Maple Bacon Snack Mix image

Steps:

  • Line 2 sheet pans with waxed paper, then set aside.
  • Add the popcorn, bacon, pretzels and nuts to a large bowl. Mix and set aside.
  • Add the sugar, butter, maple syrup, corn syrup and salt to a large, heavy-bottomed pot fitted with a candy thermometer and place over a medium-low heat. When the butter has melted, stir together, then turn up the heat to medium-high. Cook, stirring occasionally, until the candy thermometer reads "hard-crack stage" (300 degrees F), 4 to 5 minutes.
  • Remove from the heat and stir in the maple extract. Carefully pour over the snack mix and toss using two wooden spoons. Transfer to the prepared sheet pans and spread out to allow it to cool, about 10 minutes. Break into clusters and transfer to a large serving bowl.

1/3 cup maple syrup
1/4 cup dark corn syrup
1/4 teaspoon kosher salt
2 teaspoons maple extract

Steps:

  • Preheat the oven to 325 degrees F. Cook the bacon over medium heat in a large skillet until brown and crisp, 8 to 9 minutes. Remove the bacon using a slotted spoon and drain on paper towels. Pour 1/4 cup of the bacon fat on a heavy rimmed baking sheet and spread evenly.
  • Beat the egg white and salt until just foamy using a whisk in a medium bowl. Gradually add the sugar and beat until just blended. Add the almonds, walnuts and cayenne pepper. Toss until the nuts are coated.
  • Spread the nut mixture in a single layer on the baking sheet. Bake until the nuts are crisp and brown, about 35 minutes, turning and stirring the nut mixture with a metal spatula every 10 to 15 minutes. Cool for 2 hours.
  • Transfer the nut mixture to a bowl; add the bacon pieces and toss to blend. This recipe can be prepared 1 day ahead and stored in an airtight container in the refrigerator.

Steps:

  • Heat oven to 325ºF.
  • Bring 1 cup maple syrup and water to boil in medium saucepan on medium heat. Add nuts; cook 3 min., stirring occasionally. Drain.
  • Mix remaining maple syrup, sugars and liquid smoke in medium bowl. Add nuts and bacon bits; toss to coat. Spread onto parchment-covered rimmed baking sheet.
  • Bake 10 min.; stir. Reduce oven temperature to 300ºF. Bake 18 to 20 min. or until nuts are crisp and lightly browned, stirring after 10 min. Cool.
