LOW-CARB TUNA AND MACKEREL CAKES
These are so delicious if you're doing a low-carb diet and just want something flavorful and a little crispy. These can be eaten as an appetizer or a main dish with some sauteed veggies and a salad. Serve with tartar sauce or any sauce that complements fish.

Steps:
- Mix mackerel, onion, tuna, Parmesan cheese, mayonnaise, eggs, Dijon mustard, seasoning blend, paprika, and basil together in a bowl. Add pork rind crumbs, 1 to 2 tablespoons at a time, until mixture holds together. Form mixture into balls and flatten into 1/2-inch-thick cakes.
- Heat a large non-stick skillet over medium-high heat and grease with cooking spray. Arrange cakes in the hot skillet and spray each cake with cooking spray.
- Cook cakes, working in batches if needed, in the hot skillet until browned, 3 to 5 minutes; gently flatten cakes with the back of a fork. Flip cakes and cook until other side is browned, 3 to 5 minutes. Transfer cakes to a paper towel-lined plate.

Tasty tuna cakes, with a subtle. spicy blend of cheese and mustard to keep things interesting. I needed to find a low-carb alternative to the tuna noodle casserole the rest of my family was having, so I came up with these. Mission accomplished!

Steps:
- Mix tuna with egg, mayonnaise, mustard,cheese, and 1/2 cup of the pork rinds in a large bowl, being sure to break up tuna into finer pieces. If mixture seems too dry, add a little more mayonnaise.
- Form patties with the mixture and press into reserved pork rinds on each side to coat.
- Fry in medium hot oil until golden, about 4-5 minutes per side.

- Drain tuna in a colander over a large bowl. Empty bowl and place tuna in it. Break tuna up into smaller bits. Add Cheddar cheese, Gluten-Free Bake Mix, page___, eggs, coconut flour and salt. Stir to combine well. Form patties and fry in nonstick frying pan in olive oil over medium heat. Fry until golden brown on one side, flip and cook the other side until golden brown as well. Serve on low-carb hamburger buns (choose a recipe from our previous Low-Carbing Among Friends Cookbooks or search my blog for a recipe if you do not have those books.) with mayonnaise, thin tomato slices and lettuce. - To a large mixing bowl, using an electric mixer, mix together tuna, pork rinds, shredded mozzarella, eggs, mayonnaise, and spices until thoroughly combined. Cover mixing bowl with lid or plastic wrap and transfer bowl to the refrigerator to chill for 1 hour.
- Remove mixing bowl from the refrigerator, add water, and, using hands, mix mixture to allow water to soak up. Using hands, form tuna mixture into a ball and, pressing down gently, flatten each ball into 1-inch-thick cakes.
- To a stainless steel pan over medium-low heat, add 1-2 tbsp avocado oil. To the pan of hot oil, place 2 tuna cakes in even layer and cook until browned, about 5-7 minutes per side. Transfer cooked cakes to paper towel-lined plate to de-grease. Continue the process until all cakes are cooked.
