Low-Fat Blueberry Tortilla Pizza (4 Points) image

Steps:

  • Preheat broiler. In a small bowl, combine ricotta cheese and confectioner's sugar; set aside.
  • In another small bowl, combine blueberries and strawberries. Arrange tortilla on a broiler pan; brush with butter and sprinkle with cinnamon sugar. Broil about 6 inches from heat source, until lightly browned, about 3 minutes. Cool slightly.
  • Spread ricotta mixture on the tortilla; top with blueberry mixture and then sprinkle with coconut.
  • Note: To toast coconut, place in a skillet over moderate heat until pale gold, stirring constantly.

Steps:

  • Spread rolls on a greased cookie sheet.
  • Bake until golden brown.
  • Mix cream cheese, mayonnaise and ranch dressing.
  • Spread on cooled crust.
  • Top with your favorite veggies and sprinkle with the cheese.

2 cans pillsbury refrigerated reduced-fat crescent rolls
2 (8 ounce) packages reduced-fat cream cheese (softened)
3/4 cup low-fat mayonnaise or 3/4 cup fat-free mayonnaise
1 package hidden valley ranch dressing mix
tomatoes or any other favorite vegetables
shredded fat free cheese

Low-fat Pizza With Turkey Sausage and Sweet Peppers image

Steps:

  • Heat oven to 425. Prepare your pizza crust in whatever way you prefer and prebake on a greased pan for 10 minutes.
  • While crust is baking, saute the turkey sausage links in skillet until done. Cool briefly and dice into chunks.
  • Spread pizza sauce over crust, top with sausage chunks, sliced pepper rings, mushrooms and mozzarella.
  • Bake for an additional 10-12 minutes or until cheese is melted and lightly browned.
