Steps:
- Spray the inside of a slow cooker with cooking spray. Spread the onion slices out into the bottom of the cooker.
- Spread the flour out onto a work surface. Sprinkle the chuck roast with salt and black pepper, and roll the roast in the flour to coat all sides. Using the edge of a small, sturdy plate, pound the flour into the meat. Place the floured roast into the cooker on top of the onions. Whisk together beef gravy mix, ranch dressing mix, and Italian dressing mix in a bowl, and whisk the mixes with water until smooth. Pour over the chuck roast. Distribute carrots around the meat.
- Cover the cooker, set to Low, and cook until the roast is tender and the gravy has thickened, about 8 hours.

SLOW COOKER POT ROAST WITH MALBEC (RED WINE)
I love the convenience of the slow cooker but I do not care for the sodium content by using cream of mushroom soup etc. Sadly many of today's recipes call for the can of soup. I have tried many recipes over the years and adjusted them and this is the result. Please do use the wine, most of the alcohol dissipates with the cooking.

Steps:
- Combine steak seasoning, salt, thyme, and rosemary together in a bowl; rub onto the roast.
- Heat a large skillet over medium-high heat and place roast in skillet; cook until roast is browned on all sides, about 10 minutes.
- Place the roast in the slow cooker and add au jus mix and onion soup mix. Pour water and Malbec over roast.
- Cook on High for 5 hours (or cook in Low for 8 to 9 hours).

- Cut up potatoes, onions, and celery in to fairly large chunks and place in a slow cooker. Put roast on top of vegetables. Place 3 bouillon cubes randomly on top of roast and pour in water.
- Cover, and cook on low for 6 to 8 hours or High for 4 to 5 hours.

Steps:
- Rinse beef and pat dry. Sprinkle generously with black pepper. Melt butter or heat olive oil in a large non-stick skillet over high heat. Add beef and brown on all sides, 6 to 8 minutes total.
- Meanwhile, place the carrots, celery, onions, garlic, thyme peppercorns, and bay leaf in a 4 1/2 qt or larger crock pot. Mix to combine. Set beef and any juices over vegetables.
- In a small bowl, mix tomato paste and wine. Pour over meat and vegetables.
- Cover and cook until beef is very tender when pierced, 8-9 hours on low and 5-6 hours on high. If possible, turn meat over, halfway through cooking.
- With 2 slotted spoons, transfer meat to a serving platter, keep warm. Skim and discard any fat from cooking liquid. Turn cooker to high. In a small bowl combine cornstarch with 1 1/2 tbs water, pour into cooker and stir often until sauce is thickened, 10 -15 minutes.
- With slotted spoon, arrange vegetables evenly over meat in platter, pour sauce over meat and garnish with chopped parsley; serve hot.

- Place the mushrooms, onion and garlic in a 5-qt. slow cooker. Top with chicken. , In a small bowl, combine the tomato paste, broth, wine, tapioca, sugar, basil, salt and pepper. Pour over chicken. BEEF MERLOT CROCK POT
I changed around an old recipe of mine for beef stew to get this delicious concoction! I sauteed the onions and garlic in bacon fat and then browned the stew meat pieces in it as well. I had a 1/4 Merlot left over so I added that. YUMMY!

- Heat frying pan on HIGH (hot pan, cold grease= NO STICKING!).
- Add 2 T bacon fat- melt.
- Add chopped onion and garlic.
- Turn down heat to medium low- sauté for 5 minutes.
- Remove and set aside.
- Turn up heat to High- get pan really hot.
- Add more bacon fat or olive oil if pan is dry.
- Quickly brown meat- let each side get browned.
- Place browned meat into crock pot.
- Add 1 cup water to pan to make a beef stock.
- Add 2 bouillon cubes- stir and break up into stock.
- Add 1/4 Merlot (or other red wine) optional.
- Pour over meat in crock pot.
- Spoon onion mixture over meat.
- Cover and cook 10 hours on Low.
- Serve with mashed potatoes (or rice), cooked/buttered broccoli and crusty rolls.

- Scrub and peel the potatoes; cut into 1 ½-inch chunks. Bring the potatoes to boil in a large pot of water; reduce the heat, cover and simmer until the potatoes mash easily when pressed, 20 to 25 minutes. When the potatoes are done, heat the cream and butter in a microwave-safe container just until steaming (don’t boil), 1 to 3 minutes. While the cream is heating, drain the potatoes and mash in the pan with a mixer or potato masher until almost smooth. Add the cream, a portion at a time, and mix until the potatoes have the consistency desired. Stir in salt, pepper and desired amount of horseradish to taste.
