CHEESEBURGER SOUP I
I use sharp cheddar cheese because I like the taste but any cheddar is good.

- In a large pot, melt 1 tablespoon butter or margarine over medium heat: cook and stir vegetables and beef , until beef is brown.
- Stir in basil and parsley. Add broth and potatoes. Bring to a boil, then simmer until potatoes are tender, about 10-12 minutes.
- Melt the remainder of butter and stir in flour. Add the milk, stirring until smooth.
- Gradually add milk mixture to the soup, stirring constantly. Bring to a boil and reduce heat to simmer. Stir in cheese. When cheese is melted, add sour cream and heat through. Do not boil.

CHEESEBURGER MAC SOUP
All your favorite cheeseburger flavors in this creamy soup topped with chopped dill pickles.

- In 4-quart Dutch oven or saucepan, cook beef, onion, garlic and pepper over medium-high heat 5 to 7 minutes, stirring occasionally, until no longer pink; drain.
- Stir in sauce mix (from Hamburger Helper™ box), tomatoes, milk, water, ketchup and mustard. Heat to boiling, stirring constantly.
- Reduce heat. Cover; simmer 10 minutes, stirring occasionally.
- Stir in uncooked pasta (from Hamburger Helper™ box) and cheese. Cover; cook 15 minutes longer, stirring occasionally or until thoroughly heated. Top with pickles.

MCDONALD'S CHEESEBURGER SOUP
Steps:
- Brown beef, drain, and set aside. In the same pan, sauté onion, mushrooms, carrot, celery, dill weed, ground mustard and 1 Tbsp. butter until tender, about 10 minutes.
- Add broth, ketchup, potatoes and beef. Bring to boil. Reduce heat, cover and simmer 10-12 minutes or until potatoes are done.
- Meanwhile, in microwaveable container, melt rest of butter, add flour, and stir together. Add milk. With a wire whisk, mix together. Mixture will be lumpy, but microwave it on high, 3 minutes at a time, and then whisk. Continue whisking and cooking for 3 minutes at a time until mixture thickens into a white sauce and lumps are gone.
- To the white sauce, add the cheese. Melt cheese into mixture in the microwave (4 to 6 minutes). Stir cheese into white sauce mixture. Add sour cream, salt, and pepper.
- Depending on how thick you have cut your potatoes, you may find yourself waiting for them to finish. Stir cheese sauce mixture into the soup when potatoes are done over low flame.

COPYCAT MC DONALD'S HAMBURGERS/CHEESEBURGERS
My friend found this for me(when I was having a McDonalds burger obsession) in one of her cookbooks and it's delicious.

Steps:
- Mix the dried onion with the boiling water and let sit until re hydrated and no longer dry & crunchy.
- Roll ground beef into a ball and press flat on waxed paper until about 1/8 inch thick.
- Brown faces of bun in a dry frying pan over medium heat. Remove bun and cook burger in the same pan for 2 min per side, salting each side lightly during cooking.
- On the top bun-half spread the ketchup, mustard, and onion, in the order, and top with the pickle slice.
- put the beef patty on the bottom bun and quickly slap the top and bottom together. Microwave the burger on high for 10-15 seconds. FOR CHEESEBURGERS: follow the above recipe, but add a slice of American cheese on top of the beef patty in the final assembly. Microwave for 15 seconds on high to help steam the bun and simulate being wrapped in paper.
CHEESEBURGER SOUP

- In a large saucepan over medium heat, cook and crumble beef until no longer pink; drain and set aside. In same saucepan, melt 1 tablespoon butter over medium heat. Saute onion, carrots, celery, basil and parsley until vegetables are tender, about 10 minutes. Add potatoes, ground beef and broth; bring to a boil. Reduce heat; simmer, covered, until potatoes are tender, 10-12 minutes. , Meanwhile, in a small skillet, melt remaining butter. Add flour; cook and stir until bubbly, 3-5 minutes. Add to soup; bring to a boil. Cook and stir 2 minutes. Reduce heat to low. Stir in cheese, milk, salt and pepper; cook until cheese melts. Remove from heat; blend in sour cream.

- Brown ground beef in a medium-sized skillet over medium heat. Sprinkle ground beef with 1 teaspoon salt and 1/2 teaspoon of black pepper. Crumble the beef fine with your spoon while this is cooking, and brown the meat well. Drain fat from beef and set aside. In a medium-sized pot over medium heat add chopped onion and vegetable oil, sprinkle with 1 teaspoon salt. Stir and cook onions until they become clear. Sp
- Sprinkle flour over the onions and cook for about 1 minute or until the flour becomes fragrant it should smell like pie dough. Begin to make a roux by adding about 1/2 cup of chicken stock into the pot, stir until the mixture thickens. Add in another 1/2 cup of stock, and stir in until this thickens, then add the remaining 1 cup of stock and stir until the mixture thickens. Add potatoes to the soup mixture, cook for about 15 minutes. Then add ground beef, cheese, dry mustard, and Worcestershire sauce and stir until well blended, and the soup is heated through. While the soup is heating, cut a hamburger bun into 1/2 inch cubes.
- Toast the bread cubes in a small skillet with 2 teaspoons of butter until they have browned. Stir occasionally, so the bread does not burn. Serve the soup by pouring into bowls and garnishing with toasted hamburger buns, dill pickle relish, crumbed bacon, green onions, and sprinkling with some additional grated cheese.
