CHOPPED SALAD WITH TUNA

The secret to making a great chopped salad is to cut the ingredients into chunks that are all the same size and to include contrasting textures. Instead of using tuna, try leftover cooked chicken.

Chopped Salad with Tuna image

Steps:

  • Place vinegar in a large salad bowl. Add 1/4 teaspoon salt and 1/2 teaspoon pepper. Slowly add the oil in a steady stream, whisking to emulsify.
  • Add the remaining ingredients to the bowl, and toss well to combine.

2 tablespoons white-wine vinegar
Salt and pepper
1/4 cup olive oil
1 head romaine lettuce (about 1 pound), chopped into 1-inch pieces
1 can (15 1/2 ounces) chickpeas, drained and rinsed
1 can (6 ounces) tuna in oil, drained and flaked
1/2 cup black olives (about 20), such as Kalamata, Gaeta, or Nicoise, pitted and slivered
1/2 red onion, cut into 1/4-inch pieces
2 cups fresh curly parsley, coarsely chopped

TANGY TUNA SALAD

This tuna salad gets its bright flavor from two good-for-you ingredients: Greek yogurt and shredded apple.

Steps:

  • Whisk together mayonnaise, yogurt, and lemon zest and juice; season with salt and pepper. Stir in tuna, celery, and apple. Serve with bread, onion, cucumber, and sprouts.

Tuna Macaroni Salad image

Steps:

  • In a pot of boiling, salted water, cook pasta until al dente, 7 to 8 minutes. Drain, then transfer to large bowl to cool slightly.
  • While pasta cools, soak onion in cold water. Drain, then stir into pasta along with celery, celery leaves, jalapeno and tuna. Whisk together mayonnaise, buttermilk, lemon juice, relish and mustard. Toss with pasta mixture and season to taste. Refrigerate until cold, at least 30 minutes and up to 8 hours.

8 ounces elbow macaroni pasta
1/2 small red onion, cut into 1/4-inch pieces (about 1/2 cup)
2 ribs celery, cut into 1/4-inch pieces (about 1 cup), plus 1/4 cup celery heart leaves
1/2 jalapeno, seeded if desired, and finely chopped (about 1 tablespoon)
1 (5-ounce) can solid tuna in water, drained and flaked
6 tablespoons mayonnaise, preferably Hellmann's

Steps:

  • In a medium bowl, combine tuna, celery, apple, mayonnaise, basil, and lemon juice; mix well. Season with salt and pepper.
  • On a work surface, divide tuna salad among 4 slices bread; top with remaining 4 slices bread. Serve.

12 ounces good-quality tuna, packed in oil, drained
2 stalks celery, halved lengthwise and thinly sliced
1 apple, such as McIntosh or Gala, peeled, cored, and cut into 1/4-inch pieces
3 tablespoons light mayonnaise, preferably Ojai Cook's Lemonaise Light

Steps:

  • Drain tuna; place in a medium bowl. Separate tuna into large chunks with a fork. Add celery, mayonnaise, lemon juice, egg whites, and capers; season with salt and pepper. Stir to combine.
  • In a medium bowl, whisk together oil and vinegar; season with salt and pepper. Add greens, and toss to combine. Line serving plates with greens. Cut avocados in half lengthwise. Peel the avocados, then remove and discard pits. Place an avocado half on each plate. Fill hollow with a scoop of tuna salad. Serve immediately.

2 cans best-quality white tuna, packed in water
2 large ribs celery, finely chopped (about 1 cup)
3 tablespoons Homemade Mayonnaise

Steps:

  • Make dressing: In a medium bowl, whisk together reduced-fat mayonnaise, fresh lemon juice, and tomato-based chili sauce; season generously with coarse salt and ground pepper.
  • Stir in solid white tuna. Stir in ingredients from either the Waldorf variation or Classic variation, if desired.
  • Warm lavash or sandwich wraps. Place a leaf of green-leaf lettuce in center of each piece of bread; spoon tuna mixture on top. Fold opposite sides of bread over filling; roll tightly into a cylinder, ending seam side down. With a serrated knife, cut sandwiches in half crosswise.
