GRANDMA'S OLD FASHIONED TEA CAKES
A soft teacake that is best when one to two days old. You can change flavors by substituting almond or lemon extract for the vanilla. Add a few drop of food coloring to dress up the dough for special occasions.

Steps:
- In a medium bowl, cream together the butter and sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking soda, salt and nutmeg; stir into the creamed mixture. Knead dough for a few turnns on a floured board until smooth. Cover and refrigerate until firm.
- Preheat the oven to 325 degrees F (165 degrees C). On a lightly floured surface, roll the dough out to 1/4 inch in thickness. Cut into desired shapes with cookie cutters. Place cookies 1 1/2 inches apart onto cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

ME-MAW'S TEA CAKE COOKIES

Steps:
- Cream butter gradually adding sugar. Add eggs one at a time, slowly adding other ingredients with vanilla last.
- The cookie dough should be divided to form balls of 2 cups size or so that are then rolled out to be about 1/4" thick and cut with circle cutters. (Or you can roll dough into quarter size balls and flatten out on cookie sheet)
- Cookies should be baked in a 400 degree oven on a lightly greased cookie sheet for about 10 minutes until lightly golden.
MAMIE'S TEACAKES

- Preheat the oven to 400 degrees F.
- Grease two large (14-by-16-inch) cookie sheets with shortening.
- Sift together the flour, baking soda and salt. Using an electric mixer set to medium speed, cream the butter and sugar together. Add the eggs and vanilla. Add the sour cream and mix well. On low speed, gradually add the flour mixture until just blended. Turn the dough out onto a lightly floured board, and gently pat with floured hands to a 1/4-inch thickness. Cut with a 2-inch round, floured cookie cutter and place about 1 inch apart on the cookie sheets. Bake until the teacakes are lightly browned, about 10 to 12 minutes. Do not overbake. Sprinkle with a couple of tablespoons of sugar and remove the cookies to a rack to cool.

- Beat the butter at medium speed with an electric mixer until creamy; gradually add the sugar, beating well. Add the eggs 1 at a time, beating until blended after each addition. Add the vanilla, beating until blended.
- Combine the flour, baking soda and salt; gradually add the flour mixture to the butter mixture, beating at low speed until blended.
- Divide the dough in half; wrap each portion in plastic wrap and refrigerate 1 hour.
- Heat the oven to 350 degrees F. Line 2 baking sheets with parchment paper. Roll half of the dough out to 1/4-inch thickness on a floured surface. Cut out cookies with a 2 1/2-inch round cutter, and place 1 inch apart on the prepared baking sheets. Bake until the edges begin to brown, 10 to 12 minutes, rotating the sheets and switching their positions halfway through baking time. Let cookies stand on baking sheets 5 minutes. Transfer to wire racks to cool. Repeat procedure with remaining dough.
MAINE MULTI-SPICE COOKIES(MAINE CHEWIES)
Adapted from Yankee magazine. Supposedly a version of this recipe is served on board the "Mary Day," a schooner from Maine. Any cookie with cardamom in it is a cookie for me. These are by far the best tasting spice cookies I have ever tried. Please use a wooden spoon to mix the dough - an electric mixer might make the dough too tough.

- Combine butter, sugar, all 5 spices, and salt in a large mixing bowl, mixing well with a wooden spoon.
- Dissolve baking soda in the warm water and then stir into the butter mixture.
- Stir in the molasses and the lightly beaten egg, mixing well.
- Add flour,1 cup at a time, stirring to mix- the dough will be quite stiff (be sure to scrape all the way down to the bottom of the bowl to mix evenly).
- Scoop the dough into walnut sized lumps (about 1 Tbsp or so) and drop onto greased or parchment-lined baking sheets, about 2" apart.
- Bake in a preheated 350°F oven for 8-12 minutes, or until crackled and browned. They will look very, very soft in the middles but as long as you can lift them with a spatula they are ready.
- Let cool 1 minute on pans before carefully lifting with a spatula to cooling racks.
- Finished cookies should be somewhat chewy.

MAWMAW'S TEA CAKES
I used to make these with my grandmother. Now, I'm teaching my grand children how to make them :-) If they are rolled out, they are crisp. But I have used less flour and made them like drop cookies, and they are softer that way.

- Mix all ingredients together. Add enough flour to get desired consistency ( about 3 or 4 cups ). Roll out on floured board. Cut with cookie cutter, and place on a greased cookie sheet.
- Bake in a pre-heated oven at 375 degrees, until lightly browned.
- NOTE: If you like lemon flavor, you can replace the vanilla extract with lemon extract. I have done this before and also put a lemon glaze on the top of the cookies after cooling.

- In large mixing bowl, cream together sugar and butter with electric mixer until fluffy. Add eggs and beat again. Add remaining ingredients and beat until fully incorporated, scraping down sides as needed. Drop dough by tablespoon size balls onto ungreased cookie sheet. Dip a glass in sugar and press down lightly on each dough ball to flatten, dipping in sugar again after each one.
- Bake at 350 for 12-14 minutes, or until lightly browned on the edges. If you would like them to be softer, bake one to two minutes less. Cool completely and then store in an airtight container until they disappear :).
