KETO BEEF & GREEN BEAN CASSEROLE
This reminds me of an old fashioned casserole my mom used to make when I was young, but she used canned cream of mushroom soup. This is much better, no offense mom!

Steps:
- 1. Preheat oven to 350 degrees.
- 2. Brown ground beef in a cast-iron skillet then drain the excess grease.
- 3. Add cream cheese and stir until melted then add beef broth, heavy whipping cream, garlic powder, and salt/pepper. Bring to a boil and cook on medium heat until mixture begins to thicken then reduce heat and simmer.
- 4. Once the ground beef mixture thickens add the two cans of green beans that have been drained on top then sprinkle cheese on top of green beans.Bake for 25 minutes
MEAT & GREEN BEAN CASSEROLE
Similar to the Potato Puff Casserole my mom makes, but this is made with homemade mashed potatoes and has a tomato soup base. From a friend (she made it for us after I came home with child #3). So comforting!

Steps:
- Preheat oven to 350°F
- In large skillet, saute onions in a little oil.
- Add ground beef and salt and pepper to taste and brown the beef.
- Add drained beans and tomato soup.
- Pour into 9x13 baking dish.
- While beef is browning, boil and mash the potatoes with milk, egg, salt & pepper.
- Make small piles on top of meat mixture.
- Bake uncovered for 30 minutes.

This great variation of the traditional green bean casserole is topped with French fried onions and Cheddar cheese.

- Preheat oven to 350 degrees F (175 degrees C).
- Place green beans and soup in a large microwave-safe bowl. Mix well and heat in the microwave on HIGH until warm (3 to 5 minutes). Stir in 1/2 cup of cheese and heat mixture for another 2 to 3 minutes. Transfer green bean mixture to a casserole dish and sprinkle with French fried onions and remaining cheese.
- Bake in a preheated 350 degrees F (175 degrees C) oven until the cheese melts and the onions just begin to brown.

This green bean casserole is a family tradition. My grandmother makes this every Thanksgiving. Absolutely the best! Simple and easy, but the flavor is so good!

- Combine soup, milk and pepper in a 1 1/2 qt baking dish; stir until blended.
- Stir in beans and 2/3 cup fried onions.
- Bake at 350°F for 30 minutes or until hot.
- Stir.
- Sprinkle with remaining 2/3 cup fried onions.
- Bake 5 more minutes or until onions are golden.
THE MIXTURE - GREEN BEAN, MASHED POTATO, GROUND BEEF CASSEROLE
My mom used to call this "the Mixture" and it was always a favorite around our house growing up.

- Peel the potatoes and cut into chunks. Start them boiling.
- Meanwhile, start green beans boiling.
- Meanwhile, brown ground beef.
- Slice onions and spray casserole dish with non-stick coating.
- Place the browned ground beef in the bottom of the casserole dish. Cover with half of the cheese (tearing cheese slices into chunks if using) and half of the sliced onions.
- Add green beans next, and repeat cheese & onion layers.
- Drain potatoes, add milk and butter in your preferred amounts and mash. I use about 2 tablespoons butter & add milk until the consitancy is right.
- Spread mashed potatoes over top of casserole.
- Sprinkle with additional cheese and breadcrumbs followed by paprika if desired, otherwise just with paprika.
- Bake for about 20-30 minutes in a 400 oven until top of mashed potatoes is golden and cheese is well melted. May be prepared in advance, refridgerated and baked later.
- Hints: if this is too bland, some suggestions to spice it up: try adding garlic, worcestershire sauce and other spices when browning beef. Add paprika and garlic powder to the potatoes while mixing. Use jalapeno cheese.
