Marmalade French Toast Sandwiches image

Steps:

  • Spread cream cheese over six slices of bread; top with marmalade and remaining bread. In a shallow bowl, whisk eggs and milk., Lightly grease a griddle; heat over medium heat. Dip both sides of sandwiches into egg mixture. Place sandwiches on griddle; toast 2-3 minutes on each side or until golden brown. If desired, serve with syrup.

Steps:

  • Heat broiler of toaster oven (or oven). Lightly toast bread, then top with cheese and marmalade or preserves. Broil until cheese is melted, 1 to 2 minutes.

Marmalade-Stuffed French Toast with Orange Syrup image

Steps:

  • Preheat oven to 300°F. Place baking sheet in oven. Cutting through top crust of each bread slice, make 4-inch-long by 2-inch-deep pocket. Stir cream cheese and marmalade in small bowl. Spoon 1 generous tablespoonful cream cheese mixture into each bread pocket.
  • Whisk eggs, milk, vanilla extract, cinnamon and nutmeg in pie plate.
  • Dip 4 stuffed bread slices into egg mixture, coating completely. Melt 1 tablespoon butter in large nonstick skillet over medium heat. Add dipped bread to skillet. Cook until golden brown, about 2 minutes per side. Transfer French toast to baking sheet in oven. Repeat dipping and cooking with remaining 4 bread slices, egg mixture and 1 tablespoon butter. Serve with Orange Syrup.

  • Heat a grill pan over medium-high heat. Grill the bread until golden brown, about 4 minutes per side. Spread 2 tablespoons of ricotta over each piece of toast. Spoon 1 tablespoon of marmalade over the ricotta, and serve.

La Isla's Stuffed French Toast image

Steps:

  • In a medium bowl, using a hand beater, beat the 2 tablespoons of butter, and the cream cheese until combined. Add the marmalade and mix until incorporated, then fold in the strawberries and guava shells, using a rubber scraper. Transfer the mixture to a pastry bag fitted with a large tip.
  • Make an incision (pocket) on the crust side of the 4 pieces of bread about 3/4 of the way through. The incision will allow you to stuff the pocket. Leave the slices with the incision, covered, at room temperature before stuffing. Gently stuff the room temperature slices with the filling. Refrigerate the stuffed slices with the pocket opening facing up for 20 to 30 minutes.
  • Preheat oven to 375 degrees F.
  • Egg batter:
  • Add all the ingredients to a medium shallow bowl and mix well.
  • French Toast:
  • Add the corn cereal and almonds to a sheet pan and crush together. Dip the bread slices in the egg batter and then into the cereal mixture.
  • Put a large skillet on medium-high heat and add 3 to 4 tablespoons butter. When the butter has melted add the stuffed bread slices and brown on 1 side, then flip and put the skillet in oven for 8 minutes. Remove the skillet from the oven and transfer the toast to a serving platter. Drizzle with guava marmalade and a dusting of powdered sugar before serving.

Steps:

  • Preheat the oven to 350°.
  • Have ready a rimmed baking sheet.
  • In a large shallow bowl, whisk together the eggs, milk, orange zest and juice, and vanilla.
  • Lay 1 bread slice on a work surface and spread with one-fourth each of the cream cheese and marmalade.
  • Top with another slice.
  • Repeat with the remaining bread, cream cheese, and marmalade.
  • Place a griddle over med-high heat until hot.
  • Lightly oil the griddle.
  • One at a time, dip the sandwiches in the egg mixture and turn gently to coat evenly, keeping the sandwiches intact.
  • Let stand until the bread has soaked up some of the egg mixture, about 30 seconds.
  • Remove the sandwiches from the egg mixture, letting the excess drip back into the bowl, and place on the hot griddle.
  • Cook until the bottoms are golden brown, about 2 minutes.
  • Flip the sandwiches and brown the other sides, about 2 minutes more.
  • Transfer to the baking sheet.
  • When all 4 sandwiches are on the sheet, place the sheet in the oven and bake until the cream cheese, melts, about 10 minutes.

Goat Cheese Crostini with Blood Orange and Black Pepper Marmalade image

Steps:

  • Place goat cheese in small bowl. Finely grate 1 teaspoon peel from 1 blood orange; stir peel into cheese.
  • Using vegetable peeler, remove peel (orange part only) in strips from remaining 3 oranges. Cut peel into 1/8- to 1/4-inch pieces and place in medium saucepan. Using small sharp knife, cut white pith from all 4 oranges. Working over another small bowl to catch juices, cut between orange membranes to release segments. Squeeze any remaining juice from membranes into bowl. Discard membranes. Coarsely chop orange segments and add to saucepan along with any juices. Add juices from bowl to saucepan. Stir in honey and 1/4 teaspoon coarsely ground black pepper. Bring to boil over medium-high heat and cook uncovered until thick and reduced to 1/2 cup, stirring frequently, about 10 minutes. Cool. Season with more ground black pepper to taste and with fresh lemon juice, if desired. DO AHEAD: Cheese and marmalade can be made 1 day ahead; cover separately and chill. Bring to room temperature before assembling crostini. Top toasted baguette slices with goat cheese, then marmalade. Place crostini on platter and serve.
