ULTIMATE MAC 'N' CHEESE CASSEROLE FOR TWO

Ooey-gooey, cheesy and bacon-y pasta: It's all here, and it will surely tempt you. Why? Because the orecchiette pasta is covered with the silkiest sauce of gruyere and sharp white Cheddar. Because crispy bacon pieces are sprinkled throughout the dish and on the top. Need I say more? The orecchiette pasta is the perfect shape for this dish because the cheese and bacon nestle into the pasta's earlike grooves to give you the ultimate mac 'n' cheese experience.

Ultimate Mac 'n' Cheese Casserole for Two image

Steps:

  • Preheat the oven to 375 degrees F and lightly spray a 2-quart oven-safe casserole dish with nonstick cooking spray. Set aside.
  • Bring a large pot of water to a boil and cook the pasta until al dente, following the directions on the pasta package. (You'll want it to still have a bite to it because it will finish cooking in the oven.) Drain well.
  • Meanwhile, in a large skillet, melt the butter over medium-high heat. Whisk in the flour and cook, whisking vigorously, 1 to 2 minutes. Continue to whisk as you add the milk, then let the mixture gently come to a simmer and thicken, about 5 minutes.
  • Add the Cheddar and gruyere and stir together with a spatula until all the cheese has melted. Add salt and pepper to taste. Remove the skillet from the heat.
  • Add the pasta to the cheese sauce and gently toss until everything is covered. Sprinkle half the bacon into the skillet and toss to incorporate. Pour the pasta mixture into the prepared casserole dish. Top with the remainder of the bacon, then bake, uncovered, until the mixture is bubbly and the pasta is cooked through, 30 minutes. Remove from the oven and let sit for 10 minutes before serving.

Steps:

  • In a saucepan, heat milk over medium heat until bubbles form around the edge of pan. Remove from the heat; stir in the cheese and butter. Let stand for 1 minute. Stir until cheese is almost melted. Stir in bread crumbs. In a bowl, combine the macaroni, egg yolks, pimientos, parsley, onion and salt. Stir in cheese mixture; mix well. Beat egg whites until stiff peaks form; fold into macaroni mixture. Transfer to a greased 2-qt. baking dish. Bake, uncovered, at 350° for 30-35 minutes or until puffed and lightly browned.

Easy Kraft Macaroni and Cheese Casserole image

Steps:

  • Preheat over to 400°F. Make the Mac and Cheese as normal, but leave the noodles slightly uncooked still, that "1 more minute" point. While it is cooking fry the ground beef and leave it unseasoned or season as you like, I use a little Montreal Steak Seasoning. Mix the Mac and Cheese, ground beef and tomato soup together.
  • Pour into a 9x13 baking dish, top with cheese and a light sprinkle of seasoning salt. I always put this on a cookie sheet, it bubbles over the tiniest amount sometimes.
  • Put in oven and bake 20-30 minutes, or until cheese is completely melted and slightly golden. Cool for a few minutes, serve and enjoy!

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
  • In a large bowl combine macaroni, processed cheese, mixed vegetables, mushroom soup, 1/2 of a soup can of water and sausage. Transfer to a 9x13 inch baking dish.

Steps:

  • Preheat the oven to 375 degrees.
  • Fill a 10 (+) quart pan with water, heat to a boil, and place egg noodles in the pan to cook.
  • Noodles should boil for no longer then 7 minutes.
  • Break up and thoroughly brown the ground beef in a frying pan, remove the fat, and put the meat aside for the moment.
  • In a medium sized saucepan, mix the Brown Gravy Mix with just enough water to form a paste.
  • Gradually add the rest of the water to avoid clumping or lumps.
  • Stir in Italian Seasoning Mix, Onion Powder and Garlic Powder.
  • Place saucepan over a medium heat, stirring until the color and consistency of the contents change to a lovely rich brown color.
  • Add the Meat and the Cheddar/ Monterey Jack Cheese into the Gravy.
  • Drain the noodles, rinsing them in cool water.
  • Shake off the excess water and place the noodles back into the large pan.
  • Toss the noodles with the gravy, cheese, and meat mixture.
  • Spray a 9" x 13" glass cake pan with Pam, or lightly grease the pan with margarine.
  • Press down half of the noodles mixture into the cake pan and add a thin coating of Mexican cheese.
  • Place down the other half of the noodles mixture, smoothing down the top with the other half of the Mexican cheese.
  • Place the Limon Potato Chips between waxed paper and roll into crumbs.
  • Sprinkle crumbs over top of casserole.
  • Put Casserole into 375 degree oven for 35 minutes.
