NUT AND FRUIT BREAD
This is another great holiday bread to make that belonged to my mother. She sometimes served this one, and it is a very old recipe. This bread is good the first day, but better the second. You may use dates instead of raisins if you wish.

Steps:
- Grease an 8 x 5 inch loaf tin thoroughly. Preheat oven to 350 degrees F (175 degrees C).
- In a small bowl, beat the egg well. Mix in milk and melted butter or shortening.
- Sift flour, baking powder, and salt together into a mixing bowl. Add sugar, nuts, raisins and orange rind; mix well. Blend egg mixture into fruit and nut mixture until flour is just moistened. Turn batter into greased loaf tin, and allow to stand for 20 minutes.
- Place pan in the center of the oven. Bake for 55 to 60 minutes. Turn bread out on wire rack, and cool for several hours before slicing.

BANANA NUT BREAD (HEALTHY, LOW FAT, LOW SUGAR)
This quickbread is naturally sweetened with bananas and applesauce. Nuts add healthy fats and great flavour. This is great for breakfast or as a snack bread. I hope youll enjoy it as much as we do! :)

Steps:
- In a big bowl combine flour, baking powder, sugar and cinnamon.
- In a second bowl puree the banana and mix with the applesauce and egg.
- Add wet ingredients to the dry and stir until just combined.
- Fold in the nuts.
- Fill dough into a prepared mini loaf pan and bake in the preheated oven at 180°C/350°F for 30-45 minutes or until skewer inserted in the centre comes out clean. You might need to cover the bread in order to prevent overbrowning. Check for this after 25 minutes.

LOW FAT BANANA AND FRUIT BREAD
This is a low fat, healthy alternative to traditional banana breads. I think it is very good, and I doubt that anyone you serve it to would know the difference between this bread or one made with higher calorie, cholesterol ladened oils. Total calories, as I figured them (RecipeZaar figures them differently) w/ Walnuts/ Craisins - Calories 1485/ Fat 25.75/ Fiber 32 - 1 Loaf Serving = 186/3.2/4 - WW Pts = 3. Half Loaf Srvg = 2 WW Pts. My calorie totals w/ out Walnuts/ Craisins - Calories 1155/ Fat 5.75/ Fiber 27 - 1 Loaf Servings = 144/>1/3.4 - WW Pts = 2. Half Loaf Srvg = 1 WW Pt. If using crushed pineapple instead of mandarin oranges, the calorie count would drop by 60 calories for the whole batch - 140/0/2 - that is, 7.5 calories @ srvg (mini-loaf sz) - fat/fiber would remain the same - so the variance is minimal, and would not change WW Pts. You could also add - 1/3 cup Sweetened Coconut - 117/7.9/1.1 (adds abt. 8g sugar) - with or w/out the walnuts, or double the Coconut to 2/3 cup, dropping the walnuts all together! All variations would change WW Pts count - adding 1/3c coconut in addition to chopped walnuts would change to: 1602/33.65/33.1 - 8 srvgs = 200/4.2/4.2 or 4 Pts. Replacing 1/3 cup coconut flakes for the 1/4 cup walnuts, would leave the point count the same as originally figured: 3 Pts @ mini-loaf srvg. Okay, just a thought here - but, I'll bet this recipe would make great cookie too! They would be moist, soft cookie - if you made 24 cookie - even w/ the walnuts and craisins - they'd be about 1 WW Pt for each cookie. Really, there are so many variations you could do to this recipe! You could add some dried candied fruit to make it a fruit cake type loaf or cookie (probably adding loads of calories and points - but for a occasional treat you might consider it - if you do that, I'd use broken walnuts, not chopped - bigger chunks like in regular fruit cake). I hope I've given you enough info so that you can, without doing much math, figure the various calorie or points totals. Sorry for the lengthy introduction, but I really think this recipe is great! Steps:
- Combine first 6 ingredients on the list.
- Mash bananas and oranges (drain liquid off first) in separate bowl until blended - some chucky-ness okay. NOTE: Can replace oranges w/ 1 - 8 oz. can crushed pineapple - also drained.
- Combine mixed dry ingredients with mashed bananas and oranges.
- Add remaining ingredients on list and stir.
- Pour into pans that have been sprayed w/ baking spray (mini-loaf pans - makes 8 decent sized loafs).
- Bake 350 degree until golden brown (pan sizes vary cooking time - mine cooked about 30 - 35 mins).

LOWER FAT BANANA NUT BREAD

- Preheat oven to 375 degrees F (190 degrees C). Lightly spray two 8x4x2 inch loaf pans with a non-stick cooking spray.
- Combine the fat free sour cream, egg whites, vanilla, bananas and margarine and mix on medium speed of electric mixer until smooth, creamy and well blended.
- Sift the flour, baking powder, baking soda, salt and light brown sugar into the banana mixture. Stir with a spoon until combined. Add more flour if necessary until a thick and rather resistant dough is formed. Fold in the optional nuts and raisins. Mix for 1 minute on the low speed of an electric mixer. Divide dough evenly between the two loaf pans.
- Bake at 375 degrees F (190 degrees C) until golden and the center tests done. Remove breads from pans immediately and allow to cool on a rack before slicing.

This recipe produces a seasonal favorate fruit cake with a twist of banana Tut. Bacically the result of the recipe is a moist, low fat, banana bread, with fruits and nuts added.

- Tools;.
- You will need 3 bowls. 1 small, 1 medium, 1 large.
- You'll need a wisk, an electric beater, a large wooden mixing spoon, a fork, a cutting knife, aluminum foil and wide surface space.
- 1. Make shure oven rack is centered.
- Preheat the oven to 400 degreese F. Pam spray a 9x5x3 loaf pan and one side of the aluminum foil. Poke holes into the center or the foil.
- 2. Smash the bananas with the fork, in the medium bowl[ it is ok for bananas to have small lumps]. Then add the spices, maple, and the fruit pith [finely chopped].
- 3. Sift flower in a small bowl. Then use the wisk to stir in the fruits and nuts.-this prevents them from sinking.
- 4. In the large bowl cream the Smartbutter with the electric beater adding in the splenda a little at a time untill fluffy.
- 5. Add the egg whites into the mixture one at a time, beating beating well after each addition.
- 6. Add the applesauce and then the lemon juice into the creamed mixture, using the electric beater.
- 7. With the fork add the banana mix into the large mix untill combined.
- 8. Mix baking powders into the dry ingredients with the wisk and then add them into the large mix. Mix them slowly with large wooden spoon JUST UNTILL FLOWER DISAPEARS. Over mixing is the worst that can happen.Also don't wate too long to put it in the oven.
- 9. Pour the mix into the pan using the wooden spoon. cover the loaf pan with the aluminum, but make it like a large arch on the top. Then quickly put it in the oven closing it as soon as possible.
- 10. After about 10 minutes lower temperature to 325 and leave it there for 50 min.- I like to use the alarm on my phone or you can use a citchen timer to make shure the times are exact.
- 11. When time is up,check with a rod and see if it comes out clean. Ir it does, take in out. if it doesen't then just leave it there for another few minutes and then take it out and let it set for 15 minute in the loaf pan. Then take it out onto the serving dish and let it set till it comepletely cools of. about 8 minutes.
- 12. I cliced it streight across and got about 8 large servings but you can also cut it in half long wayse and then cut across that to get smaller slices. It serves well with anything. Many like it with honey, but it can go with any meal.
