Steps:
- In a large bowl, combine all ingredients for the meatballs.
- Shape them into small balls and pan sear until the meatballs have a dark brown crust. About 2 minutes on each side.
- Take out the meatballs and set aside. Use the same pot combine the soup ingredients and stew for 20 minutes or until the vegetables are soft.
- Using a blender, puree the veggies until the soup becomes a sauce.
- Add in the stock, pasta and meatballs and simmer for 5 minutes.
- Enjoy!

In a nonstick skillet, brown meatballs in small batches over medium heat until no longer pink. Remove from the heat; set aside., In a large saucepan or Dutch oven, saute the onion, celery, carrots and potatoes in oil until crisp-tender, about 5 minutes. Add garlic; saute 1 minute longer. Add the broth, tomatoes, tomato paste, parsley, basil and thyme; bring to a boil. Add pasta; cook for 5-6 minutes. Reduce heat; add meatballs. - Pour water into a large stockpot over high heat. Stir in 3 cups tomato sauce, yellow onion, chicken bouillon, garlic, and 1 tablespoon dried oregano. Bring broth to a slow boil.
- Combine ground beef, eggs, 1/2 cup tomato sauce, white rice, 1/4 cup cilantro, seasoned salt, 1 tablespoon dried oregano, onion powder, garlic powder, black pepper, and cumin in a large bowl. Squeeze mixture with your hands until thoroughly mixed.
- Scoop 1/4 cup of beef mixture and form in a ball. Lower gently into boiling broth. Repeat with remaining beef mixture.
- Stir potatoes, carrots, and celery into the broth. Cover and simmer until meatballs and potatoes are tender, about 30 minutes. Stir in zucchini and cabbage. Cover and simmer until cabbage is tender, about 10 minutes.
- Serve with a squeeze of lemon juice and garnish with avocado and 1/4 cup cilantro.
