PEANUT BUTTER MAPLE COOKIES

From Quick Cooking Magazine. These are scrumptious - my favorite peanut butter cookies! Using all butter makes them nice and crisp--if you prefer softer cookies, replace 1/2 cup of the butter with 1/2 cup shortening.

Steps:

  • In a mixing bowl, cream the butter, peanut butter and sugars.
  • Add the eggs, one at a time, beating well after each.
  • Beat in syrup and vanilla.
  • In a separate bowl, combine flour, oats, baking powder, baking soda and salt; graduallly add to the creamed mixture and mix well.
  • Stir in peanut butter chips.
  • Drop by heaping tablespoonfuls 2" apart onto ungreased baking sheets.
  • Bake at 325* F for 15-18 minutes or until LIGHT golden brown. Be very careful and do not overcook.
  • Cool for 1 minute before removing to wire racks.

Steps:

  • Heat oven to 375°F. In large bowl, beat 1/2 cup granulated sugar, the brown sugar, peanut butter, butter and egg with electric mixer on medium speed, or mix with spoon, until well blended. Stir in flour, baking soda and baking powder until dough forms.
  • Shape dough into 1-inch balls; roll in additional granulated sugar. On ungreased cookie sheets, place about 2 inches apart.
  • Bake 8 to 10 minutes or until edges are light golden brown. Immediately press 1 milk chocolate candy in center of each cookie. Remove from cookie sheets to cooling rack.

  • In a heavy medium size saucepan, combine sugar, milk and syrup.
  • Bring to a rolling boil, stirring frequently (important to bring to rolling boil or cookies will not set up).
  • Boil for 3 minutes.
  • Stir in peanut butter and vanilla.
  • Stir in oats.
  • Drop by rounded teaspoons onto waxed paper.
  • Cool for 3 to 4 hours, until firm.

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in eggs and maple flavoring. In another bowl, whisk flour, baking soda and salt; gradually beat into creamed mixture. Stir in baking chips and pecans., Drop dough by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake 10-12 minutes or until golden brown. Cool on pans 2 minutes. Remove to wire racks to cool completely. , For glaze, in a saucepan, melt butter over medium heat. Remove from heat. Gradually beat in confectioners' sugar, syrup and maple flavoring until smooth., Drizzle over cookies; let dry completely. Store between pieces of waxed paper in airtight containers.
