Steps:

  • Line a 20cm square baking tin with baking parchment.
  • Place the 200g of chocolate, butter and syrup in a heat-proof bowl and melt over a pan of barely simmering water or in the microwave. Once almost melted, remove from the heat and gently stir until any tiny bits chocolate have melted. Allow to cool a little.
  • Place the biscuits and 35g of the Maltesers in a freezer bag, seal and crush with a rolling pin. You want mainly crumbs but a few small chunks of biscuit is fine.
  • Top the crushed mixture and whole Maltesers (save 1 or 2 for yourself) to the melted chocolate and stir until everything is coated. Press into the prepared tin and make the topping.
  • For the topping, melt the chocolate, butter and syrup as before and spread over the biscuit base.
  • Cover the tin with cling film or foil and refrigerate for 1-2 hours before cutting into squares.

200g milk chocolate (I use Lindt milk chocolate)
100g unsalted butter
2 tbsp golden syrup
125g digestive biscuits
135g bag of Maltesers

Steps:

  • Grease and line a swiss roll tin.
  • Melt together the milk chocolate, butter and syrup.
  • Add crushed biscuits and whole maltesers to chocolate mix.
  • Press into tin and place in fridge to chill.
  • When mix is firm, melt the white chocolate and pour on top. Finally crush up the left over maltesers and sprinkle on top.

  • Line a 22cm-square tin with parchment paper. Melt the chocolate with the butter in a bowl over boiling water until it has completely melted. Remove from the heat.
  • Set this aside to cool for at least 10 mins whilst you get the rest of the ingredients ready. It's important that the chocolate isn't too hot when it is combined with the other ingredients or it could melt the Maltesers and marshmallows and take the 'rocky' out of this recipe.
  • Finally, add the crushed biscuits, marshmallows and Maltesers to the mixture and fold with a spoon until all are lightly coated in chocolate.
  • Pour into the tin to refrigerate for at least 30 mins. Sieve over a generous dusting of icing sugar. Cut into slices before serving.
