Steps:
- Heavily coat all sides of the meat with the seasonings.
- Place fat side DOWN in oven bag.
- Pour liquid smoke into bag and over meat.
- Seal bag and allow to marinate overnight.
- Place fat side UP in pan, cook at 325 degrees for 4 hours for smaller brisket, longer if 8 lbs. Test with fork through the bag, should be easily pierced and tender, with no blood oozing.
- Allow to rest 10- 20 minutes outside oven. ALWAYS cut brisket against the grain.
- Serve and enjoy!

BEST BARBECUE RIBS EVER

- Combine the brown sugar, chili powder, 1 tablespoon salt, 1 teaspoon black pepper, the oregano, cayenne, garlic powder and onion powder in a small bowl and rub the mixture on both sides of the ribs. Cover and refrigerate 1 hour or overnight.
- Preheat the oven to 250 degrees F. In a roasting pan, combine the broth and vinegar. Add the ribs to the pan. Cover with foil and tightly seal. Bake 2 hours. Remove the ribs from the pan and place them on a platter. Pour the liquid from the pan into a saucepan and bring to a boil. Lower the heat to a simmer and cook until reduced by half. Add the barbecue sauce.
- Preheat an outdoor grill to medium high. Put the ribs on the grill and cook about 5 minutes on each side, until browned and slightly charred. Cut the ribs between the bones and toss them in a large bowl with the sauce. Serve hot.

- Place ribs in a greased roasting pan. Bake, uncovered, at 350° for 45 minutes. Meanwhile, in a saucepan, combine the remaining ingredients. Bring to a boil; cook for 1 minute. Drain ribs. Spoon sauce over ribs. Cover and bake for 1-1/2 hours. Uncover; bake 30 minutes longer, basting once.

MEMPHIS-STYLE RIBS

- 1. Prepare the ribs and rub: Remove the thin, papery skin from the back of each rack of ribs by pulling it off in a sheet with your fingers, using the corner of a kitchen towel to gain a secure grip, or with pliers.
- 2. Combine the paprika, black pepper, brown sugar, salt, celery salt, cayenne, garlic powder, dry mustard, and cumin in a small bowl and whisk to mix. Rub two thirds of this mixture over the ribs on both sides, then transfer the ribs to a roasting pan. Cover and let cure, in the refrigerator, for 4 to 8 hours.
- 3. Prepare the mop sauce (if using): Mix together the cider vinegar, mustard, and salt in a bowl and set aside.
- 4. Set up the grill for indirect grilling and place a large drip pan in the center.
- If using a gas grill, place all of the wood chips in the smoker box and preheat the grill to high; when smoke appears, reduce the heat to medium.
- If using a charcoal grill, preheat it to medium.
- 5. When ready to cook, if using a charcoal grill, toss the wood chips on the coals. Brush and oil the grill grate. Arrange the ribs on the hot grate over the drip pan. Cover the grill and smoke cook the ribs for 1 hour.
- 6. When the ribs have cooked for an hour, uncover the grill and brush the ribs with the mop sauce (if using). Re-cover the grill and continue cooking the ribs until tender and almost done, 1/4 to 1/2 hour longer for baby back ribs, 1/2 to 1 hour longer for spareribs. The ribs are done when the meat is very tender and has shrunk back from the ends of the bones. If using a charcoal grill, you'll need to add 10 to 12 fresh coals to each side after 1 hour. Fifteen minutes before the ribs are done, season them with the remaining rub, sprinkling it on.
- 7. To serve, cut the racks in half or, for a plate-burying effect, just leave them whole.
RIB STEAK WITH MARROW AND RED-WINE SAUCE

- Cut the marrow crosswise into slices half an inch thick. Put the pieces in a bowl and add cold water to cover. Set aside for 10 minutes or longer.
- Sprinkle the meat on both sides with salt and pepper.
- Heat the oil in a heavy skillet large enough to hold both steaks. Add the steaks and cook about 10 minutes or until thoroughly browned and seared on one side. Turn and continue cooking until thoroughly browned and seared, about 5 minutes. Cook about 5 minutes longer, turning the meat occasionally.
- Transfer the steaks to a warm platter and pour off all fat from the skillet.
- Add 1 tablespoon of butter to the skillet and when it melts, add the shallots, wine, vinegar and sugar.
- Cook over relatively high heat until the liquid is almost completely reduced, about 12 minutes.
- Add the broth and any juices that may have accumulated around the steaks. Cook about 3 minutes and swirl in the remaining 4 tablespoons of butter.
- Meanwhile, drain the pieces of marrow and put them in a saucepan.
- Add cold water to cover and salt to taste. Bring to a simmer but do not boil. Cook as briefly as possible, only until the marrow is barely heated. If the marrow cooks longer it will turn into liquid fat. Using a slotted spoon, transfer the marrow pieces to the sauce. Slice the steaks and serve with the marrow sauce on the side.
