MARGARIDA'S BROILER CAKE
Old, old recipe given to me by my Canadian cousin so very many years ago. I've been making this since I was teeny-weeny. It's an old-fashioned simple recipe, but ever so good.

Steps:
- CAKE:.
- Scald milk in a saucepan. Add butter to melt. Set aside.
- In a bowl, lightly beat eggs. Add sugar gradually and beat well.
- Sift flour, then measure. Sift flour again with baking powder and salt in a separate bowl.
- Add vanilla extract to scalded milk.
- Add dry ingredents to egg/sugar mixture and beat well. Add liquid ingredients and beat well until all is incorporated well.
- Pour mixture into an 8-9" square pan.
- Bake at 350-degrees Fahrenheit for 25-35 minutes or until done when tested with a toothpick.
- Remove from oven and let cool for 5-10 minutes.
- Spread the Broiler Topping over warm cake.
- Place cake under broiler for 2 - 3 minutes to brown lightly.
- BROILER Topping:.
- Melt butter in a saucepan. Stir in brown sugar until melted. Add the coconut and if desired, add the walnuts. Add the whipping cream and mix well to distribute.
OVEN BROILED CAKE
My Mother made this cake when I was a kid. She also gave it it's name, I assume. She made the cake batter from scratch, but I find that a packaged cake mix is easier. Most of the time she made it to take to family reunions or other socials. My children and Grand kids love it.

Steps:
- 1. Prepare cake mix per directions on package. Pour into a greased 9" by 13" by 2 1/2" baking pan. Bake per package instructions.
- 2. While cake is baking, prepare topping using the remaining ingredients. Place butter or margarine in a small sauce pan on low heat, add brown sugar, vanilla and milk and cook until well mixed and smooth. Add salt, nuts and coconut. stir until mixed then leave on very low heat until cake is done.
- 3. Remove cake from the oven and spread topping mixture on top of cake.
- 4. Turn on the oven broiler unit. Place cake back in oven and broil until lightly browned. Watch closely so as not to let the topping burn.
- 5. Remove cake from oven and let cool before cutting.
MARGARITA CAKE
Margarita cake offers the favorite sweet and salty combo with a crunchy pretzel crust.

- Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom only and lightly flour 13x9-inch pan, or spray bottom with baking spray with flour. In medium bowl, mix crust ingredients. Sprinkle evenly on bottom of pan; press gently.
- In large bowl, beat cake ingredients with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Pour batter over crust.
- Bake 34 to 39 minutes or until light golden brown and top springs back when touched lightly in center. Cool completely, about 2 hours. Frost with whipped topping; sprinkle with additional lime peel. Store loosely covered in refrigerator.

These slushy margaritas are made in the freezer. No blending required! But they must be made ahead to allow time to freeze.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan.
- In a large bowl combine cake mix, pudding mix, eggs, oil, water, lemon juice 1/4 cup tequila and 2 tablespoons triple sec. Beat for 2 minutes.
- Pour batter into prepared pan. Bake in the preheated oven for 45 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool in pan for 10 minutes; remove to rack and pour glaze over cake while still warm.
- To make the glaze: In a small bowl, combine confectioners' sugar with 1 tablespoon tequila, 2 tablespoons triple sec and 2 tablespoons lime juice. Mix until smooth.
