OLD MAMA'S FASHIONED CHILI
This spooky chili is great for Halloween dinner! Keep warm on the stove and the little ones can eat anytime during trick-or-treat activities.

Steps:
- Cook and stir ground beef in a skillet over medium-high heat until crumbly and browned, 5 to 10 minutes. Drain.
- Stir drained ground beef, black beans, kidney beans, tomatoes, green bell peppers, yellow onion, garlic, and chili seasoning together in a large pot over medium-high heat. Bring to a boil, reduce heat to low, and simmer, stirring occasionally, until vegetables are slightly tender and chili is heated through, 15 to 20 minutes. Season with hot sauce, salt, and ground black pepper to taste.

JO MAMA'S CHILI
This is the chili my family has been enjoying for years. I make it so it isn't too spicy for the kids, but feel free to kick it up.

Steps:
- Saute onion in oil until nearly translucent; add ground beef and brown, breaking it up as it cooks.
- Add seasonings and cook for 2-3 minutes, stirring frequently.
- Add tomato sauce, catsup, tomatoes, water and kidney beans. Bring to a boil and simmer, uncovered, for at least a half hour, adding additional water if necessary.
- Serve with onions, jalapenos, cheese, and sour cream.

BIG MAMA'S CHILI SAUCE
Steps:
- Place the tomatoes in a large nonreactive saucepan and use your fingers to mash and separate them into small bits. Add the remaining ingredients and stir well. Bring the sauce to a rolling boil, then reduce the heat and simmer lightly for 45 minutes, or until thickened. Cool the sauce, then chill in an airtight container. Store refrigerated for up to 2 weeks.

MOM'S EASY CHILI
I used Mom's chili recipe and added a few things of my own over the years. I put it together in the crock pot the night before, throw it in the fridge (just the crock), then before leaving for work the next morning I put the crock in the base, plug it in and it's yummy when I get home.

Steps:
- Brown ground beef and drain.
- Put all ingredients in crock pot and stir well.
- Cook on low for 8 to 10 hours, or high for 4 to 6 hours. I also like to take the lid off the crock pot the last hour or two (when I'm home) to allow some of the water to burn off.

- To begin with you’ll want to get the dried peppers into a stock pot and cover with water. Let them set off the heat for 2 hours. After two hours has passed go ahead and put them on a medium heat and add the whole garlic cloves. Let it simmer for 30 minutes then let it cool. Blend it (including the water) with the fresh oregano, strain well and set aside. This is your chile sauce! No need for chile powder! The flavor here is amazing!!
- Just before you start the chile’s simmering go ahead and drop your whole tomatoes into a small pot, cover them with water and simmer on medium/low heat. Let those simmer for 30-45 minutes. Let them cool (I’m not a fan of blending hot liquids). Once cooled, blend the tomatoes with the remaining water. Set aside.
- For your flavor you’ll add the spices and oatmeal together in a bowl and set aside to be added to the ground beef once it is cooked.
- While the two pots are simmering you can brown your ground beef with onions and garlic. I add the onions and garlic after I brown it. Let the onions get cooked (about 10 mins) then add the spice blend. Let it simmer for 20 minutes on low heat.

- Cook on medium heat until ingredients start to bubble. Turn the heat down to a simmer and continue to stir occasionally for about 15 minutes.
- Make sure to take random little tastes of the chili to see if the flavors are as desired. You may need to add in more salt or chili pepper depending on preferences. This is also an excellent excuse to steal some of the chili before anyone else!
