LIME, APRICOT, AND SOY-SAUCE CHICKEN WINGS

Lime, Apricot, and Soy-Sauce Chicken Wings image

Steps:

  • Preheat oven to 425°F. Cut off wing tips, reserving for another use, and halve wings at joint. Divide wings between 2 large roasting pans, arranging in single layers.
  • Purée remaining ingredients in a blender and pour mixture over wings, dividing evenly between pans. Bake wings in upper and lower thirds of oven 50 minutes. Turn wings over and switch position of pans in oven, then bake 45 minutes to 1 hour more, or until liquid is thick and sticky.
  • Serve wings warm or at room temperature.

1 cup fresh lime juice (from 8 to 10 limes)
1 cup apricot preserves
1 cup soy sauce
2/3 cup sugar
4 large garlic cloves

The lime is a refreshing change - with a garlic kick! From Gourmet magazine December 1999. I have made this many times and had great response to it. People who don't like the Buffalo wings enjoy these, and the spice loving wing fans just ask for more!

Steps:

  • NOTE: these are sort of sticky and messy to make; disposable roasting pans work great
  • Preheat oven to 425 degrees Divide the wings among the two pans, arranging in a single layer.
  • Puree the remaining ingredients in a blender and pour half over each pan of wings.
  • Bake wings in upper and lower thirds of the oven for 50 minutes.
  • Turn the wings and switch positions of the pans in the oven, then bake 45 minutes more, until liquid is thick and sticky.

Steps:

  • mix ingredients. Taste and adjust. blend if too chunky. toss wings in sauce. Let marinate a couple of hours if you have time. Cover the pan and bake in 400F oven for half hour. Uncover pan pour off excess juice and bake another 20 minutes or until done.

Broiled Chicken Wings with Spicy Apricot Sauce image

Steps:

  • Preheat broiler. Line bottom of a broiler pan with foil, then oil rack of pan.
  • Toss wings with oil, black pepper, and 2 teaspoons salt in a large bowl, then spread in 1 layer on rack of broiler pan. Broil 4 to 5 inches from heat, turning over once, until barely cooked through, 20 to 25 minutes.
  • While wings are broiling, blend preserves, lime juice, garlic, cumin, cayenne, and remaining 1/4 teaspoon salt in a food processor or blender until smooth. Transfer to a small heavy saucepan and bring to a boil over moderate heat, stirring, then reduce heat and simmer, stirring occasionally, 1 minute.
  • Brush 1/4 cup sauce on cooked wings and broil 2 to 3 minutes. Brush wings with 1/4 cup sauce again, then turn wings over and brush with another 1/4 cup sauce. Broil until more deeply browned, 2 to 3 minutes. Brush with remaining sauce before serving.

Apricot Glazed Grilled Chicken Wings image

Steps:

  • 1. Season wings with salt. Heat grill to medium high.
  • 2. In the bowl of a food processor (small if available), combine preserves, garlic, ginger, soy sauce, red pepper flakes, lime juice, vinegar, and cumin process until smooth. Add chives.
  • 3. Place wings on the grill and cook for 8-10 minutes. Turn, and grill for another 5-6 minutes. With a pastry brush or spoon, brush the sauce on the wings. Cook for about 1 minute, and turn. Repeat on other side of wings. Cook for another 1 minute. Wings should register 170º F when tested with an instant read thermometer.
  • 4. Serve the wings garnished with lime wedges. Serves 4.

Honey-Lime Chicken Wings image

Steps:

  • Combine lime zest, lime juice, honey, garlic, soy sauce, and Tabasco sauce in a large bowl. Add chicken wings and toss to combine. Cover with plastic wrap and refrigerate, stirring occasionally, for at least 3 and up to 8 hours.
  • Preheat oven to 450 degrees. Line 2 baking sheets with aluminum foil, then with racks. Remove wings from the marinade and place on racks, reserving marinade. Brush wings with marinade and sprinkle with salt. Roast 15 minutes. Remove from oven. Baste with reserved marinade. Turn wings over, and baste the second side. Return to oven, and roast until cooked through, 20 to 25 minutes more.
