BROILED CATFISH WITH LIME-CILANTRO BUTTER ON A BED OF SPAGHETTI
Sounds fussy but it's actually a quick and easy after work dinner for two people. I've only done this with the catfish but I imagine any other firm-fleshed fish would work as well. I found this in the Chicago Tribune 'Dinner Tonight' column.

Steps:
- Cook pasta according to package directions.
- While it is cooking, combine butter, minced cilantro, lime zest and juice, salt and pepper to taste in a small bowl.
- Heat broiler to high; place catfish in roasting pan; brush half of the butter-cilantro mixture over catfish.
- Broil until fish is browned, flaky and cooked through, about 6 minutes; set aside and keep warm.
- Drain pasta, reserving 1/2 cup cooking liquid; toss pasta with remaining butter-cilantro mixture, reserved liquid and 1 tablespoon of the pecans.
- Arrange pasta on a platter; top with fish, garnish with remaining nuts and cilantro sprigs.
- *Totoast pecans: place in a dry skillet over medium-low heat; cook, stirring occasionally, until golden brown, 1-2 minutes- watch carefully to avoid burning.

- Mix the oil, parsley, lemon juice, garlic, wine, and pepper in a nonmetallic bowl.
- Put the catfish into the marinade and refrigerate for at least two hours.
- Preheat the broiler and brush the hot rack with the marinade.
- Broil close to the heat for approximately 5 minutes until the fish flakes with a fork.

- Spray shallow baking pan with nonstick cooking spray. Beat egg in shallow dish or pie pan until foamy. Add milk; mix well. In another shallow dish, combine cornmeal, lemon peel, salt, thyme and pepper; mix well.
- Dip catfish fillets in egg mixture; dip in cornmeal mixture to coat. Arrange fish in sprayed pan.
- Broil 4 to 6 inches from heat for 8 to 10 minutes or until fish flakes easily with fork, turning once. Serve tartar sauce with fish.

Mom got this recipe for daddy from a local dietician. I never thought he would go for this dish, but he loves it and so do I. The hint of sour lime along with the sweetness of the peach salsa make a great combination.

- In a saucepan over medium heat melt margarine.
- Stir in lime juice, salt, pepper, and garlic powder; mix well.
- Remove from the heat and set aside.
- Place fillets in an ungreased shallow baking dish,
- Generously brush each fillet with the lime butter sauce.
- Broil for 5-8 minutes or until the fish flakes easily with a fork.
- Remove to a warm serving dish spoon pan juices over each fillet.

- Prepare a grill or preheat the broiler.
- Mix olive oil, lime juice, wine, mustard, chili powder, pepper, cilantro and salt in a medium bowl.
- Transfer half of the marinade mixture to another bowl and reserve for basting catfish.
- Add catfish to the first bowl; marinate for 15 minutes.
- Drain fillets and discard marinade.

- Position a rack 5 inches below the heating element of an oven and preheat the broiler to high.
- Rinse the fish fillets under cold running water and pat them dry. Brush both sides with oil and arrange them in a single layer on a broiler pan lined with aluminum foil.
- Mix together the seasoned pepper, garlic powder, and seasoned salt in a small bowl. Sprinkle half of the spice mixture over one side of the fish.
