MEDITERRANEAN BUTTER RECIPE

Thanks to my D/W for this recipe for Mediterranean Butter. It makes any bread taste freshly baked. WARNING:! Don't begin your meal with this bread and a salad. No one will want to eat the entree.

Steps:

  • Mix all ingredients together. Spread on a loaf of sliced Italian bread and toast in oven. Serve warm from oven.
  • *You may substitute 4 teaspoons of chopped garlic (4 whole cloves) for garlic powder.
  • My Notes: We usually freezes half of this recipe in a sealed bag for later. For optimum freshness, use from the freezer within 3 months. Only store in the refrigerator for a week.

  • Place the garlic and kosher salt in the bowl of a food processor (a smaller one may work better here). Pulse a few times until the garlic looks minced, stopping to scrape down the sides. Add the lemon juice and pulse a few times to combine (again, scrape down the sides)
  • While the food processor is running, drizzle the oil in ever so slowly (use the top opening of the processor to drizzle in the oil). After you've used about 1/4 cup or so, add in about 1 tablespoon of the ice water. Stop to scrape down the sides of the processor bowl.
  • Keep the processor running and continue to slowly drizzle in the oil, adding a tablespoon of the ice water after every 1/4 cup of oil. Continue on with this process until you have used up the oil entirely. The garlic sauce has thickened and increased in volume (it should look smooth and fluffy). This should take somewhere around 10 minute or so.

  • In a saucepan over medium heat, melt the butter. Add the rice grains and stir them briefly, about 30 seconds, just to separate the grains and remove clumps. Add the vegetable broth and salt (Note 2). Stir then let it boil. Once boiling, turn heat to lowest setting then cover the pot. Cook on lowest heat setting for about 15 minutes or until all the liquid has been absorbed (tilt pot to check). Remove from heat and let it sit for about 10 minutes. This steams the rice a little bit more. Do not uncover the pot.
  • Before serving, uncover, fluff up rice with a fork. Let it stand for a few minutes to "dry out" and lose that wet, just-steamed texture. Top with additional butter if you wish.
