Grandma Williams' Squash Pie image

Steps:

  • Put the squash in a large pot and fill with water. Bring to a boil over medium heat and cook until tender, 20 minutes. Drain and press the squash with a spoon to remove any excess water.
  • Preheat the oven to 350 degrees F.
  • Transfer the squash to a blender. Add the butter and flour and blend until pureed. Add the sugar, lemon extract and eggs and blend until smooth. Evenly divide the filling among the pie shells.
  • Bake until the filling is set, 45 minutes to 1 hour. Let the pies cool to room temperature before slicing and serving.

6 medium yellow squash, sliced

Savory Winter Squash Pie image

Steps:

  • In a large bowl, mix flour and salt; cut in shortening and butter until crumbly. Gradually add ice water, tossing with a fork until dough holds together when pressed. Shape into a disk; wrap and refrigerate 1 hour or overnight. , Preheat oven to 375°. For optional bacon roses, brush bacon with 3 tablespoons syrup. Roll bacon strip up; for larger roses use two strips. Secure bottoms with toothpicks. Dip top of each bacon rose in 3 tablespoons brown sugar. Arrange on a foil-lined rimmed baking sheet. Bake until bacon is cooked through, 25-30 minutes., On a lightly floured cutting board, roll dough to a 1/8-in.-thick circle; cut into 1-in.-wide strips. Brush with syrup and sprinkle with brown sugar. Chill until ready to use., Meanwhile, in a large bowl, whisk eggs, squash and milk until smooth. Stir in cheeses, flour, rosemary, salt, nutmeg, thyme, pepper and cayenne. Pour into a greased 9-in. pie plate. Bake 20 minutes., Working quickly, arrange chilled dough strips over hot filling in a lattice pattern. Trim at edge of pie plate. Bake until crust is golden brown and center is set, 15-20 minutes. Cool 10 minutes on a wire rack before serving. If desired garnish with bacon roses, rosemary leaves and thyme leaves.

Maple-Roasted Kabocha Squash image

Steps:

  • Preheat the oven to 425 degrees F and line 2 rimmed baking sheets with parchment.
  • Whisk together the brown sugar, maple syrup, butter, chili powder, cayenne and 2 teaspoons salt in a large bowl to combine.
  • Cut the squash in half and trim and discard both ends. Using a spoon, remove the seeds and discard. Place the squash cut-side down and slice crosswise into 1/2-inch-thick wedges.
  • Toss the squash with the maple syrup mixture to coat evenly. Arrange the squash in a single layer on the prepared baking sheets, reserving the excess maple syrup mixture. Roast, flipping the squash and rotating the baking sheets top to bottom halfway through, until golden brown and tender, 24 to 26 minutes. While still hot, loosen the squash with a metal spatula from the baking sheets and flip to avoid sticking. Brush the squash with the reserved maple syrup mixture and transfer to a serving dish. Serve warm or at room temperature.

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the squash, cut sides up, on a sheet pan. Place 1/2 tablespoon butter and 1/2 tablespoon maple syrup in the cavity of each squash. Brush the cut sides with olive oil and sprinkle the squash with 3 teaspoons kosher salt and 1 teaspoon pepper. Roast for 40 to 60 minutes, depending on the size of the squash, until tender when pierced with a small knife.
  • Place the squash on a serving platter. If the halves are too large for one serving, cut each piece in half through the stem. Drizzle lightly with extra maple syrup, sprinkle with sea salt, and serve hot.

Roasted Winter Squash With Soy-Maple Glaze image

Steps:

  • Adjust the oven rack to the lower middle position and heat the oven to 400*F.
  • Line a rimmed baking sheet with foil. Brush the oill over the foil and the cut sides of the squash.
  • Place the squash, cut side down, on the foil.
  • Roast until a skewer inserted into the squash meets no resistance, about 40-50 minutes.
  • Soy-Maple Glaze:.
  • Stir together maple syrup, soy sauce, and ginger.
  • Fifteen minutes before the squash is finished cooking, flip it cut side up and brush with the soy maple glaze. Drizzle some extra glaze into the cavity.
  • Return the squash to the oven and cook until the maple mixture begins to caramelize, about 5 minutes longer.
  • Brown Butter and Sage Variation:.
  • When the squash is almost done, melt the butter in a small skillet over medium heat. Add the chopped sage and cook until the butter is golden brown and the sage is crisp, about 5 minutes. Pour the sage butter over the squash just before serving.

Steps:

  • Heat oven to 425 degrees. If you like, line a rimmed baking pan with parchment paper or foil. (It's not necessary but will prove helpful when cleaning up.)
  • In a small pot over medium-high heat, combine maple syrup and cayenne in a small pot. Bring to a simmer and let cook until it reduces by a third, 1 to 3 minutes. Add butter and let it melt. Turn off heat and mix in salt, pepper and coriander.
  • Spread the squash out on the pan and spoon maple mixture over the pieces, turning them to coat. Roast until the pieces begin to soften, 15 minutes.   • Preheat the oven to 350°F. Cut the squash in half and remove the seeds. Line a baking sheet with parchment paper and place the squash on the sheet cut side down. Roast the squash until it's fork tender, about 1 hour.
  • Let the squash cool and then scoop the flesh out of the skin with a spoon. Refrigerate the squash or freeze for future use. I like to roast several squash at a time and then freeze the flesh for use in soups or more pies!
  • To make the pie, preheat your oven to 375°F. Roll out the pie dough and shape it into your pie pan. In your food processor with the blade attachment add the roasted squash and dates and purée both until very smooth.
  • Add the spices, salt, and vanilla and purée again. In a small bowl combine the eggs and cream and whisk lightly. Add this mixture into the squash slowly while the food processor is running. The filling should look fluffy and smooth. You may see some small pieces of date and that's totally okay. You just don't want it to be chunky!

Line a rimmed baking sheet with foil and brush lightly with canola oil. Place the cut side of the squash down and bake until the skin is soft and easily pierced with a skewer, about 40 minutes. Allow to cool, then scoop the flesh from the skin with a spoon. Puree until smooth using a food processor or immersion blender. Measure out 3 cups of pureed squash. Reserve the rest for another use.
