Steps:
- Bake 4 cups curly fries as the label directs. Meanwhile, make the cheese sauce: Melt 1 stick butter in a saucepan over medium-high heat. Sprinkle in 1/4 cup flour and whisk until smooth, 2 minutes. Gradually whisk in 1 cup milk and a pinch of nutmeg; whisk until smooth, 3 minutes. Add 8 ounces cubed Velveeta cheese and whisk until melted, about 5 minutes. Whisk in 1/4 cup lager beer or chicken broth, 1 teaspoon hot sauce and 1/2 teaspoon kosher salt. Add the fries and toss.
SUNNY'S EASY BACON, PEPPERS AND CHEESE HOME FRIES
Steps:
- Leave the potatoes in the bag and cook them in the microwave for 2 minutes less than the package instructions so they aren't too soft (they will cook in the pan, plus, you'll need to break them down further). Remove from the bag and let cool until cool enough to handle, then cut the larger potatoes into sixths and the smaller ones into fourths.
- In a mid-sized pan on the stovetop or on a grill on medium heat, add the bacon and cook until crispy. Remove the bacon from the pan with a slotted spoon, leaving the bacon fat in the pan. Roughly chop the bacon and set aside. Add the butter to the bacon fat. Once it has melted, add the potatoes in one layer if possible. (If not, do the potatoes in batches.) Cook the potatoes on one side until a peek beneath reveals a golden crust, 10 to 15 minutes, then toss and repeat. Do this a few times; if doing in batches, you can pile the cooked potatoes on the side of the pan while the new ones get attention. Once the potatoes are almost done, push them all to the sides of the pan.
- To the center of the pan add the peppers, onions, steak seasoning, a pinch of salt and a few grinds of black pepper. Cook the veggies, stirring, until the peppers and onions are tender but still have some crunch, about 5 minutes. Add the bacon back to the pan and toss everything together. Season with salt and pepper. Remove from the heat and stir in the cheese. Transfer to a serving bowl and garnish with the scallions.
QUICK & CRISPY HOME FRIES
In order to get a crispy crust like the fries at your local diner you need to precook and cool them. When you pan fry a cold starch, it gets a beautifully crispy surface.

Steps:
- Arrange potato pieces evenly on a microwave-safe plate. Microwave on high until just tender, about 4 minutes. Let cool to room temperature. Cut potatoes into bite-size chunks.
- Heat butter and olive oil in a non-stick skillet over medium-high heat. When butter melts and starts to turn brown, swirl the pan and add the potatoes. Shake pan to arrange in an even layer. Season with salt, pepper, paprika, garlic powder, and onion powder.
- As potatoes brown, toss them and keep turning them every few minutes until they are crusty and crispy-edged and a rich reddish-brown color, 10 to 12 minutes. If potatoes seem to be cooking too quickly, reduce heat to medium. Serve topped with chopped chives.

- When cool enough to handle, quarter potatoes and then cut into about 1 inch pieces (we leave the skins on).

LINDA'S AWESOME HOME FRIES
I was looking for a little added flavor in my home fries this morning and created this luscious recipe. They were AWESOME! I splurged and had them with fried eggs and toast for a DELICIOUS weekend breakfast. GREAT flavor and just a little spiciness from the seasoning. They are REALLY good! I cooked these on med-high, and from the starting of peeling the onion to putting them on my plate was 45 mins., so if you cook them on high it is going to take less time, and if you cook them on med. it's going to take longer. Med-high worked perfect for me, as it browned the home fries nicely and didn't scorch the onions! See my picture. If you have a lg. cast iron frying pan, I would suggest using it, as they make the "BEST" home fries :)

Steps:
- Put the potatoes in a medium saucepan and cover with cold water by about 2 inches. Season with salt. Bring to a boil, lower the heat, and simmer until just tender, about 6 minutes. Drain and set aside.
- Cook the bacon in a large cast iron skillet over medium heat until crisp, about 4 to 5 minutes. Transfer to a paper towel-lined plate. Pour all but 1 tablespoon of the bacon drippings into a small bowl and set aside. Add the onion and cook, stirring, until golden brown, about 8 minutes. Transfer to a bowl.
- Wipe out the skillet and return to medium-high heat. Heat the remaining bacon fat and 2 tablespoons vegetable oil in the skillet. Add the potatoes, season with salt and pepper to taste, and arrange in a single layer. Cook, without stirring, until well browned on 1 side, about 4 minutes. Using a spatula, turn the potatoes in small sections, and continue cooking, turning occasionally, about 6 minutes or until well browned. Stir in the onions, heat through, and sprinkle with the parsley and cayenne, if desired. Transfer to a warm platter and crumble the bacon on top, serve. Copyright 2005 Television Food Network, G.P. BASIC HOME FRIES
I just love home fries and this is a great basic recipe for a delicious breakfast! Yum! I love these with ketchup. Adapted from Mollie Katzen's Sunlight Cafe Cookbook. :)

Steps:
- If you like, scrub potatoes and cut into 1/2" cubes. Place in pan with water to cover and bring to a boil. Cook until just tender, then drain and set aside. You may prep in advance, store them in fresh water in a tightly covered container in the reefigerator. Drain and dry completely befroe using. You don't need to bring to room temperature. I sometimes skip this part and cut smaller and throw into pan.
- Place a 10" skillet or saute pan over medium heat on stovetop. After a few minutes, add 1 tbls. of the olive oil(or enough to cover the bottom of the pan, wait about 10 seconds, then swirl to coat pan. Turn the heat up to medium high and add half the potatoes, spreading them into a single layer in the hot oil. Let cook a few minutes, then turn down the heat to medium and let cook, without stirring for 5-8 minutes. Resist stirring.
- Sprinkle in about 1/8 teaspoon of the salt and turn the potatoes over, using a metal spatula. I check to make sure they are getting nice and brown and crispy on the underside before turning. If they are not, let cook a few more minutes. Spread into a single layer and cook without stirring for another 5-10 minutes, or until golden brown. Scrape from the bottom to loosen the potatoes, and toss them around in the pan. Cook for another minute or two, then move them to a bowl, scraping out and saving all the tasty brown tidbits from the bottom of the pan. Repeat this procedure with the remaining potatoes, using another tbls. or so of the oil and another 1/8 teaspoons salt.
- After cooking the potatoes, scrape out the pan and wipe with a damp paper towel.(I sometimes skip wiping out the pan if it is fairly clean). Return pan to heat and when hot, add remaining tbls. of oil. You can also melt in a little margarine or butter if you like. Wait 10 seconds, then swirl to coat bottom of pan.
- Add the onions and saute over medium heat for 5-10 minutes, or until it becomes very soft. Sprinkle in the remaining 1/4 teaspoons salt, along with herbs, bell peppers, and garlic. Continue to cook, stirring often, for another 5 minutes or so.
- Return the potatoes to the pan and stir them into the onion mixture. Saute over medium heat for another 5-10 minutes(more if needed), or until everything is done to your liking.
- Taste to adjust the salt, and grind in some fresh black pepper.
- Serve hot or warm, topped with your favorite toppiings. Enjoy!

SHORT-ORDER HOME FRIES
Those lovely potatoes you can get at the diner but can't seem to make at home. So why are they called _home fries_ anyway? This recipe from Cook's Illustrated promises to produce a plateful of spuds that a short order cook would envy.

Steps:
- Begin by precooking the potatoes. Arrange them in a microwave safe bowl, top with 1 tablespoon of butter and cover tightly with plastic wrap. Microwave on high until the edges of the potatoes begin to soften, 5-7 minutes, shaking the bowl (without removing plastic wrap) half-way through cooking.
- Meanwhile, melt 1 tablespoon butter in a large nonstick skillet over medium heat. Add the onion and cook until softened and golden brown, about 8 minutes. Transfer to a small bowl.
- In the same skillet, melt the remaining 2 tablespoons of butter over medium heat. Add the potatoes and pack them down with a spatula. Cook, without moving, until one side is brown, 5-7 minutes.
- Turn the potatoes, pack down again and continue to cook until well browned, another 5-7 minutes.
- Reduce heat to medium low and continue cooking the potatoes, stirring every few minutes, until crusty and brown, 9-12 minutes.
- Stir in the reserved onions, garlic salt and salt. Pepper to taste. Serve at once.
- NB - remember to turn down the heat for the last 9-12 minutes of cooking or the fries will burn.
- Cook's note - the best potatoes to use - medium starch or waxy varieties - Yukon Gold or Reds. High starch varieties such as russets and Idahos will break down leaving nothing but a greasy mash of spuds in your skillet.

CHEESE FRIES
