had to settle for Blue crabs, which turned out just as nice.

Steps:
- Place garlic, onions, butter, salt, red and black pepper into a roasting pan and put into a 450 degree oven.
- Be sure to watch carefully and cook until onions and garlic turn golden brown.
- Remove from oven, add crab and blend thoroughly.
- Make sure the crab (shells and all) is coated.
- Place pan back into oven on 475 degree for 15-20 minutes, turning crab about every 5 minutes.
- After the crab has been heated throughout remove from oven.
- Garlic sauce should be braised onto the shell of the crab.
- Serve as soon as possible, sprinkled with parsley and garnished with lemon.
CRAB & PRESERVED LEMON RISOTTO

- Pick meat from crabs and set aside.
- Heat stock in a saucepan until simmering, then maintain at this heat.
- Heat olive oil in a large pan and fry onion over medium heat until soft but not coloured.
- Add the rice and stir over a high heat until grains are well coated in oil and warmed through. Add white wine and stir until most of the liquid has been absorbed. Reduce heat to medium, add stock, a ladleful at a time, stirring constantly and allowing each ladleful to be absorbed before adding the next.
- Continue until rice is tender, with a slight bite, and has a creamy consistency (about 20 minutes).
- Add a final ladle or 2 of stock, preserved lemon, crabmeat, butter, parmesan (if using), salt (remembering that the butter, crab and preserved lemon are all salty) and pepper and beat vigorously with a wooden spoon until all the butter is incorporated and the crab has broken up into thin wisps. The finished risotto should be quite soupy, the Venetians call it all'onde (wave-like).
- Taste, add extra salt if needed, stir through chives and serve immediately.
- Notes: You can use other types of crabs for this recipe, or 300g fresh crabmeat if you don't want to pick your own. Vialone nano is the preferred rice in the Veneto, where this soupy style of risotto is most popular, use arborio or carnaroli rice if it isn't available.

GARLIC ROASTED CRAB
Crustacean restaurants in CA are famous for their garlicky roasted crab, which is a highly guarded secret recipe. This recipe is a great substitute. I especially like to make it on a cold day, and it ranks high on my all-time favorite recipes list.

- Preheat oven to 500*.
- In a very large oven-proof bowl, place butter and olive oil.
- Put in oven to melt butter and heat bowl (the bowl needs to be hot when you add the crab).
- Break crab legs apart from body, and break body into 2 sections per crab, but do not remove meat from shell.
- Stir crab into hot butter and olive oil mixture; sprinkle in minced garlic and salt and pepper to taste.
- Toss everything together well.
- Bake for 6 minutes and toss well again.
- Bake another 6 minutes, until crab is heated through and garlic is light brown.
- Remove from oven and top with lemon juice and parsley; toss again.
- Serve from hot bowl with lots of napkins and artisanal French or sourdough bread (such as La Brea Bakery's) to soak up the delicious juices.
LEMON SEAFOOD RISOTTO

- Heat olive oil in a large, heavy-bottomed saucepan over medium-low heat. Cook the leek and garlic until soft, about 5 minutes. Stir in the rice, and cook for 5 minutes more, stirring frequently.
- Pour in 1 1/2 cups of the chicken broth, and bring to a boil over high heat, stirring occasionally. Reduce heat to medium-low, and simmer, uncovered for 5 minutes, continuing to stir. - Place crabmeat in a medium bowl; pick through for any shells and discard. Add garlic and toss very well. Refrigerate, for at least 20 minutes.
- In a large saucepan, bring broth to a boil; reduce to simmer. Add lemon juice and keep warm on back burner.
- In a large, heavy-bottomed saucepan over medium heat, add 1 tablespoon olive oil.
- When just smoking, add shallots and stir quickly with a wooden spoon until lightly golden and tender.
- Add rice and stir 1 minute to coat.
- Add 1/2 cup hot broth, stirring constantly.
- Continue cooking until almost all liquid is absorbed, and then add another 1/2 cup of broth.
- Repeat until rice is tender and almost all broth has been used, 25-30 minutes.
- Remove from heat and add crab; stir until blended.
- Add 1/4 cup broth, remaining tablespoon olive oil. lemon zest, thyme and toasted almond slivers; stir to combine.
- Season with salt and pepper.
- Serve with a nice salad of sliced tomatoes with a nice vinagrette, and white wine.
