MARSHMALLOW CHICKS AND BUNNIES

Marshmallow is a springy, sticky treat worthy of being eaten all year. But when that marshmallow is molded in the cheery shapes of pink bunnies and yellow chicks, it screams springtime and Easter baskets. These are softer marshmallow creatures than classic ones from the store, but that's their charm: They give and squish, and their colored-sugar coating is crunchy in all the best ways.

Steps:

  • Spread 3/4 cup of the pink sanding sugar in the bottom of an 8-inch square pan. Line a rimmed baking sheet with wax paper and cover it sparsely with 1/3 cup of the yellow sanding sugar. Prepare a piping bag with a 1/2-inch pastry tip.
  • Pour 2/3 cup of cold water into the bowl of a stand mixer and sprinkle the powdered gelatin on top. Let sit for 5 minutes.
  • Put the granulated sugar and 1/2 cup cold water in a small pot over medium-high heat. Cook, stirring, until the sugar is dissolved, about 4 minutes. Attach a candy thermometer to the pot, bring the mixture to a boil and boil until the thermometer registers 238 degrees F, about 8 minutes. Brush the sides of the pot with a wet pastry brush if sugar crystals stick to the sides as the syrup boils.
  • Carefully pour the hot sugar syrup into the bowl with the gelatin and whisk the mixture by hand for a few minutes to cool it slightly. Then, using the whisk attachment, whisk the mixture on medium-high speed until soft peaks form, 9 to 11 minutes. Add the vanilla and mix for another 30 seconds.
  • Put half of the mixture (about 2 cups) into a large bowl. Add about 5 drops of pink gel food coloring and gently fold with a rubber spatula to combine and until no streaks remain. Scrape into the prepared 8-inch square pan and spread into a smooth, even layer. Let sit at least 4 hours, uncovered, so the marshmallow stiffens.
  • Add about 5 drops yellow gel food coloring to the remaining marshmallow in the stand mixer, gently folding with a rubber spatula to combine. Transfer the yellow marshmallow to the prepared piping bag. Pipe a chick shape (about 2 1/2-inches long) on the prepared baking sheet by beginning piping close to you, pulling away from you to begin making the chick's body, then doubling back toward yourself. When you reach the end of the body nearest you, double back a bit to make the head, pulling away to create the beak. Repeat, keeping about an inch between the chicks. Let sit at least 4 hours, uncovered, so the marshmallow chicks stiffen.
  • To coat the bunnies in sugar: Put the remaining 1/2 cup pink sanding sugar in a medium bowl. Heat a saucepan filled with a couple inches of water to just under a boil, then turn off the heat. Dip the unrimmed edge of a 2 1/2-inch bunny-shaped cookie cutter into the warm water, then press the cutter into one corner of the marshmallow, creating a bunny marshmallow. Nudge the cut bunny out of the cutter and into the bowl filled with pink sanding sugar. Toss the cut bunny with a fork until well covered with sanding sugar. Repeat, dipping the cutter into the warm water each time you cut a bunny.
  • To coat the chicks in sugar: Put the remaining 1 cup yellow sanding sugar in a medium bowl. Use an offset spatula to remove 1 chick from the wax paper. Place the chick in the bowl filled with yellow sanding sugar. Toss the chick with a fork until well covered with sanding sugar. Repeat with the remaining chicks.
  • To make eyes and a nose for the bunnies, dip a toothpick or pointed skewer into the black gel food coloring and place 2 dots on each face for the eyes and 1 dot centered below the eyes for the nose. To create eyes on the chicks, dip a toothpick or pointed skewer into the black gel food coloring and place 1 dot on each side of each chick's head. Store in an airtight container for up to 2 days.

Steps:

  • Make simple syrup by microwaving 1 tablespoon sugar and 1 tablespoon on high for 30 seconds. Stir for 30 seconds. Pour simple syrup onto a saucer. Pour sprinkles in a separate saucer. Dip martini glass into simple syrup and then in sprinkles to create a candy rim. In a shaker, pour marshmallow vodka and cranberry juice over ice. Shake for 30 seconds. Strain into rimmed martini glass. Garnish with marshmallow bunny Peeps.

Spooky Fireball Whiskey Marshmallows Recipe - (4.6/5) image

Steps:

  • Pour water in the bowl of a stand mixer (with whisk attachment) and sprinkle gelatin on top. Make sure all gelatin has been moistened so that there is no longer any white powder. Set aside, so gelatin can bloom, while completing the next steps. Spray the bottom and sides of the pan of your choice with cooking spray. In a small bowl, mix together powdered sugar and cornstarch. Coat greased pan with sugar/cornstarch mix, thoroughly covering the bottoms and sides. It is easier if you use a sifter to coat the pan as it will create an even dusting. Set remaining powder/cornstarch aside for now. In a small saucepan, add ingredients in this order: salt, evaporated milk, Fireball whisky, then sugar. Without mixing, warm saucepan over medium heat. Bring mixture to a gentle boil. Immediately add a candy thermometer and watch the temperature, reducing heat to control boiling if necessary. Ideally you want the temperature to get as close to 240°F before sugar mixture begins to bubble over. Once you can no longer boil the sugar mix without overflowing, go ahead and move on to the next step. (The highest my mixture got to was 210°F before it almost boiled over.) Slowly pour the hot sugar mixture in with the gelatin. Begin to whisk on low, breaking up the gelatin and incorporating it with the warm sugar. Once gelatin has dissolved, add any food coloring (optional - I used 1 drop of red and 2 drops of yellow) then set the mixer speed to high and beat for 15-17 minutes. Mixture is ready once it has turned a solid color, has doubled in size, and is thick enough to cause lasting ripples and waves in the batter. Tips for hand mixers: For the first 5 minutes of mixing, hold the mixer near one end of the bowl and tip the opposite side of the bowl so that it is leaning toward the mixer. This trick will cause the fluid in the bowl to fall toward while the mixer pushes the fluid back up, giving you a more even mix. Once the marshmallow mixture is no longer clear, set bowl back on the counter and mix like normal, making sure to rotate the mixer around the sides and through the middle. Pour fluffed marshmallow mix into the prepared pan. Used a greased spatula to help smooth out the top, if needed. Finish off by dusting the top with more sugar/cornstarch mix. Let marshmallows set for 6 hours if using a baking sheet. If using a smaller pan, like a 9x13 pan, let the marshmallows stand for 8 hours. When ready to cut, grease and dust the cookie cutters with the cornstarch/powered sugar mixture. Proceed to cut out the marshmallows. Store marshmallows in an airtight container for up to 2 weeks.

MARSHMALLOW PEEPS!

You will need a cookie cutter in the shape of a peep for this one, or use a bunny/egg shaped cutter. You can use this recipe year round to make heart shaped peeps for Valentines' Day, tree shaped ones for Xmas, and pumpkin shaped ones for Halloween. The possibilities are endless. I have made this and it tastes great! Try dipping them in chocolate too!

Steps:

  • Line the bottom and sides of a 13- by 9-inch baking pan with plastic wrap.
  • Oil and then liberally dust bottom and sides with some powdered sugar.
  • Place 1/3 cup cold water in a mixer bowl and sprinkle the gelatin over the water's surface.
  • In a heavy saucepan with a tight fitting lid, add sugar, corn syrup, salt, and remaining 1/3 cup water and stir to dissolve sugar.
  • Cover the pan, place over moderately low heat.
  • Remove cover after 4 - 5 minutes. The steam will have caused any sugar crystals to dissolve and the syrup will be bubbling lightly.
  • Increase the heat to high and boil the syrup, without stirring, until it reaches 240 degrees F on a candy thermometer.
  • Remove from the heat immediately.
  • Slowly and carefully, pour the syrup into the gelatin while the mixer is beating constantly at medium speed.
  • When all of the syrup has been added, increase speed to high and whip for approx 10 minutes until the mixture is lukewarm and very white, and the consistency of marshmallow cream.
  • Add the vanilla extract and a drop or two of food coloring if desired. Mix well.
  • Pour the marshmallow mixture into pan; smooth the top surface and sprinkle liberally with colored sugar.
  • Let the pan stand, uncovered, at room temperature to dry out. Depending on humidity, this may happen in several hours or take up to 8 hours. The longer you let it set, the easier the marshmallow sheet will be to cut.
  • When ready for cutting, invert the pan of marshmallow onto a clean cutting surface; remove the plastic wrap and coat the top with colored sugar.
  • Use cookie cutters to stamp out your peeps (or other shapes) and toss them in a bowl of colored sugar to coat evenly. If the cookie cutter gets sticky, wash it and lightly coat with vegetable oil.
  • Use chocolate sprinkles or melted chocolate to form an eye on peeps.
  • Store the marshmallow peeps in an airtight container.
  • Makes about 80 marshmallows.
