AUTHENTIC PIZZA MARGHERITA
Inspired by the pizza at Bar Del Corso, this Pizza Margherita features tomato sauce, mozzarella, and basil, with just a hint of sea salt.

Steps:
- Stir flour and 1 teaspoon salt in a bowl. Set aside.
- Mix water, yeast, and sugar in a large bowl. Let stand until yeast begins to form a creamy foam, about 5 minutes.
- Stir half the flour mixture into yeast mixture until no dry spots remain. Stir in remaining flour, 1/2 cup at a time, mixing well after each addition. When dough pulls together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
- Lightly oil a large bowl, then place dough in the bowl and turn to coat with oil. Cover with a light cloth and let rise in a warm place (80 to 95 degrees F (27 to 35 degrees C)) until doubled in volume, about 1 hour. Punch dough down, divide into 4 equal pieces, and form each into a ball.
- Preheat oven with a pizza stone to 500 degrees F (260 degrees C).
- Stretch out and pat 1 dough ball to form a circle 10 to 12 inches in diameter. Place dough on a lightly floured pizza peel. Top with 1/2 cup of tomato sauce and spread to cover within an inch of the edge of the dough. Arrange 5 slices of mozzarella cheese on top of the tomato sauce, then place 5 basil leaves on top. Drizzle pizza with 1 tablespoon olive oil and sprinkle with sea salt to taste. Repeat for 3 remaining dough balls.
- Slide each pizza onto the pizza stone in the preheated oven. Bake until cheese is bubbly and the underside of the crust is golden brown, 5 to 7 minutes.

PIADINA (ITALIAN FLATBREAD)
Piadina is an Italian flatbread from Emilia-Romagna region. The traditional recipe calls for lard in the dough which you can replace with a good extra-virgin olive oil. It is typically served stuffed with prosciutto and a local cheese called squacquerone but any soft cheese will work. Enjoy!

Steps:
- Mix flour and salt together in a large bowl. Mix in water a little at a time. Rub in lard until dough comes together in a ball.
- Transfer dough to a lightly floured work surface; knead until smooth and elastic, about 10 minutes. Divide the dough into 6 pieces; roll out each piece to 1/16-inch thickness.
- Heat a dry, heavy skillet or flat griddle over medium-high heat. Cook each piece until golden brown, about 2 minutes per side.

MARGHERITA PIADINE

Steps:
- Preheat oven to 425.
- Spray a large cooking sheet with cooking spray.
- Roll dough out onto the cooking sheet.
- Slice dough lengthwise and then again crosswise four times to forn 8 squares.
- In a small bowl, combine 1 teaspoon oil, garlic, Italian seasoning mix and pepper.
- Brush tops of dough lightly with seasoned oil.
- Bake for 8 minutes until lightly golden brown.
- Combine vinegar and salt and toss with arugula and tomato.
- Place one slice of cheese on one piece of bread.
- Top with arugula mixture and another piece of bread.
- Return to the oven for another couple of minutes just until the cheese melts.
- Serve immediately.

MARGARITA PIE

Steps:
- Position rack in center of oven; preheat to 350 degrees.
- In a medium bowl, mix together cracker crumbs and butter. Press into a 9-inch pie plate. Bake until crust begins to puff, about 8 minutes. Remove from oven; transfer to a cooling rack. If crust has pulled away from sides, use the back of a spoon to press it back. Let cool completely.
- In a medium bowl, stir together condensed milk, zest, juice, tequila, liqueur, and salt. Let stand for 5 minutes to thicken.
- Pour filling into crust. Cover with plastic wrap, and refrigerate until firmly set, for at least 2 or up to 8 hours.
- Just before serving, whip cream until soft peaks form. Fold in sugar and vanilla, whipping until stiff peaks form. Garnish pie with whipped cream and lime slices, if using. Serve immediately.
PIADINE
Steps:
- Combine all the ingredients in a food processor and pulse on and off until they form a dough, adding a little more liquid if necessary. Turn the dough out onto a lightly floured counter and knead for 5 to 10 minutes, until smooth and resilient. You can put the dough in a bowl covered with plastic wrap and put it aside for 2 or 3 hours at this point or proceed with the recipe.
- Preheat a cast-iron or nonstick skillet or griddle over medium heat. While the pan is heating, roll out the piadine: separate the dough into 6 or 8 roughly equal little balls, then roll them out as thin as possible and as wide as your pan will accommodate, using additional flour if necessary to keep the dough from sticking to the rolling pin or your work surface.
- Cook the piadine in the dry pan, flipping them once or twice a minute, 3 to 5 minutes in total, until browned and spotted but not burned.
- Cut the piadine into wedges, then put them on a baking rack to cool just for a minute or two-the wedges will steam and soften if you put them directly on a plate. Serve warm and repeat for the remaining dough (or finish the remaining dough and reheat the whole batch on the baking rack in a 200°F oven for a couple minutes).
